4 cups mashed potatoes (about 8 to 10 large) or 4 cups prepared instant potatoes
1 cup sour cream
1 package (8 ounces) cream cheese, softened
1 teaspoon minced chives
1/4 teaspoon garlic powder
1/4 cup dry bread crumbs
1 tablespoon butter, melted
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine potatoes, sour cream, cream cheese, chives and garlic powder. Turn into a greased 2-qt. casserole. Combine bread crumbs with butter; sprinkle over potatoes. , Bake at 350° for 50 to 60 minutes. Top with cheese and serve immediately.

2 lb (900g) bag frozen diced hash browns, thawed
1 cup onions, chopped
1/4 cup melted butter
1 cup cheddar cheese, shredded
1 can (10.5oz/284ml) cream of chicken soup
2 cups sour cream
1/2 tsp onion salt
1/4 tsp pepper
1 tbsp fresh chives, chopped

Steps:

  • Preheat oven to 350F.
  • Add all the ingredients to a large bowl and stir to combine. Spread in a 9x13 baking dish.
  • Bake for 1 hour.
  • Turn the oven to broil on low. Broil for 1 minute or until the top starts to brown. Keep an eye on it because it will burn easily!
  • Remove from oven and serve hot.

12 medium potatoes, peeled and quartered
2 tablespoons butter
2 tablespoons milk
3/4 teaspoon salt
1/4 teaspoon pepper
1 package (8 ounces) cream cheese, softened
1 carton (8 ounces) French onion dip
Paprika

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. Mash the potatoes with butter, milk, salt and pepper until smooth. Add cream cheese and onion dip; mix well. , Spread in a greased 2-1/2-qt. baking dish. Sprinkle with paprika. Cover and refrigerate for 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until heated through.

9 large potatoes
8 ounces cream cheese
1 cup sour cream
2 teaspoons onion salt
1 teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish, and set aside.
  • Bring a large pot of lightly salted water to a boil. Cook potatoes in boiling water until tender. Drain, and transfer to a large mixing bowl. Mash until smooth. 5 medium potatoes, sliced (skin on)
5 slices smoked bacon
1 -2 tablespoon butter
1 lb ham, diced
1 medium onion, chopped
6 mixed mushrooms, sliced
1 jalapeno pepper, chopped
1/3 green pepper, chopped
1 -2 teaspoon seasoning salt
1/2 teaspoon pepper
1/2 tomatoes, chopped into small cubes
4 eggs
3 ounces milk
8 slices American cheese

Steps:

  • Brown and drain the bacon, discarding the grease. Microwave the sliced potatoes until tender. Place butter and potatoes in a very large skillet or griddle and fry for approximately fifteen minutes until brown. Season potatoes with the seasoned salt and pepper while frying.
  • Add the onions, mushrooms, tomatoes, and both type peppers to the potatoes, frying for an additional ten to fifteen minutes or so until well browned. Crumble the fried bacon and stir both the bacon and the ham into your potatoes.
  • In a separate bowl mix together the eggs and milk with a fork and then pour this over your potato mixture. Stir and cook the egg and potato mixture until the eggs are done, similar to if scrambling eggs.
  • Divide into four equal servings, putting one serving on each plate. Top each serving with two pieces of cheese, cover, and then microwave each serving only until cheese is melted.

26 oz. bag frozen hash browns
1/2 c melted butter
4 oz. sour cream
1 can soup (recipe calls for cream of mushroom, Dianne uses cream of celery)
2 cups sharp cheddar cheese
1 large onion, finely chopped
salt and pepper to taste
crumbled potato chips, fried onion rings, bread crumbs crushed Ritz crackers - anything crunchy.

Steps:

  • Let frozen hash browns thaw a little to make mixing easier. Mix all ingredients together, put in a lightly greased 9 x 13 pan and bake at 350 for approximately 45 minutes. Remove from oven, stir well and sprinkle with crunchy topping. Return to the oven and bake an additional 15 minutes. This dish is vegetarian, but ground beef and garlic can be added. Dianne has used Italian sausage or chicken mango sausage with Parmesan and Romano cheeses. Gruyere and cheddar can be used rather than just cheddar. Use your imagination. She does.
