15 mushrooms
1 tablespoon canola oil
2 tablespoons garlic, chopped
½ tablespoon kosher salt
½ tablespoon black pepper, freshly ground
8 oz cream cheese, softened
¼ cup italian breadcrumbs
½ cup shredded parmesan cheese, divided
2 tablespoons fresh parsley, chopped
1 teaspoon kosher salt
1 teaspoon black pepper, freshly ground
fresh parsley, chopped, to garnish

Steps:

  • Preheat oven to 350° F (180°C).
  • Cut the stems off of each of the mushrooms and finely chop them, setting the mushroom caps aside for later.
  • Heat the oil in a pan over high heat. Cook the chopped stems with the garlic, salt, and pepper for about six to eight minutes, constantly stirring. Be careful not to burn the garlic. Remove from heat.
  • In a medium bowl, combine cooked stems, cream cheese, breadcrumbs, half of the parmesan, parsley, salt, and pepper, mixing until evenly combined. The mixture should be extremely thick.
  • Space out the mushroom caps evenly on a baking sheet, upside down. Spoon a generous amount of the cream cheese mixture on top of each mushroom.
  • Top each mushroom with a sprinkle of parmesan cheese. Bake for 20 minutes.
  • Garnish with a sprinkle of parsley, then serve!

1 1/2 cups finely chopped onion
1 1/2 cups thinly sliced celery
1 cup finely chopped green bell pepper

  • Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Cut bottom crust and short ends off bread and discard. 3 tablespoons balsamic vinegar
1 tablespoon whole-grain mustard, such as Maille

4 large portobello mushroom caps, stems and gills removed
1 large shallot, minced
2 large cloves garlic, minced
Pinch red pepper flakes
2 cups diced yellow squash (2 to 3 squash)
2 cups diced zucchini (1 to 2 zucchini)
2 plum tomatoes, diced
1/2 cup panko
1/2 cup freshly grated Parmesan
2 tablespoons minced parsley leaves

Steps:

  • Position an oven rack 4 inches from the broiler and preheat the broiler to high.
  • Whisk together 1/4 cup of the oil, the vinegar and mustard in a 9- by 13-inch baking dish. Season with salt and pepper. Dip each mushroom cap in the marinade, turning to coat on all sides. Let the mushrooms sit in the marinade for 15 to 20 minutes.
  • Heat the remaining 2 tablespoons oil in a large nonstick skillet over medium-high heat. Add the shallots and saute until just beginning to soften, about 2 minutes. Cover the vegetables with the panko mixture, drizzle with a bit of olive oil and place under the broiler until browned, about 2 minutes. Serve hot or at room temperature.

Steps:

  • Preheat oven to 350ºF.
  • MUSHROOMS.
  • CLEAN top of mushrooms with damp cloth. Place cleaned mushrooms on a sheet tray, stem side down. Bake at 350ºF for 5-8 minutes.
  • REMOVE from oven until ready to stuff, in step 5 below.
  • STUFFING.
  • BROWN sausage in a nonstick skillet, crumbling sausage into small pieces. Once browned, drain fat and transfer to a paper towel to cool.
  • BEAT eggs with milk in a medium bowl, then mix in parsley, basil, garlic, croutons, and Parmesan cheese.
  • ADD cooled sausage and mix well -- mixture should be wet but firm and hold together easily.

I'm not sure if I came up with this on my own or if it's a common recipe but I had a craving for eggs with cheese and mushrooms last night, when I started to make it and get the ingredients, I discovered to my dismay that we were totally out of cheese which is quite unusal in my house, anyway, I sauted some sliced fresh muchrooms and chopped onions in butter, added some parmesan cheese, let it saute for about 15 minutes, then scrambled eggs and added it to the other ingredients....was pleasantly surprised, it came out very tasty and I will be making it again, DH an DS loved it.

TUNA CASSEROLE WITH BOW TIES, MUSHROOMS AND PARMESAN



Tuna Casserole With Bow Ties, Mushrooms and Parmesan image

This is a great from scratch Tuna Casserole. No canned soup here, an easy Parmesan cream sauce with just a touch of cayenne to give it a nice kick. Red bell peppers, green onions and mushrooms give it the right flavor and colors to pull an ordinary tuna casserole to over the top. This recipe comes from Art Smith's cookbook "Kitchen Life" which I am enjoying very much! When I make this again, I will probably substitute Ritz cracker crumbs for the dried bread crumbs to add a little more pizzaz to the top.

1 lb bow tie pasta (also called farfalle)
5 tablespoons unsalted butter
1 red bell pepper, chopped
10 ounces white mushrooms, sliced
3 scallions, chopped
1/3 cup flour
2 cups milk
1 cup chicken broth
2 (6 ounce) cans tuna, drained and flaked
3/4 cup parmesan cheese, freshly grated
1/8 teaspoon cayenne pepper
salt and pepper
1/4 cup dried breadcrumbs

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350. Lightly coat the inside of a 2 ½ to 3 quart baking with vege spray.
  • Bring a large of water to a boil over high heat. Add the pasta and cook until barely tender (it will cook further in the oven). Drain well. Return the pasta to the cooking pot.
  • Meanwhile heat the butter in a large skillet over medium heat. Add the bell pepper and cook stirring often, until softened, about 3 minutes.
  • Add the mushrooms and the scallions, and cook, stirring often, until the mushroom juices evaporate and the mushrooms are tender, about 6 minutes.
  • Sprinkle with the flour and stir well. Stir in the milk and broth, and bring to a boil, stirring often.
  • Reduce heat to medium low and simmer until slightly thickened, about 3 minutes.
  • Remove from heat and stir in the tuna, ½ cup parmesan and the cayenne. Stir this into the pasta mixture and season with salt and pepper.
  • Pour the pasta into the baking dish and sprinkle with bread crumbs and remaining ¼ cup parmesan. Bake until the sauce is bubbling, 25 to 30 minutes. Let stand 5 minutes, then serve hot.

1/2 cup whipping cream
2 tablespoons minced fresh thyme
*Corn grits, also known as polenta, are available at Italian markets, natural foods stores and some supermarkets. If unavailable, substitute 1 cup regular yellow cornmeal, and simmer about 10 minutes.

Steps:

  • Preheat oven to 325°F. Butter 8x8x2-inch glass baking dish. Bring 43/4 cups water and salt to boil in heavy medium pot. Add corn grits to boiling water in thin steady stream, stirring constantly. Reduce temperature and simmer grits until thick, stirring frequently, about 20 minutes. Pour cooked grits into large mixing bowl. Whisk in 1/4 cup grated Parmesan cheese, grated cheddar cheese and 2 tablespoons butter. Season grits to taste with pepper. Whisk in egg. Transfer to prepared baking dish. Place dish in large roasting pan. Fill roasting pan with enough hot water to come halfway up sides of baking dish. Bake until grits are firm to touch, about 45 minutes.
  • Meanwhile, melt remaining 2 tablespoons butter in heavy large skillet over medium-high heat. Add assorted mushrooms, ham and minced shallot and sauté until mushrooms are tender, about 4 minutes. Add white wine and cook until almost all liquid is absorbed, about 3 minutes. Add whipping cream and cook until slightly thickened, about 3 minutes. Stir in fresh thyme. Season mixture to taste with salt and pepper.
  • Spoon baked corn grits onto plates. Top with mushroom and ham mixture. Sprinkle with remaining 1/2 cup grated Parmesan cheese and serve immediately.

16 -20 large white mushrooms
3 -4 garlic cloves, pressed or 3 -4 finely minced garlic
1/4 cup dried breadcrumbs (or 1/2 cup fresh)
1/4 cup parmesan cheese, grated
2 -4 tablespoons olive oil
1 egg
pepper

Steps:

  • Preheat oven to 400°F
  • Remove stems from mushrooms.
  • If you've got a melon baller, scoop out some of the mushroom's insides.
  • Chop all mushroom bits finely.
  • In medium bowl, combine all ingredients and blend well.
  • Add more oil if mixture looks dry.
  • Should look shiny.
  • Lightly oil an oven proof-serving dish
  • Use a spoon to stuff mushroom caps and place in oiled baking dish

This pasta dish gets most of its flavor from the sauteed mushrooms, along with a little garlic and Parmesan cheese. For a more complex flavor, use a variety of mushrooms.

1 pound linguine or other long pasta
Coarse salt and ground pepper
2 tablespoons olive oil
2 pounds assorted fresh mushrooms, cleaned and sliced 1/2 inch thick
6 garlic cloves, thinly sliced
1 cup finely grated Parmesan cheese, plus more for serving

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1 cup cooking water; drain pasta, and return to pot.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Add mushrooms and garlic; season with salt and pepper. Cover skillet (it will be full); cook, tossing occasionally, until mushrooms have softened and released their liquid, 7 to 10 minutes. Uncover skillet, and reduce heat to medium; cook, tossing occasionally, until mushrooms are tender and browned, 10 to 12 minutes.
  • Add mushroom mixture and Parmesan cheese to pasta; toss to combine. Add as much reserved pasta water as necessary to create a light sauce. Serve immediately, topped with more Parmesan cheese.

20 large mushrooms
4 tablespoons butter or 4 tablespoons margarine
2 cloves garlic, chopped
2 tablespoons fresh parsley, finely chopped
1/4 cup parmesan cheese or 1/4 cup romano cheese, grated
1/2 cup italian seasoned dry bread crumb

Steps:

  • Wipe clean mushrooms with either a mushroom brush or a very slightly damp paper towel.
  • Carefully remove stems from mushrooms and chop stems.
  • Place butter and garlic into a heated skillet and let butter melt, stirring.
  • Add chopped mushroom stems and saute until lightly brown.
  • Add parsley,stir,and remove from heat.
  • Add cheese and stir to combine.
  • Add bread crumbs, stirring until mixture is crumbly.
  • Lightly fill each mushroom cap with the sauteed mixture, but don't pack tightly.
  • Set on a rimmed cookie sheet lined with foil and bake in a preheated oven at 350 F for about 20 minutes.

BAKED ZITI WITH MUSHROOMS, PEPPERS, AND PARMESAN



Baked Ziti with Mushrooms, Peppers, and Parmesan image

3 large yellow bell peppers (about 1 1/2 pounds)
1 large onion
3 garlic cloves
3 tablespoons olive oil
1 1/2 cups heavy cream
1 1/2 pounds mushrooms
2 medium red bell peppers
2 medium orange bell peppers
1 pound ziti
8 scallions (green part only)
2 cups freshly grated Parmesan (about 6 ounces)

Steps:

  • Chop yellow bell peppers and onion and mince garlic. In a 3- to 4-quart heavy saucepan cook yellow peppers, onion, and garlic in 1 tablespoon oil, covered, over moderately low heat, stirring occasionally, until peppers are soft, about 30 minutes. Stir in cream. In a blender puree mixture in batches (use caution when blending hot liquids), transferring to a large bowl, and season with salt and pepper. (Sauce may be made 2 days ahead and chilled, covered. Bring sauce to room temperature before proceeding.)
  • Thinly slice mushrooms lengthwise and cut red and orange bell peppers into 1/4-inch-wide strips. In a deep large heavy skillet cook mushrooms and peppers in remaining 2 tablespoons oil over moderately high heat, stirring occasionally, until peppers are softened and most of liquid is evaporated, about 8 minutes, and season with salt and pepper.
  • Preheat oven to 375°F.
  • Fill a 6- to 7-quart kettle three fourths full with salted water and bring to a boil. Stir in ziti and cook until just tender, about 10 minutes. Reserve 1 cup pasta cooking water and drain ziti well in a colander. Rinse ziti and drain well. Thinly slice scallion greens. Into sauce stir ziti, mushroom mixture, scallion greens, 1 1/2 cups Parmesan, reserved cooking water, and salt and pepper to taste. Spoon mixture into a 3-quart shallow baking dish and sprinkle with remaining 1/2 cup Parmesan.
  • Bake ziti in middle of oven until hot and pasta begins to brown, about 20 minutes.

CREAMY PANCETTA PASTA WITH MUSHROOMS AND PARMESAN

One 16-ounce package pappardelle nests or 1 recipe for Cracked Black Pepper Pasta
One 6-ounce piece pancetta, cut into cubes
6 ounces fresh chestnut or cremini mushrooms, cleaned and finely sliced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Freshly ground black pepper

Steps:

  • Bring a large pot of water to the boil and cook the pappardelle according to the package directions.
  • While the pasta is cooking, put a large skillet over medium-high heat. Cook the pancetta until it starts to brown, about 5 minutes. Add the mushrooms and cook for 2 to 3 minutes, then add the cream. When the cream is hot, add the Parmesan and stir.
  • Drain the pasta and add it to the skillet. Stir well and season with some pepper. I find it does not usually need salt because of the salty pancetta and Parmesan. Serve immediately. I like to serve it with an arugula salad.

PORTOBELLO MUSHROOMS STUFFED WITH PARMESAN WHIPPED POTATOES



Portobello Mushrooms Stuffed with Parmesan Whipped Potatoes image

8 ounces white-skinned potatoes, peeled, chopped
6 garlic cloves, peeled, left whole
1 bay leaf
4 tablespoons freshly grated Parmesan cheese
2 large eggs, beaten to blend
4 4- to 5-inch-diameter portobello mushrooms
6 teaspoons olive oil
1/2 cup chopped onion
2 tablespoons chopped fresh parsley
1 teaspoon minced fresh rosemary
2 6-ounce bags fresh baby spinach

Steps:

  • Cook all potatoes, garlic, and bay leaf in large saucepan of boiling salted water until very tender, about 12 minutes. Drain; discard bay leaf. Return potatoes to pot. Mash until smooth; cool slightly. Mix in 3 tablespoons cheese. Season with salt and pepper. Whisk in eggs.
  • Remove mushroom stems and chop finely. Heat 2 teaspoons oil in large nonstick skillet over medium-high heat. Add mushroom stems and onion; sauté 5 minutes. Stir in parsley and rosemary. Season with salt and pepper.
  • Preheat oven to 400°F. Brush rounded sides of mushrooms with 3 teaspoons oil. Place on baking sheet, gill sides up. Bake 10 minutes. Reduce oven temperature to 350°F. Divide onion mixture among mushroom caps. Mound potato mixture in caps. Sprinkle with 1 tablespoon cheese. Bake until heated through, about 25 minutes.
  • Heat 1 teaspoon oil in large pot over medium heat. Add spinach; sauté 2 minutes. Season with salt and pepper. Divide among 4 plates. Top each serving with 1 stuffed mushroom.

*1 lb. loaf crusty country style white bread
*1/4 cup olive oil
*4 tsps. chopped fresh thyme
*1 large garlic clove, minced
*6 tbs. butter
*1 lb. assorted fresh mushrooms (button, portobello, and stemmed shiitake) thinly sliced
*1 1/2 cup finely chopped onion
*1 1/2 cup thinly sliced celery
*1 cup finely chopped green pepper
*3 1/2 cups heavy whipping cream
*8 large eggs
*2 tsps. salt
*1 tsp. freshly ground pepper
*1/3 cup finely grated Parmesan Cheese

Steps:

  • Preheat oven to 350 degrees. Butter 13x9x2 inch glass baking dish. Cut bottom crust and short ends off bread and discard. Cut remaining bread with crust into 1 inch cubes (about 10 cups loosely packed). Place cubes in very large bowl. Add oil, thyme, and garlic; toss to coat. Spread cubes out on large rimmed baking sheet sprinkle with salt and pepper. Bake until golden and slightly crunchy, stirring occasionally, about 20 minutes. Return toasted bread cubes to same very large bowl. Melt butter in large skillet over medium high heat. Add mushrooms, onion, celery, and pepper. Saute until soft and juices have evaporated, about 15 minutes. Add sauteed vegies to bread cubes. Whisk heavy cream eggs, salt and pepper in large bowl. Mix custard into bread and vegies. Transfer stuffing to prepared dish. Sprinkle cheese over. DO AHEAD: Can be prepared 1 day ahead. Cover and refrigerate. Preheat oven to 350 degrees. Bake stuffing uncovered until set and top is golden, about 1 hour. Let stand 15 minutes.
