3 garlic cloves, peeled (depending on size and taste preference)
2 tablespoons butter
1/2 cup milk
1 teaspoon salt
1/4 cup grated parmesan cheese

Steps:

  • Put potatoes and garlic in lg pan.
  • Cover with water.
  • Bring to a boil.
  • Reduce heat and simmer for 25 minutes, until potatoes are tender.
  • Drain well.
  • Mash with the butter, milk, and salt.
  • Stir in the parmesan cheese.

When there's no space on the stovetop to boil and mash potatoes, braise and mash them in a slow cooker - an easy and forgiving one-pot method. This rustic version has big flavors, thanks to the garlic that's cooked and smashed with the potatoes. The five garlic cloves lends a fairly assertive flavor, so decrease it to 2 or 3 cloves if you want a more subtle effect. You can leave the dish on warm for up to 3 hours after you mash the potatoes, just stir in the Parmesan and parsley right before serving.

1/2 cup olive oil
Juice of 1/2 lemon (2 tablespoons)

Water or stock
6 uncooked bratwurst links
Roasted Red Pepper Puree, recipe follows

Pan-Roasted Herbed Layered Potatoes, recipe follows
1 red pepper
Olive oil, for emulsification
Salt and pepper
1 cup shredded Parmesan, divided
1 bag mixed salad greens
1/2 cup vinegar
1/4 cup sugar
1/4 cup olive oil
3 pounds russet potatoes
3 tablespoons thyme, chopped
3 tablespoons sage, chopped
3 tablespoons chives, chopped
1 stick butter
Salt and pepper

Steps:

  • In a large stockpot, add beer and enough water or stock to cover the bratwurst, and bring to a boil. Add bratwurst, and boil for 5 to10 minutes, or until fully cooked. Remove the brats from the beer, pat dry, and brown on each side in a grill pan. Be careful not to pierce or cut the bratwurst, or you will lose all of its natural juices.
  • Over an open flame, roast the pepper, until the skin is completely blackened. Using tongs, remove the pepper from the flame and put it in a covered bowl for 10 minutes to steam. Once the pepper has steamed, rub the charred skin from the pepper. Remove the seeds and the inner membrane, and then chop the pepper coarsely.
  • In a blender, pulse the pepper with olive oil until the mixture is pureed and reaches your desired consistency. Season the puree with salt and pepper.
  • Heat a non-stick skillet over medium-high heat. Sprinkle 1/4 cup of cheese into the pan. Allow the cheese to harden and slightly melt together. Remove from heat. As the Parmesan begins to cool slightly, loosen the edges with a spatula and drape the cheese over a cup so that it will harden into a bowl shape. Allow the Parmesan bowl to cool. Once the cheese has hardened, do not place anything hot in the bowls or they will melt.
  • In a large bowl, mix together the vinegar, sugar and olive oil, then add the mixed greens and toss the salad mixture together. Serve the salad inside the individual Parmesan cups.
  • Melt butter in a large skillet over medium-high heat. Wash and peel the potatoes, and then slice the potatoes into disks. Layer the potato slices in the pan. Combine herbs. Drizzle 1 tablespoon of butter over the potatoes, sprinkle salt and pepper and add 2 teaspoons of the fresh herbs on top of the first layer. Repeat the layering process, ending with drizzled butter on the top. Cover the potatoes and cook over medium heat for 45 minutes.
  • Invert a plate over the skillet and turn the pan over to remove the potatoes from the pan. Garnish with the remaining herbs.

Very easy, very little prep. I use to buy a product made by Lipton, which came in a bottle and you poured it over your diced potatoes and baked/grilled the dish. They have since discontinued the product, so I have found this to be the next best thing.

1/3 cup vegetable oil
1 (1 ounce) envelope dry onion soup mix
grated parmesan cheese

Steps:

  • Combine all ingredients in a large plastic bag, seal and shake until well coated.
  • Empty bag into a 13x9 dish, cover and bake at 350 degrees for 35 minutes, stirring occasionally.
  • Uncover and bake 15 minutes longer or until potatoes are tender.
  • *I think they even taste better more browned and crispy, so you may want to turn up the temp after uncovering and cook them longer.
  • You could also make this on the grill, covered in foil in an aluminum pan. Grill for 1 hour, turning potatoes occasionally.

1 can (14-1/2 ounces) chicken broth

4 -6 red potatoes, quartered
carrot (optional)
celery (optional)
olive oil, enough to coat vegetables
3 tablespoons melted butter (optional)
1 onion
1 shallot
3 garlic cloves, pressed with garlic press
sea salt
fresh ground pepper
basil
red pepper flakes
oregano
shredded parmesan cheese (optional)

Steps:

  • -Preheat oven to 425.
  • -Cut up potatoes (and celery and carrots, if using) and put in an 8x8 glass baking dish.
  • -Chop onion and shallot in food processor and mix with potatoes/veggies.
  • -Mix garlic in with potatoes/veggies, onions and shallots.
  • -Pour on enough olive oil to coat the potato/veggie mixture (I usually put sandwich baggies over my hands and mix it all with my hands. You want to completely cover the potatoes with the olive oil so that the seasonings will stick).
  • -Sprinkle seasonings over potato/veggie mixture (I used the ones listed above, but use whatever kinds you like). Do not add parmesan cheese yet.
  • -Pour 3 tbsp of butter over everything if you want to add a buttery flavor, or skip this step if you prefer the olive oil only.
  • -Bake for 55 mins, stirring once halfway through cooking.
  • -Remove from oven and add shredded parmesan, then bake for another 5 mins or until cheese is melted.

5-6 large red potatoes
1 small onion
4 Tbsp butter (melted)
1/2 c parmesan cheese (shredded)
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1 pinch fresh parsely (optional)

Steps:

  • 1. Preheat oven to 425 degrees. Spray 7x11 (or 2 quart) baking dish with non stick cooking spray.
  • 2. Wash and dry potatoes. Slice very thinly and place half of them in dish.
  • 3. Slice onion very thinly and separate rings. Lay them on top of the potatoes.
  • 4. Add the second half of the potatoes on top of onion layer. Drizzle with melted butter.

4-6 slices Uncured bacon, cooked, halved lengthwise and chopped
2 tablespoons olive oil
3 garlic cloves, roughly chopped
salt and ground black pepper
Fresh grated Parmesan cheese
1/4 cup chopped flat-leaf parsley, minced

  • 1. Preheat the oven to 400 degrees. Cut the potatoes into 1 inch chunks and place in a bowl. Toss with the olive oil, salt and pepper and scatter over the baking sheet covered with parchment paper. 2. Place a cooking rack in a baking sheet and evenly space the bacon on the rack. 3. Place the bacon on the lowest rack and the potatoes above it and bake. Being with 3 minutes increments watching the bacon carefully. Remove the bacon when cooked to your liking. 4. After the potatoes have baked for 20 minutes, add the garlic to them, toss and bake another 5 minutes. 5. Remove the potatoes and place them in a large bowl. Grate fresh Parmesan over the potatoes and scatter the parsley and bacon on top.

3 to 4 red potatoes
1/2 c melted butter
1/2 c grated parmesan cheese (container)
1 Tbsp parsley flakes

Steps:

  • 1. Wash and dry potatoes. Cut in half. In a microwave safe (glass) dish, put butter in dish and melt (about 10 sec).
  • 2. In a seperate dish put parmesan cheese and parsley and mix together. Dip cut side of potato into butter and then dip into parmesan mixture. Press down just a little. Set potato, cut side up (with the parmesan)into the same buttered dish and finish dipping the rest of the potatoes and set in dish. If you run out of butter or parmesan just mix a little more.. Melt extra butter if you want and drizzel over potatoes..Make sure there is a little butter in bottom of the potato dish.
  • 3. Cover with plastic wrap and microwave 6 to 8 minutes. Being careful, use fork to lift one side of plastic wrap and test a potato to see if it is done..adjust time for larger sized potatos. You can use freshly grated parmesan if you have it. I do not use salt and pepper, but you may season to your liking.
