CHOCOLATE-PEANUT PARTY POPCORN

- Combine the vegetable oil and 1 popcorn kernel in a heavy pot over high heat; cover. When it pops, add the rest of the kernels. Partially cover and cook, shaking the pot, until you no longer hear the popping sounds. Remove from the heat and spread the popcorn on a baking sheet.
- In the same pot, melt the butter over medium heat. Add the toffee chips and peanuts and stir until the toffee melts and evenly coats the peanuts, about 2 minutes, adding more butter if needed. Pour the mixture over the popcorn. Use a rubber spatula to toss the popcorn and toffee sauce to evenly coat.
- Put the chocolate chips in a small microwave-safe bowl and microwave in 30-second intervals, stirring, until melted. Dip a whisk in the melted chocolate and use it to drizzle over the popcorn. Let harden before serving.

- Add popcorn to a large bowl.
- Place candy melts or white chocolate in a medium microwave-safe bowl. Microwave at 50% power in 15-second increments, stirring every 15 seconds, just until melted. It usually takes me about 1 minutes and a half with my microwave.
- Working quickly, pour melted candy melts or white chocolate over the popcorn and gently but quickly stir until the popcorn is coated.
- Top liberally with the sprinkles, stirring once or twice to help distribute the sprinkles.
- Spread on a parchment-paper-lined cookie sheet and allow to harden, about one hour. Break up and serve.
- Keeps up to three days at room temperature when kept in an airtight container.

- Put the wok oil into the biggest pan you have with a lid over high heat, add the popcorn and quickly put on the lid. Let the popcorn pop, shaking the pan every now and then to keep the kernels moving. You will hear it but don't be tempted to look, unless you want to get shot at, and once it has stopped popping - a couple of minutes or so - take it off the heat.
- Melt the butter with the spices in another pan and then pour it over the popcorn and put everything into a large paper carrier bag/shopper. Shake, shake and shake the bag again to mix the popcorn and get it thoroughly coated in the spicy butter.

- This recipe can also be doubled successfully. 1. Pop the popcorn kernels. Set aside in 2 large bowls. 2. Over medium heat, melt the butter in a medium sauce pan. 3. Add the corn syrup and water. Stir. 4. Add the sugar. Make sure not to let any sugar stick to the edges of the pan. If one grain of sugar is left undissolved, it can cause the whole batch to crystallize. 5. Bring to a boil and continue to cook until the mixture reaches 235-245 degrees. (Please use a candy thermometer). It is important for the mixture to reach this temperature, if it doesn't the candy will not harden properly. 6. Add the baking soda and stir quickly as the mixture begins to bubble. Once bubbly and frothy, remove the pan from heat. 7. Add the flavor and food coloring until mixed in. 8. Pour over the popped popcorn in both bowls. Fold into the popcorn until evenly coated.
