Steps:
- Mix all ingredients together, EXCEPT fish and melted butter.
- Rinse fish fillets and pat dry; Rub with butter and dip each side into bread crumb mixture.
- Bake in 325 degree oven for 15 to 20 minutes (uncovered) until fish flakes when pressed with a fork.

- Preheat oven to 500 degrees F.
- Set oven rack to lowest position.
- Coat/spray a baking sheet with cooking spray.
- In a shallow bowl whisk egg whites with water.
- In a bowl combine the breadcrumbs with Parmesan cheese and next 7 dry spices (you may omit the cayenne).
- Dip the fish firstly into the egg whites allowing any excess to drip off.
- Place a small amount of the crumb mixture onto a plate then coat in the breadcrumb mixture pressing down with hands to firmly pack the coating onto the fish adding more crumbs onto the plate as needed to coat each fillet (do not use the whole amount of crumbs on the plate at one time or they may get soggy).
- Place the breaded fish onto baking sheet.
- Bake in preheated 500 degree F oven for about 10 minutes or until the fish flakes with a fork (baking time will vary depending on the thickness of the fillets do not over cook the fillets).

- Get a frying pan really hot. Season the flour with salt and pepper. Dust the fish fillets with the seasoned flour, then dip into the egg and press into the grated Parmesan, making sure the fish is nicely covered. Add a little olive oil to the hot pan, and fry the fish fillets for a couple of minutes on each side until golden brown. Throw in the chilli. Mix together the avocado and cress with the extra virgin olive oil and lemon juice, and put on your plate with your fish fillets.

- Using a food processor, grind the oyster crackers, Ritz crackers, parmigiano-reggiano, parsley, chives, thyme, Old Bay seasoning and garlic powder, if using. Transfer to a shallow bowl. Place the flour in another shallow bowl. In a third shallow bowl, beat the eggs and cream.

- In another shallow bowl (or zip-lock bag) combine the crackers, cheese, garlic salt and pepper.
- Dip fillets in the flour, egg, then cracker mixture.
