12 oz salmon
1 egg
2 tablespoons olive oil
⅓ cup almond, crushed
⅓ cup grated parmesan cheese
1 tablespoon dried basil
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper

Steps:

  • Mix breading ingredients together in large bowl. Set aside.
  • *NOTE: You can crush almonds by pulsing them in a food processor or high-speed blender, or by carefully cutting almonds with a sharp knife.
  • Whisk egg in a separate bowl.
  • Dredge the salmon in the egg, then the breading mixture.
  • Heat olive oil in a skillet on medium heat.
  • Once the pan is ready, add the salmon and let cook on one side for 3-4 minutes until golden brown. Flip and cook for an additional 2-3 minutes on the other side.
  • Serve salmon with a side of your favorite veggies. We used asparagus.
  • Enjoy!

1 salmon fillet, 1 1/4 pounds
2 tablespoons butter or margarine, melted
1/4 teaspoon salt
3/4 cup fresh white bread crumbs, 1 slice
1/4 cup grated Parmesan cheese
2 tablespoons thinly sliced green onions
2 teaspoons grated lemon peel
1/4 teaspoon dried thyme leaves

Steps:

  • Heat oven to 375°F. Spray shallow baking pan with cooking spray. Pat salmon dry with paper towel. Place salmon, skin side down, in pan; brush with 1 tablespoon of the butter. Sprinkle with salt.
  • Mix bread crumbs, cheese, onions, lemon peel and thyme in small bowl. Stir in remaining 1 tablespoon butter. Press bread crumb mixture evenly on salmon.

olive oil, to taste

1 egg
¼ cup panko breadcrumbs

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a medium bowl, mix the parmesan crust ingredients.
  • In a separate bowl, whisk egg. Dredge the salmon in the egg, then parmesan.

½ cup Parmesan cheese
1 cup Italian seasoned bread crumbs
1 teaspoon dried tarragon
1 teaspoon dill weed
1 cup white wine
¼ cup teriyaki sauce
1 tablespoon melted butter
¼ cup chopped red onion
1 tablespoon minced garlic
2 pounds salmon steaks

Steps:

  • In a shallow, medium bowl mix Parmesan cheese, Italian seasoned bread crumbs, tarragon and dill.
  • In a medium saucepan over medium heat, blend white wine, teriyaki sauce, butter, red onion and garlic. Cook and stir until onions are tender.
  • Press one side of each salmon steak into the Parmesan cheese mixture. Place steaks crust side up in saucepan with white wine mixture. Cook over medium high heat until most of the liquid is reduced, 10 to 15 minutes, then flip with a spatula. Continue cooking until crust is golden brown and fish is easily flaked with a fork.

6 wild salmon fillets
Salt
Freshly ground black pepper
2 tablespoons lemon and herb seasoning
4 cups cauliflower florets
3 tablespoons grated parmesan cheese
1 cup chopped Roma (plum) tomatoes
1/4 cup slivered basil leaves
2 tablespoons drained capers
4 cups instant brown rice, cooked according to package directions

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
  • Season salmon with salt and pepper. Brush lemon and herb seasoning all over both sides of salmon.
  • Place salmon on prepared baking sheet. Arrange cauliflower on another baking sheet, spray with cooking spray and sprinkle with Parmesan. Roast 15 minutes, until fish is fork tender and cauliflower is golden brown and tender.
  • In a medium bowl, combine tomatoes, basil and capers. Season, to taste, with salt and pepper.
  • Serve 4 of the salmon fillets with tomato mixture spooned over top. Serve half of the rice and all of the cauliflower with this meal. Reserve extra salmon fillets and extra rice for other meals.

10 crushed butter flavored crackers (I use Ritz)

Steps:

  • Preheat oven to 400 degrees.
  • Combine mayo, cheese, and red pepper; set aside. note: I often add a bit more red pepper after a small taste test.
  • Lay salmon fillets on a foil-lined baking pan. Squeeze fresh lemon juice over each fillet.
  • Spread each fillet evenly with mayo mixture. Cover mayo with cracker crumbs.
  • Bake 12 to 15 minutes or until salmon flakes easily with a fork.

I was inspired by a Salmon dish that I got at The Keg Steakhouse. It was so tasty!! I love to eat there, but we moved away and no longer have access. :( This is by no means a copycat, but it is very tasty and easy too!!!

1 lb fresh salmon (fillet is best)
1/4 cup mayonnaise
1/3 cup parmesan cheese
1/2 teaspoon garlic powder (or to taste)
1/2 teaspoon dried chives (or to taste)
1/2 teaspoon dried parsley (or to taste)
fresh ground black pepper

Steps:

  • Preheat oven to 375*.
  • Cut fillet into 4 pieces.
  • Rinse and pat dry.
  • Grease baking sheet. (I cover with foil and use a little olive oil. It makes clean up a breeze!).
  • Lay fillet pieces on prepared sheet, skin down.
  • Combine all remaining ingredients and mix well.
  • Slather entire mixture on top of fillet pieces.
  • Bake in preheated 375* oven for 15 minutes or until done. This depends on thickness.
  • Serve with your favorite sides!
  • Note: Since there are only 2 of us, I prepare this in my toaster oven. It works great!

This is a great recipe that I use from Mennonite Girls Can Cook! And its a great way to serve Salmon when you are looking for something different.

1 lb salmon (**see note below)
1/3 c mayonnaise
1 tsp dill, dried
1/2 tsp lemon pepper or more to your personal taste
1 Tbsp fresh lemon juice
1/2 c or more grated parmesan cheese

Steps:

  • 1. Place fish skin side down on lightly sprayed pan. Combine mayo, dill, lemon pepper, lemon juice. Spread onto fish. Top with the Parmesan Cheese.
  • 2. Bake at 450 for 15-20 minutes until the fish flakes easily and top gets a nice brown crust. You can put it under the broiler for a minute or two to brown more if the fish is already done, watch carefully. You don't want to over cook the salmon it just dries it out. Can be served with rice, french fries, baked potato or mashed potatoes with vegetable.
  • 3. NOTE: *Tip, truth be told, this wasnt planned very well, and had not taken the Salmon out of the freezer to thaw. The Salmon was cooked from a frozen state and baked for 25 minutes and it was done perfectly. In half an hour from the time I realized that I had nothing planned for dinner til it was on the table...voila, dinner is served.

Mashed Potatoes, recipe follows
1/4 cup Parmesan, coarsely grated
4 green asparagus
1/2 tablespoon butter
Salt and white pepper

2 large russet potatoes, peeled and cut into 1/8ths
1/2 cup cream
2 tablespoons butter
Salt and freshly ground white pepper
Salt and freshly ground white pepper

Steps:

  • Lightly season the salmon with salt and pepper. Generously coat 1side of the salmon with the finely grated Parmesan. In a non-stick saute pan, add approximately 3 tablespoons vegetable oil and place over high heat. When the oil is hot, carefully place the salmon in the pan cheese side down. Turn temperature down to medium heat and allow the salmon to cook about 4 minutes before flipping over. The idea is to form a nice crispy, lightly brown crust. Turn salmon and allow to cook another 3 or 4 minutes. Remove from pan and set aside in a warm place until plating.
  • Sun-Dried Tomato Pesto Paste:
  • In a blender or food processor, add the sun-dried tomatoes along with their oil, the garlic cloves, and 1/4 cup of extra-virgin olive oil. Process the mixture on high speed approximately 1 minute until almost smooth. The mixture should be slightly chunky. Season with salt and pepper, to taste.
  • Basil Pesto
  • In a blender or food processor, place the extra-virgin olive oil and garlic clove. Process until smooth. Add the basil leaves, and process for about 1 minute until mixture is relatively smooth. Add the Parmesan and process again until fully incorporated. Season the pesto with salt and pepper, to taste.
  • To plate:
  • Place a small mound of mash potatoes in the center of the plate. Place the asparagus on top of the mashed potatoes at an angle. Then put the salmon nicely on the plate, overlapping the asparagus. Drizzle the plate with both pestos and garnish the plate with the Parmesan crisp by securing it in the bed of mashed potatoes.
  • Preheat the oven to 350 degrees F.
  • Heavily grease a cookie sheet (parchment paper is optional, but if using parchment, make sure it is heavily greased). In a 5-inch diameter circle, sprinkle the coarsely grated Parmesan. Make sure there is just enough to fill the circle, don't over do it! Place in oven and bake for approximately 8 minutes, or until golden brown. Remove from oven and allow to cool before lifting from cookie sheet. Be extremely gentle with them they are very brittle when cool.
  • Cut off about 2 inches of the ends of the asparagus, as they tend to be very coarse and tough. Blanch asparagus in boiling, well-salted water until tender. Shock them in ice water to keep them from cooking any further and hold them until you are ready to plate. Right before plating, in a saute pan over a low flame, melt the butter with the asparagus. Once the asparagus are hot, season with salt and white pepper.
  • Place the potatoes in cold, salted water over high heat. Cook thoroughly and strain. In a separate pot, heat heavy cream and butter. Using a potato masher, mash potatoes. Slowly incorporate the cream and butter mixture. Season with salt and white pepper, to taste.

We worked out the kinks in my test kitchen, and now it is one of the dishes that she makes for her clients. So, you ready... Let's get...

THE BROCCOLI
6 oz broccoli, just the crowns
2 Tbsp olive oil, extra virgin
1 clove garlic, minced
salt, kosher variety, to taste
black pepper, freshly ground, to taste
THE SALMON
1 medium salmon filet, skin on
1 tsp greek yogurt, plain variety
1 tsp lemon juice
1 clove garlic , minced
salt, kosher variety, to taste
white pepper, freshly ground, to taste
2 Tbsp parmesan romano, finely grated
1 tsp lemon zest
1 Tbsp olive oil, extra virgin
OPTIONAL ITEMS
freshly chopped parsley, for garnish

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your Ingredients (mise en place).
  • 3. THE BROCCOLI
  • 4. Toss the broccoli crowns with the olive oil, and garlic, and then salt and pepper, to taste.
  • 5. THE SALMON
  • 6. Place a rack in the middle position, and preheat the oven to 400f (205c).
  • 7. Lay the salmon, skin-side down, on a parchment-lined baking sheet, and surround it with the broccoli.
  • 8. Combine the yogurt, lemon juice, salt, pepper, and garlic together in a small bowl, and then brush onto the salmon.
  • 9. Combine the parmesan, lemon zest, and olive oil together, and spread evenly over the top of the salmon.
  • 10. Place into the preheated oven, and cook until the salmon is flaky, and the cheese begins to brown, about 14 - 16 minutes.
  • 11. PLACE/PRESENT
  • 12. Serve the salmon with the broccoli, and sprinkle on a bit of parsley for garnish. Enjoy.
  • 13. Keep the faith, and keep cooking.

1 salmon filet (wild-caught alaska salmon); may use frozen, thawed
4-5 Tbsp mayonnaise
2/3 c seasoned bread crumbs
4-5 Tbsp parmesan cheese, grated
4 Tbsp melted butter

  • 1. Place whole salmon filet skin side down in baking dish. Spread mayonnaise over entire filet.

Cut salmon into portions; place in bag and shake to coat. 2. spread 1 T mayo on salmon. sprinkle with 1/4 c parmesan and press down. 3. preaheat large fry pan on medium. place salmon, cheese side down in pan. 4. coat other side of salmon w. remaining salmon and cheese. cover and cook 5-6 minutes on each side.
