These are a favorite around our household and you don't have to wait for Passover to eat them. They are a nice change from the ordinary pancakes because they are flourless. This is one of the recipes that I am using from memory - let's hope it works. It worked - hurray!

1/3 cup butter, melted
2 tablespoons butter
8 large eggs
2 cups milk
2 cups matzo meal
1/2 cup cottage cheese (4 oz)
1/4 cup finely chopped pecans or 1/4 cup walnuts
1/2 tablespoon pure vanilla extract
1 teaspoon salt
1 teaspoon fresh coarse ground black pepper
maple syrup (optional)
granulated sugar (optional)

Steps:

  • Melt 2 Tablespoons butter in large skillet.
  • Turn off the heat.
  • Break eggs into mixing bowl.
  • Beat until thick and lemon colored.
  • Add milk, matzoh meal, cottage cheese, butter, nuts, vanilla and salt.
  • Beat until smooth.
  • Turn heat on to moderate heat.
  • Drop by spoonsful onto the skillet, this is where you can decide on the size of your pancakes.
  • Fry until golden on both sides.
  • Keep warm in oven, while making others.
  • Serve on platter with maple syrup &/or the granulated sugar.
  • Enjoy!

This recipe comes from a 1972 cookbook by a Jewish women's organization (ORT) that was published as a fundraiser for a vocational training program. It is like a church or synagogue congregational cookbook, only bigger, because recipes were submitted from an 8-state region. (I added my own suggestions in parentheses.)

1/2 cup matzo meal (try whole wheat matzo meal for a little more whole grains)
1/4 cup milk (may need slightly more if using whole wheat matzo meal) or 1/4 cup orange juice (may need slightly more if using whole wheat matzo meal)
1 teaspoon salt
4 eggs, separated
2 tablespoons melted fat (or canola oil)

Steps:

  • Pour milk or juice over matzo meal.
  • Add salt to egg yolks and beat until very light.
  • Add to meal mixture, let stand 5 minutes.
  • Beat egg whites until very stiff. Fold lightly into yolk mixture.
  • Drop by spoonfuls onto hot greased skillet, brown on both sides.
