This is a recipe I cut from the TV Guide almost 20 years ago! Anyone remember Pasquale's cooking show? I believe the actual name of this recipe was "piccola polpetta" which means small meatball. This makes a very nice light, thin sauce which is simply delicious. To keep it simple or in off season you can substitute a can of tomatoes in place of the fresh but in season the sauce is devine with the fresh tomatoes.

Number Of Ingredients 13

1 lb fine ground beef
1 tablespoon dry breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1/4 teaspoon chili powder
1/4 cup oil
1 onion, finely chopped
1 garlic clove, crushed
2 cups peeled chopped tomatoes
3/4 cup chicken broth
1/4 cup red wine
2 tablespoons tomato paste

Steps:

  • Combine meat, bread crumbs, salt, pepper, nutmeg and chili powder. Form into quite small sized meatballs.
  • Heat oil in frypan, brown meatballs, add onion and garlic. When browned, add tomatoes, chicken broth, wine and tomato paste. Simmer 30 minutes.
  • Season with salt and pepper.
  • Serve over thin spaghetti al dente.
  • Top with parmesan cheese.

This is a great basic tomato sauce that is excellent in many Italian recipes. Depending on what and who you are serving this to you can add hot pepper flakes to taste.

4 ounces olive oil
1 onion (large chopped)
4 garlic cloves
1 tablespoon dried basil
1 tablespoon nutmeg
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon pepper
4 (28 ounce) cans diced tomatoes
10 ounces tomato paste
6 ounces red wine
3 tablespoons butter

Steps:

  • Heat oil in a large pot and cook onion, garlic and seasonings for 5 minutes.
  • Add tomatoes, tomato paste, wine and butter.
  • Simmer for 30 minutes till sauce is fairly thick, and once the golden oil floats on top you know it is done.
