1/2 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
FROSTING:
3-3/4 cups confectioners' sugar
1/4 cup shortening
4 to 6 tablespoons water
Yellow, orange, green and black paste food coloring, optional

Steps:

  • In a large bowl, beat butter and sugar until light and blended. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Shape dough into 2 portions. Shape each into a disk; wrap and refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with floured 2-1/2-in. Halloween-shaped cookie cutters. Place 2 in. apart on ungreased baking sheets. Bake 8-10 minutes or until edges are light brown. Remove from pans to wire racks to cool completely., In a large bowl, beat confectioners' sugar, shortening and enough water to reach spreading consistency. Tint frosting and decorate as desired. Let stand until set.

Stack up our best ever chocolate sponges and smother in an Oreo biscuit icing to make this towering celebration cake

300ml vegetable oil , plus extra for greasing
400g plain flour
130g cocoa powder
4 tsp baking powder
2 tsp bicarbonate of soda
560g light brown soft sugar
400ml buttermilk
200ml strong coffee , or espresso
4 tsp vanilla extract
4 large eggs
250g pack slightly salted butter , softened
600g icing sugar
280g tub full-fat cream cheese
2 tsp vanilla extract
10 Oreo biscuits (about ¾ of a pack)
Oreo biscuits , as many as you need for the letters on top (some may break when you insert the skewers, so buy extra)
thin wooden skewers
100g white chocolate , finely chopped
ready-to-roll fondant icing , coloured (we used a mixture of blue and green food colouring), or an icing writing pen

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line two 20cm cake tins with baking parchment - if your cake tins are quite shallow, line the sides to a depth of at least 5cm. Put 200g flour, 8 tbsp cocoa powder, 2 tsp baking powder, 1 tsp bicarbonate of soda, 280g light brown soft sugar and 1 tsp salt in a bowl and mix well. If there are any lumps in the sugar, squeeze these through your fingers to break them up.
  • Measure 200ml buttermilk, 100ml coffee, 150ml oil and 2 tsp vanilla in a jug. Add 2 eggs and whisk until smooth. Pour the wet ingredients into the dry and whisk until well combined. Pour the cake mixture evenly into the two tins, and bake for 25-30 mins until risen and a skewer inserted into the centre comes out clean. Cool in the tins for 10 mins, then turn out onto a wire rack, peel off the baking parchment and leave to cool.
  • Repeat steps 1 and 2, so that you have 4 sponge cakes in total. These sponges can be made up to three days ahead and will stay moist if wrapped in cling film, or you can wrap well and freeze for up to two months.
  • To make the icing, put the butter in a large bowl and sieve in half the icing sugar. Roughly mash together with a spatula, then whizz with a hand mixer until smooth. Add the cream cheese and sieve in the remaining icing sugar, mash together again, then blend once more with the hand mixer. Put the Oreos in a food processor and whizz to fine crumbs. Add the biscuit crumbs to the icing and mix again until combined.
  • Next, make the cookie cake toppers. You'll need one Oreo for each letter of the word you'd like to write - someone's name or, like we have done, 'WOW!' Carefully insert a skewer into the creamy filling in the middle of each Oreo - some cookies may break, so save these ones for later. Melt the chocolate in the microwave, stirring every 20 secs or so, or in a heatproof bowl suspended over a pan of gently simmering water. Spread a little chocolate over the surface of one side of each cookie. Roll out the fondant icing to the thickness of a 50p coin, and cut out your letters, then stick these to the cookies and set aside to dry. Alternatively, let the chocolate dry, then use an icing pen to write the name or word directly on the surface.
  • To assemble the cake, stick one of your sponges to a cake stand or board with a little of the cream cheese icing. Use roughly half the icing to stack the remaining cakes on top, spreading a generous amount between each layer. Pile the remaining icing on top of the assembled cake, and use a palette knife to ease it over the edges, covering the entire surface of the cake. Tidy the plate with a piece of kitchen paper.
  • If you have any leftover Oreos, break them into pieces and push these around the base of the cake. Insert the dried cookie cake toppers into the top of the cake and serve. Store leftovers in the fridge for up to 2 days, but bring back to room temperature for an hour or so before eating.

PARTY PEANUT BUTTER CUP COOKIES

Christmas would not quite be Christmas without these cookies ... just ask my kids. The combination of a peanut butter cookie on the outside with a chocolate covered Reese's minature peanut butter cup pushed into the cookie after baking, is unbeatable. They also look like they were harder to make than they really are.

1/2 cup butter (or margarine)
1/2 cup creamy peanut butter
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
24 -36 miniature peanut butter cups

Steps:

  • Cream butter and peanut butter with sugars and vanilla.
  • Add egg and beat.
  • Add dry ingredients and mix well.
  • Form small balls of dough about the size of a small walnut.
  • Note: I use my Pampered Chef cookie scoops to measure out 1 teaspoon or 2 teaspoon balls, depending on whether I want a greater yield or a fancier looking cookie.
  • Using mini muffin pans(each cup about 1 1/2 inches in diameter), place 1 ball in each muffin cup.
  • Bake at 350 degrees for about 10 minutes (or 335 convection for 10 minutes).
  • While the cookie balls are baking, unwrap the candies completely.
  • As soon as the cookies come out of the oven (they will be very soft at this point), push a candy into the center of each ball, making the cookie into acup that surrounds the candy but does not cover it.
  • Note: To make the candies easier to push into the hot cookie, I usually keep the unwrapped candies on a plate in the refrigerator until I am ready to insert them.
  • Let cookies cool in pan until they are set enough to lift out without breaking.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.

  • Add cream of tartar and salt. Beat until stiff.
  • Add sugar and beat until glossy. Add vanilla (or any flavoring) and any coloring, if desired. Add chocolate chips, nuts or raisins if desired.

1 pkg. pillsbury plus chocolate mint cake mix
1/2 c crisco shortening
1 Tbsp water
2 eggs
powdered sugar
chocolate covered mint patties

Steps:

  • 1. Lightly grease cookie sheets. In large bowl combine cake mix, shortening, water, and eggs; mix well. Form into 1 inch balls; roll in powdered sugar. Place 2 inches apart on cookie sheet. Bake 7-10 minutes in a preheated 375 degree oven.
  • 2. When cookies come out of the oven..IMMEDIATELY place a chocolate covered mint pattie onto each cookie.
  • 3. NOTE: If you cannot find the mint chocolate cake mix..two choices here. Add a teaspoon of mint to the cake batter before baking OR..just use a plain chocolate cake with no mint at all. Also, I am sorry I don't remember how many this recipe makes..so buy at least two bags of mints to make sure you have enough for cookies.

2 large eggs
1 tsp. vanilla extract or paste
2 Skor bars, finely chopped
3 cups cornflakes, lightly crushed
Gold or rainbow disco or luster dust (for serving; optional)

Steps:

  • Place racks in upper and lower thirds of oven; preheat to 350°F. Cook butter in a medium saucepan over medium heat, stirring often, until it foams, then browns, 5-8 minutes. Scrape into the bowl of a stand mixer. Let brown butter cool slightly.
  • Meanwhile, whisk flour, baking soda, salt, 1 1/2 tsp. cardamom, and 1 tsp. cinnamon in a medium bowl.
  • Add brown sugar and 1/4 cup granulated sugar to brown butter. Fit bowl onto stand mixer fitted with paddle attachment and beat on medium speed until thick, about 1 minute. Add eggs one at a time, beating well after each addition. Continue to mix just until smooth, about 1 minute longer. Beat in vanilla. Reduce speed to low and add dry ingredients; beat until nearly combined. Add Skor bars and beat just long enough to bring dough together (it will be a little loose). Cover and let rest 5-10 minutes to let flour hydrate (dough will thicken).
  • Place cornflakes in a small bowl. Mix remaining 1/4 cup granulated sugar, 1 tsp. cardamom, and 1 tsp. cinnamon in another small bowl. Working one at a time, scoop out 2-tablespoonfuls of dough (they don't need to be perfect balls) and toss in cornflakes to coat well; squeeze lightly to adhere. Move to bowl with spiced sugar and toss to coat. Divide between 2 parchment-lined baking sheets, spacing 3" apart.
  • Bake cookies, rotating baking sheets top to bottom and front to back halfway through, until edges are set, 13-16 minutes. Let cool on baking sheets. Brush with gold dust if desired.

  • Cookies can be baked 5 days ahead. Store airtight at room temperature.

Steps:

I have been making these cookies since I was a child. My mother clipped the recipe out of the newspaper. They can be made with the M & M's candies, chocolate or another type chips, or they are also very good plain.

1/2 cup butter, softened
2 cups brown sugar

A versatile sugar cookie. Any flavor of gelatin may be used in this recipe. The flavor and color will change depending upon what flavor gelatin you use. You may tint the dough with food coloring, if desired.

On a lightly floured surface, roll one piece of dough at a time out to 1/4 inch thickness. cut with cookie cutters and place onto an ungreased cookie sheet. Brush the tops of the cookies with egg white, and sprinkle with colored sugar.
  • Bake for 8 to 10 minutes in the preheated oven. Do not brown. allow cookies to cool for a few minutes on the cookie sheets before removing to a wire rack to cool completely.

3 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup unsalted butter, 2 sticks, cubed and chilled
1 cup sugar
1 large egg
1 tablespoon vanilla extract
white royal icing
2 cups blue royal icing
red royal icing
light blue royal icing
1 cup blue sanding sugar

Steps:

  • Preheat the oven to 350˚F (180˚C). Line baking sheets with parchment paper.
  • In a large bowl, combine the flour, baking powder, and salt. Mix with a fork.
  • In a separate large bowl, cream together the butter and sugar with an electric hand mixer for 3-5 minutes, until butter and sugar are fully combined, but before the mixture becomes fluffy. Add the egg and vanilla, and beat to incorporate. Add the flour mixture and mix until just combined, but crumbly. Finish mixing with your hands until the dough comes together in a ball.
  • Transfer the dough to a floured surface. Lightly flour the top of the dough and roll out to about ¼-inch thick. Use cookie cutters of your choice to punch out cookies. Place the cookie cut-outs on the prepared baking sheets.
  • Bake for 10 minutes, until lightly browned around the edges. Let cool completely.
  • Decorate the cookies with royal icing and let dry completely, at least 3-4 hours or overnight.

2 cups melted butter
2 cups powdered sugar
1 cup white sugar
2 eggs
2 tablespoons vanilla
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
4 1/2 cups flour
food coloring at least three different colors
1/4 cup sugar for later

Steps:

  • Melt the butter. Add the sugars and mix. Let the mixture cool to room temperature and mix in the eggs, one at a time. Then add the vanilla, baking soda, cream of tartar and salt. Mix well. Add the flour in half cup increments mixing after each addition. Divide the cookie dough into fourths and place each fourth on a piece of waxed paper. Place on fourth in a bowl and stir in drops of food coloring until the dough is slightly darker than the color you want. Place the dough back onto the waxed paper and color the other three parts. Let the dough firm up for a few moments. Then divide each different color into four parts so you have sixteen lumps of dough in all. Place a sheet of plastic wrap on your counter and roll each lump into a dough rope with your hands. The sixteen dough ropes should each be about 12 inches long. To assemble, stack the dough ropes, two on the bottom and two on the top, near the edge of the plastic wrap. Squeeze them together a bit and push in the ends so they're even. Flip the edge of the plastic wrap over the top and roll them up together tightly in one multi-colored roll. Twist the ends of the plastic wrap, fold them over on top of the roll and refrigerate the rolls as you make them. When you're all finished, you'll have four rolls of multi-colored cookie dough chilling in your refrigerator. Let the dough chill for at least an hour. When you're ready to bake, preheat the oven to 325 degrees. Put 1/4 cup sugar in a small bowl and have it ready next to your greased cookie sheets. Take out the dough roll, unwrap it and slice it into 1/2 inch thick rounds. Place each round into the bowl of sugar abd flip it over so it coats both sides.

1 cup butterscotch chips, melted
2 tablespoons milk

Steps:

  • In large mixing bowl, combine butter, sugars, egg and vanilla.
  • Beat at medium speed of electric mixer until light and fluffy.
  • Add flour, melted chips, milk and baking soda.
  • Beat at low speed until soft dough forms.
  • Cover with plastic wrap.
  • Chill 3 to 4 hours, or until firm.
  • Heat oven to 350°F.
  • Divide dough into thirds.
  • Cover 2/3 dough with plastic wrap; chill.
  • On lightly floured surface, roll remaining third dough to 1/4-inch thickness.
  • Using 2 to 3-inch cookie cutters, cut desired shapes into dough.
  • Place shapes 2 inches apart on ungreased cookie sheets.
  • Repeat with remaining dough.
  • Bake for 6 to 7 minutes, or until edges are golden brown; cool completely.
  • If desired, decorate cookies with favorite frosting.
  • Let dry completely before storing.
  • Tip: If desired, sprinkle cookies with additional granulated sugar before baking.

  • Set a oven to 180 degrees Celsius/350 degrees Fahrenheit. Grease 2 baking sheets. Place the butter and sugar in a bowl and beat together until light and fluffy, then beat in the syrup and vanilla essence.
  • Sift in half of the flour and work it into the mixture. Stir in the smarties and the remaining flour and work the dough together, using a spatula.
  • Roll the dough into 16 balls and place them on the prepared baking sheets, spaced well apart to allow for spreading. Do not flatten them. Bake in the oven for 10-12 minutes or until pale golden at the edges. Remove from the oven and cool on the baking sheets for 2 minutes, then transfer to wire racks to cool completely
