LEMON GARLIC PORK CHOPS WITH PARMESAN TATER TOTS



Lemon Garlic Pork Chops with Parmesan Tater Tots image

Number Of Ingredients 10

1 pound frozen Tater Tots
2 tablespoons grated parmesan cheese
Kosher salt and freshly ground pepper
12 ounces green beans, trimmed and halved
4 tablespoons unsalted butter
Finely grated zest and juice of 1 lemon
2 tablespoons extra-virgin olive oil
4 3/4-inch-thick boneless center-cut pork chops (1 1/2 pounds)
3 cloves garlic, finely chopped
1/2 cup low-sodium chicken broth

Steps:

  • Bake the Tater Tots as the label directs. Transfer to a bowl; add the parmesan, season with salt and pepper and toss. Set aside.
  • Meanwhile, bring a medium pot of salted water to a boil. Add the green beans and cook until tender, about 5 minutes. Drain and transfer to a medium bowl; toss with 1 tablespoon butter, the lemon zest, and salt and pepper to taste. Cover to keep warm.
  • Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper; add to the skillet and cook until browned, about 4 minutes per side. Transfer to a plate and let rest.
  • Add the garlic to the skillet and cook until lightly browned, about 30 seconds. Add the lemon juice and chicken broth; cook until reduced by half, about 3 minutes. Swirl in the remaining 3 tablespoons butter. Spoon the pan sauce over the pork chops and serve with the Tater Tots and green beans.

These pork chops come out nice and juicy with excellent flavor. These can stand alone with out the help of any sauce or gravy. Yum! They are a huge hit in our house. I actually got the recipe from a application on my phone and thought "why not". Glad I took a stab at it.

4 pork chops (1/2 inch thick, either bone in or boneless)
3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon dried rubbed sage
1/2 teaspoon dried thyme
3/4 cup parmesan cheese (best if freshly grated)
2 large eggs
1 tablespoon olive oil
1 cup seasoned dry bread crumb (we use italian style)
4 garlic cloves (chopped)
additional oil (for frying)

Steps:

  • Spread parmesan cheese in a shallow dish.
  • Beat eggs with the 1 tbls of olive oil in a separate shallow dish.
  • Spread bread crumbs in third shallow dish, pat pork chops dry with paper towel and set aside.
  • Combine salt, pepper, sage, thyme, and sprinkle generously over both sides of the chops. Press seasoning into meat with your fingers.
  • Dredge seasoned chops in parmesan cheese, coating both sides. Then using tongs dip chops in egg mixture and let excess drip off. Finally dip coated chops in bread crumbs. Press with fingers to ensure even coating.
  • Place breaded chops on wire rack set over a baking sheet to allow coating to dry for about 5 minutes.
  • Heat large skillet over medium-low heat with enough oil to come halfway up sides of chops. Stir in garlic and cook until lightly browned to season oil. Remove garlic and discard.
  • Increase heat to medium. Once oil is hot add chops and fry about 4-6 minutes on each side or until golden brown and crispy.
  • To keep crust in tact, drain any excess oil by placing chops on wire rack again.

A very tasty and easy dinner in less than an hour. I found this in a Southern Living cookbook and thought it was worth passing on. I served this with Uncle Ben's Garlic and Butter rice and a vegetable.

6 boneless pork chops (each 1/2 inch-thick)
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup milk
2 tablespoons Dijon mustard
1 cup Italian seasoned breadcrumbs
1/4 cup butter or 1/4 cup margarine, divided
1 1/2 teaspoons jarred minced garlic
3/4 cup whipping cream
1/3 cup white wine or 1/3 cup chicken broth
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • Season chops with salt and pepper.
  • Mix milk and mustard; dip chops into mixture and coat with breadcrumbs.
  • Place chops on rack in a broiler pan; bake for 30 minutes or until done.
  • FOR THE SAUCE: Melt 1 Tbsp butter in small saucepan over med-high heat; add garlic and saute for 2-3 minutes.
  • Stir in cream, wine/broth and cheese; reduce heat and simmer (no boil) for 3-4 minutes.
  • Whisk in 3 Tbsp of butter until melted.
  • Pour over chops and serve.

This is my own variation of Mr. Food's recipe. I've always liked my pork chops cooked a bit longer than most chefs do, and I've always had excellent results doing it my way. So here is my version with a few tweaks!

4 - 1/2-inch thick boneless pork chops
1/2 teaspoon(s) salt
1/4 teaspoon(s) black pepper
1 1/2 cup(s) all purpose flour
1 tablespoon(s) italian seasoning
2 - eggs
1 cup(s) grated parmesan cheese, divided
1 cup(s) panko bread crumbs
1/4 cup(s) butter, divided
1 clove(s) garlic, minced
3/4 cup(s) heavy cream
1/3 cup(s) pine nuts (pignolias)

Steps:

  • Sprinkle the pork chops evenly with salt and pepper.
  • Place flour in a small shallow bowl with Italian seasoning; mix together.
  • Break eggs into a second small shallow bowl and beat lightly.
  • In another bowl, mix together the panko bread crumbs and half the Parmesan cheese.
  • Dip both sides of each pork chop in first the flour, then the egg, and then the bread crumbs. Place chops on a sprayed, rimmed baking sheet.
  • Bake pork chops in a preheated 375-degree oven for 40-50 minutes, turning once halfway through baking time.
  • Melt 1 Tbsp. butter in a saucepan over medium-high heat; add garlic and saute for 2 to 3 minutes. Stir in cream and remaining Parmesan; reduce heat to low and simmer 3 to 4 minutes (DO NOT BOIL). Whisk in the remaining butter until melted.
  • Serve the sauce over hot pork chops. May garnish with parsley.

1 lb boneless pork chop
1/4 cup shredded parmesan cheese (I just use the wal-mart bagged kind)
1/4 cup olive oil
1 garlic clove
pepper, to taste
italian seasoning, to taste

Steps:

  • Place garlic, parmasan cheese, pepper, and italian seasoning in food processor and pulse 2-4 times until well blended.
  • In a large bowl, mix olive oil, cheese mixture, and pork chops well. Cover with foil and put in fridge to marinade for at least 30 minutes.
  • Take pork chops out and put on george foreman grill (skillet or outdoor grill could work as well). Grill each side for 4-5 minutes until done.
