1-1/2 cups shredded Parmesan cheese
1/4 cup finely crushed pretzels
1/8 teaspoon crushed red pepper flakes
Optional: Pizza sauce and sliced fresh basil

Steps:

  • Preheat oven to 350°. Toss together cheese, pretzels and red pepper flakes. Place 2 teaspoons mixture in each greased nonstick mini muffin cup., Bake until golden brown, 10-15 minutes. If desired, serve with pizza sauce and basil.

Number Of Ingredients 4

1 cup finely shredded Parmesan cheese, preferably Parmigiano-Reggiano
2 teaspoons all-purpose flour
1 teaspoon finely chopped fresh rosemary or thyme
1/4 teaspoon freshly cracked black pepper

Steps:

  • Preheat oven to 350°F.
  • In a small bowl, mix all the ingredients together. On a baking sheet coated lightly with cooking spray or lined with parchment paper, place tablespoonfuls of the mixture with a couple inches between each, and spread them out into ovals about four inches long and two wide. (You should have about 12 crisps.) Bake in the oven until they turn golden brown, 6 to 8 minutes. If not shaping them around a spoon handle, cool crisps flat on a metal rack.

1 cup finely grated Parmesan
1 teaspoon finely chopped fresh rosemary leaves
1 teaspoon finely chopped fresh sage leaves
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
2 tablespoons toasted walnuts

Steps:

  • Combine Parmesan and herbs in a large mixing bowl. Set a 10-inch skillet over low heat. Add a 1/4 cup of Parmesan mix to the pan and sprinkle it so it is evenly spread and you have a lattice effect i.e. it should be a lacey and thin layer. Cook for 3 to 5 minutes until golden and crispy. Carefully remove from the pan and cool on a tray. Repeat with remaining ingredients until used up. Break disks into large crisps.
  • Break up walnuts into a rough powder using a mortar and pestle. Add salt and pepper and mix well. Season Parmesan crisps with the powdered walnuts.

  • In a small heavy skillet, melt butter. Add walnuts and cayenne. Cook over medium heat until walnuts are toasted, about 4 minutes. Remove from the heat; sprinkle with cheese. Spread on foil to cool.
