GRILLED NEW POTATOES WITH LEMON-GARLIC AIOLI AND PARSLEY



Grilled New Potatoes with Lemon-Garlic Aioli and Parsley image

3 pounds small new potatoes
1 1/2 cups best-quality mayonnaise
6 cloves garlic, coarsely chopped
1/4 cup fresh lemon juice
2 teaspoons finely chopped lemon zest
Salt and freshly ground pepper
Olive oil
1/4 cup finely chopped fresh flat-leaf parsley

Steps:

  • Place the potatoes in a stockpot and cover with cold water. Bring to a boil, season the water with salt, and cook until almost tender, about 15 minutes. Drain the potatoes, and when cool enough to handle, cut each potato in half.
  • Preheat the grill to medium. Add the mayonnaise, garlic, lemon juice, and zest to a blender and blend until smooth. Season with salt and pepper, to taste. Set aside.
  • Brush the potatoes with oil on all sides and sprinkle with salt and pepper. Grill, cut side down, until golden brown and just cooked through. Remove the potatoes to a platter. Drizzle the aioli over the potatoes and sprinkle with chopped parsley.

12 small red potatoes
4 garlic cloves, minced
2 tablespoons chopped fresh parsley
3 teaspoons lite olive oil (divided)
salt and pepper

Steps:

  • Scrub the potatoes well.
  • Pare a 3/4" strip around the middle of each potato (this is just to give you a little contrast in color).
  • Place potatoes in a saucepan, cover with water and bring to a boil.
  • Simmer covered for about 20 minutes or until tender.
  • Drain potatoes and place them in a bowl add two teaspoons of oil& toss.
  • In a non stick frypan add the remaining oil over medium heat.
  • Add garlic,cook approximately 1 minute.
  • Add parsley, salt& pepper, mix well.
  • Add potatoes, reduce heat to low and cook stirring constantly for 1 or 2 minutes.
  • Serve.

This is a simple recipe, yet really good. My mom used to make parsley potatoes when I was a little kid. They were ok, but this recipe is even better than hers.

3 lb small red new potatoes
1/2 stick butter or margarine
1/4 tsp salt
pepper, to taste
3 Tbsp dried or fresh parsley
1/2 tsp dried or fresh thyme

Steps:

  • 1. Boil the potatoes, whole, in a large pot of water. Bring to boiling. Cook for 15 minutes or until fork-tender, then drain. (I don't peel the potatoes.)
  • 2. Cut the potatoes in half and place them in a large bowl.
  • 3. Drizzle the melted butter over them, and then add salt, pepper, parsley and thyme. Toss to coat potatoes evenly, and serve.

PARSLEY CHIVE SAUCE
2 tablespoon(s) butter or margarine
2 tablespoon(s) flour
1/4 teaspoon(s) dry ground mustard
1-1/4 cup(s) milk
1/3 cup(s) shredded sharp cheddar cheese
2 teaspoon(s) dried parsley
2 tablespoon(s) choppes fresh chives or 2 teaspoons dried chives
1/4 teaspoon(s) salt

Steps:

  • For the potatoes: Wash potatoes and peel a ½ inch strip around the center of each potato, leaving the rest of the skins on potato.
  • Cook potatoes in boiling water for 15 to 20 minutes, or until tender. Drain.
  • Serve with Parsley-Chive Sauce (below).
  • For the sauce: Melt butter in a saucepan over low heat. Add flour and dry mustard. Cook for 1 minute, stirring constantly.
  • Gradually add milk and stir continuously over medium heat until thickened.
  • Add remaining ingredients. Stir until cheese melts. Makes about 1-1/2 cups.
