2 lbs of thawed shredded hash browns
2 cups frosted flakes

Steps:

  • Preheat oven at 350 degrees.
  • Mix all ingredients together, except for 1/4 cup of butter.
  • Crush 2 cups frosted flakes with 1/4 cup melted butter and sprinkle on top.
  • Bake for 55 min in a 9 x 13 pan.

1 cup onion, diced
1/2 cup green pepper, diced
2 tablespoons butter or 2 tablespoons margarine
2 cups cooked chicken or 2 cups cooked turkey
1 (4 ounce) can green chili peppers, chopped
3 tablespoons butter or 3 tablespoons margarine
1/4-1/2 cup flour (I use 1/2 cup)
1 teaspoon ground coriander
3/4 teaspoon salt
2 1/2 cups chicken broth
1 cup sour cream
1 1/2 cups monterey jack cheese
12 (8 inch) flour tortillas

Steps:

  • In a large saucepan cook onion and green pepper in the 2 tablespoons of butter until tender.
  • Combine onion mixture in a bowl with chopped chicken and green chili peppers.
  • Set aside.
  • For sauce, in the same pan melt 3 tablespoons butter.
  • Stir in flour, coriander and salt.
  • Stir in chicken broth all at once.
  • Cook and stir till thickened and bubbly.
  • Remove from heat.
  • Stir in sour cream and 1/2 cup of the cheese.
  • Stir 1/2 cup of the sauce into the chicken mixture.
  • Fill each tortilla with about 1/4 cup of the chicken mixture.
  • Roll up and arrange in a 13x19x2 baking dish.
  • Pour remaining sauce over and sprinkle with remaining cheese.
  • Bake, uncovered in a 350 oven about 25 minutes or until bubbly.
  • Can be made ahead of time and frozen. Place a large sheet of heavy duty foil in your baking dish with enough foil over the end to fold up and over the frozen casserole. Make the casserole up until you are ready to bake it. Freeze it solid. Remove frozen casserole from your dish and encase in the excess foil for storage. This frees up the dish for other meals. When you wish to heat it, remove foil from the still frozen casserole, and place back into the dish that you froze it in initially to thaw; bake as directed.

2 cups cheddar cheese, shredded

  • Spray 9 x 11 baking dish with cooking spray.

3 cups elbow macaroni
½ cup diced carrots
⅓ cup chopped onion
1 tablespoon butter
2 cups chopped cooked chicken
1 ½ cups shredded mozzarella cheese, divided
1 cup Caesar salad dressing
½ cup chopped sweet bell peppers
⅓ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Mix carrots, onion, and butter together in a 9x13-inch baking dish.
  • Bake carrot mixture in the preheated oven until slightly tender, about 10 minutes.
  • Mix macaroni, chicken, 3/4 cup mozzarella cheese, Caesar dressing, sweet bell peppers, and Parmesan cheese into carrot mixture; top with remaining mozzarella cheese.

Necessity is the mother of Invention. Our DS wanted "sammiches" for his grad party buffet--which is a reasonable request. Relatives & Friends celebrated and chowed down, but still--due to my bad estimating skills & coming from a family whose motto is "better too much than not enough"--we are now confronted with the reality of "What are we going to do with all this leftover ham and cheese?" And so, from desperation was born this cuisinary creation (yes, I just made up a new word). Adjust your recipe to whatever you have on hand --leftovers being the KEY ingredient and creativity being the necessary seasoning!

8 hamburger buns, cubed (use the squished or dry ones)
1/2 lb deli ham, diced
10 -15 slices cheese (American, cheddar, Swiss)
6 eggs, beaten
1/2-1 cup milk
yellow mustard
salt & pepper
tomatoes, slices (optional)
onion rings, diced (optional)
black olives, sliced (optional, or green olives)
red pepper, dices (optional, or green peppers)
6 -8 cheese slices
5 slices summer sausage, diced

Steps:

  • While putting away the party leftovers --
  • Grease 13x9 pan with butter; spread bread/bun cubes over entire bottom of pan (use more or fewer buns if using a larger/smaller pan).
  • Sprinkle ham pieces and cheese slices over bread; set aside.
  • Mix eggs and milk until frothy, add several squirts of mustard, beat and then pour over the ham, cheese, bread cubes.
  • Customize the toppings to the eaters' choices. (Dad likes everything, but Mom doesn't want tomatoes, and DS would rather kiss a rattlesnake than eat onions, so let's make everyone happy!).
  • Add another layer of leftover cheese; sprinkle sausage dices artfully (or optionally). Olive slices can go on now, too or any other little tidbits of really tasty niblets.
  • Top pan with foil; chill until morning or leave on the counter if you're a brave soul.
  • Next morning - pop pan in oven, set to 350*. Bake for 20-30 minutes, remove foil, bake for another 3-5 minutes until top is bubbly and "set".
  • VARIATIONS: Use your favorite cheese, try turkey instead of ham.
  • Great way to use up the cheese and sausage tray that was forgotten in the fridge!
  • EXTRAS: black or green olives.
  • Par-cook: stuff from the veggie tray (cauliflower, broccoli, carrots).
  • DELISH: add a few smidgens (or a LOT!) of the veggie dip to the egg/custard bowl -- or drop on top in cheerful dollops. Oh yum!

This casserole is one of my favorite potluck contributions, as it's easy to make lots of it fast, and folks love it.

48 ounces refried beans
20 ounces tortilla chips
1 bunch fresh cilantro
1 (15 ounce) can olives (black)
1 (15 ounce) can corn
1 package cherry tomatoes
2 yellow bell peppers (or any color really)
32 ounces mild salsa
3 avocados (black skinned kind, ripe)

Steps:

  • Equipment: 2 deep lasagne pans.
  • On the bottom of each pan, spread a layer or two of chips, flattening as needed.
  • I used about 5 oz of the chips in each pan.
  • Drop spoonfuls of refried beans atop the chips layer, using 16 oz in each pan.
  • Once you've got all of the spoonful drops down, use the back of the spoon to spread the refried beans around more evenly.
  • Pour 8 oz salsa over each pan, and spread about.
  • Over each pan, crumble 2.5 oz of chips.
  • Layer 7.5 oz of the corn in each pan.
  • Chop up the bell peppers, and layer them evenly in the 2 pans.
  • Chop up the avocadoes and olives, and layer them evenly in the pans.
  • Chop up the cilantro, and sprinkle it over the pans.
  • Using the remaining refried beans, drop spoonfuls atop the pans, and spread them around.
  • (They won't cover the whole surface; that's ok).
  • Spread the remaining salsa in a thin layer across the top of each pan.
  • Chop the cherry tomatoes, and sprinkle those over the top of each pan.
  • Crumble the rest of the chips, and sprinkle those over the top.
  • Bake at 450 degrees for about 1/2 hour, maybe more (keep an eye on it after the first 20 minutes as ovens can vary); I turn the oven off once the top layer of chips is lightly browned and a forkful swiped out of the bottom of the pan is hot.
  • (Note- Don't worry too much about the quantities of ingredients; this is not a recipe where precision matters. If you have more or less of something, it'll still taste good).

  • In a large resealable plastic bag, combine the flour, salt and pepper; add beef in batches; shake to coat. In a large skillet, cook beef over medium heat in oil until meat is no longer pink. Place beef and drippings in a greased shallow 2-1/2-qt. baking dish. , In the same skillet, add the water, broth, garlic, onion, thyme and rosemary; bring to a boil. Simmer, uncovered, for 5 minutes; stir in mushrooms. Pour over meat; stir to coat. , Cover and bake at 350° for 1-1/2 to 1-3/4 hours or until beef is tender. Sprinkle peas over meat. Spread potatoes evenly over top. Brush with butter; sprinkle with paprika. Cover and bake 15-20 minutes longer.

It's unique from the soup and french fried onion version, and was a favourite of an old friend - the ultimate dinner party hostess of the 60's and 70's. I've never been fond of green beans, but this changed my mind and is a hit with all ages. It's perfect for a family dinner and can be made the day before and reheated for guests. It's a real winner.

6 boneless skinless chicken breast halves (4 ounces each)
1 cup water
2 cups sliced zucchini , cut 1/4 inch slices
1 package (14 ounces) frozen baby carrots or 3 cups fresh baby carrots
5 tablespoons butter, divided
2 tablespoons all-purpose flour
1-1/2 cups half-and-half cream or milk
2 teaspoons chicken bouillon granules
1/2 teaspoon prepared mustard
1/2 teaspoon dill weed, divided
1/8 teaspoon pepper
Dash nutmeg
1 can (14-1/2 ounces) small whole onions, drained
1-1/2 cups soft bread crumbs
3/4 cup shredded cheddar cheese
1/2 cup coarsely chopped walnuts

Steps:

  • In a large skillet, bring chicken and water to a boil. Reduce heat and simmer, uncovered, for 3 minutes on each side (chicken will not be completely cooked). Remove chicken from cooking liquid and place down the center of an ungreased 13-in. x 9-in. baking dish; set aside. , Cook zucchini and carrots in cooking liquid for 5 minutes or until zucchini just begins to soften; drain and set aside. In a large saucepan, melt 2 tablespoons butter; stir in flour and cook for 1 minute. Stir in cream until smooth. Add bouillon, mustard, 1/4 teaspoon dill, pepper and nutmeg. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat. , Spoon 1/2 cup sauce over chicken. Add the zucchini, carrots and onions to remaining sauce. 1 Tbsp olive oil
8 oz mushrooms, sliced
1/8 c flour
1/4 c sherry or white wine (i had a drop of white wine in bottle so i used it in addition to sherry :)
2 1/2 c chicken broth
2 c left over onion dip...prepared
2 c cookd chicken, large pieces 2"
2 c partially cookd broccoli
12 oz egg noodles, al dente
1/4 c parmesean cheese
1 1/2 c havarti cheese, sliced (this is wat i had in fridge...u could use mozzerella, swiss, provalone. watever u hve on hand ;)
1-1 1/2 c french fried onions

Steps:

  • 1. PREHEAT OVEN TO 350 n PREPARE BAKN PAN WITH COOKN SPRAY...SET ASIDE.
  • 2. IN A LARGE PAN HEAT BUTTER WITH OLIVE OIL N SAUTÉ MUSHROOMS UNTIL SLIGHTLY BROWND.
  • 3. SPRINKLE IN FLOUR N COOK FOR A MINUTE

This riff on the sausage/egg casserole was born tonight and caused us to fall off our chairs. Caught lightning in a bottle with this so will notate exactly what I did. NOTE: there are many recipes with a number of these basic ingredients. Since there were a few new elements, significantly varied portions and particular techniques used, I'm listing it as a separate recipe.

5 eggs
3/4 lb mild Italian sausage
2/3 cup skim milk
1/3 cup half-and-half cream
2 pieces brownberry's oatnut bread, cubed (lightly toasted)
1/3 large white onion, chopped
2 large fresh garlic cloves, crushed in a press
4 -6 leaves fresh basil
1 cup shredded cheddar cheese
2 tablespoons extra virgin olive oil
kosher salt
fresh crushed black pepper
1/3 teaspoon dried mustard
paprika

Steps:

  • -preheat oven to 360.
  • two parts to this prep; the sausage mix prep and the egg mix prep.
  • THE SAUSAGE MIX.
  • -break sausage into small pieces and begin to brown in 1 tablespoon of the olive oil, never more than medium heat.
  • -after about five minutes, push sausage to one side.
  • -add chopped onion and crushed garlic to other side of pan; add basil leaves, torn into small, dime-size pieces; place this side of the pan directly over the heat to start the onions on their way. Keep it moving and keep heat low so the garlic doesn't burn.
  • -add some fresh crushed black pepper and dashes of kosher salt.
  • -once onions start to soften and brown a bit, mix in with sausage.
  • -continue to mix and modulate heat from medium to low, careful not to burn the meat, until sausage is brown. Turn off heat.
  • THE EGG MIX.
  • -beat the five eggs.
  • -add milk and half & half.
  • -add lightly toasted and cubed Brownberry's Oatnut bread [if you don't have this, what you should know is it's full-bodied and has a slight sweetness, as well as the obvious texture from, well -- oats and nuts.this is a major flavor/texture secret in the final tasting].
  • -add 2/3 cup of shredded cheddar cheese.
  • -add dried mustard and some more pepper.
  • COMBINING.
  • -2tsp of olive oil rubbed into bottom/sides of 2 inch deep/9 inch diameter ceramic baking dish.
  • -sausage mixture into bottom of dish.
  • -add egg mixture over the top.
  • -spread remaining 1/3 cup cheddar cheese over the top.
  • -more crushed black pepper and and couple dashes of paprika dusted over the top.
  • ---***** I forgot to add a little baking powder to this to keep the egg fluffy. Will add a teaspoon next time******.
  • BAKE.
  • -45 minutes at 360 degrees, fork test in center comes out clean.
  • -let set for 5 minutes and serve!

1/2 c. Melted Butter
1/2 c. Chopped Onion
1 tsp. Salt
1/2 pt. Sour Cream
1 can cream of chicken soup
2 c. shredded sharp cheddar cheese
2 c. crushed corn flakes
1/2 c. melted butter

Steps:

  • Place all ingredients except topping in a large bowl and mix together well. Place in a 3 quart casserole and bake in 350 degrees for 45 to 60 minutes. During last 20 minutes of baking time, add topping.

Steps:

3 cups chicken breasts cubed cooked
2 cups chicken broth or bouillon
2 cups white rice cooked
2 cups bread crumbs soft
1/4 pound mushrooms quartered (about 1 1/2 cups)
1 cup celery sliced
4 eggs lightly beaten
1/2 cup green onion sliced
1/4 cup pimiento diced
2 tablespoons parsley minced
1/2 teaspoon salt
1/4 teaspoon paprika
black pepper
1/2 cup almonds slivered
1/4 cup butter or margarine
2 cups croutons
Light Cream Sauce (see below)

Steps:

  • Preheat oven to 350°. Generously grease a 3-quart oblong baking dish.In a large bowl, mix chicken, broth or bouillon, rice, bread crumbs, mushrooms, celery, eggs, green onions, pimiento, parsley, salt, paprika and pepper. Pour into baking dish.In a large skillet over medium-high heat, saute almonds in butter or margarine until lightly browned. Add croutons and stir until well coated. Sprinkle over top of chicken mixture.Bake for 30 to 40 minutes or until hot.Serve sauce separately.

3 cups elbow macaroni
1/2 cup diced carrots
1/3 cup chopped onion
1 tablespoon butter
2 cups chopped cooked chicken
1 1/2 cups shredded mozzarella cheese, divided
1 cup Caesar salad dressing
1/2 cup chopped sweet bell peppers
1/3 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Mix carrots, onion, and butter together in a 9x13-inch baking dish.
  • Bake carrot mixture in the preheated oven until slightly tender, about 10 minutes.
  • Mix macaroni, chicken, 3/4 cup mozzarella cheese, Caesar dressing, sweet bell peppers, and Parmesan cheese into carrot mixture; top with remaining mozzarella cheese.
  • Bake in the preheated oven until casserole is heated through and cheese is melted, about 25 minutes.
