PEPPERONI CHICKEN ITALIANO WITH PARMESAN NOODLES
Looking for an Italian type dish that's easy on the pocket and still is quick, tasty and filling? Well, look no further this is it. And I bet that you already have most of the ingredients you need for this recipe. To make this a complete meal, serve with your favorite garlic bread and a salad.

- In a small shallow dish beat together milk and egg, set aside.
- In a medium sized shallow dish, combine 1/2 cup flour, 2 1/2 Tablespoons parmesan cheese, 1 1/2 teaspoons powdered mustard, and garlic powder, set aside.
- Pound chicken breasts until 1/4 inch thickness is reached.
- Dip chicken into egg/milk wash coating both sides.Then dredge chicken into flour mixture, making sure both sides of chicken are completely covered.
- In skillet large enough to hold both pieces, heat oil over medium heat, until hot but not smoking.
- Add chicken and cook on both sides until golden brown.
- Remove chicken from pan and keep warm.
- In same skillet, mix together soup, milk, 2 Tablespoons parmesan cheese, and 1/2 teaspoon powdered mustard.
- Return chicken to pan, making sure both sides of chicken are coated with soup mixture.
- Top each piece of chicken with equal amounts sliced pepperoni.
- Cover and simmer for 20 minutes or until heated through.
- While chicken is simmering, cook noodles.
- After noodles are cooked, drain and divide equally among two plates.
- Top each plate of noodles with a pepperoni topped chicken breast.
- Enjoy :).

GARLIC PARMESAN CHICKEN AND NOODLES
This is a super-easy recipe which I have tweaked to be even easier. Rather than buying a whole roasted chicken, I am using chicken breasts, cooked and cubed, and using prepared bread crumbs. Recipe & photo: Midwestliving.com

- 1. In a Dutch oven, bring 6 cups salted water to boiling; add noodles. Cook 10 minutes or until tender; drain.
- 2. In a saucepan combine chicken, peas, garlic, and whole milk; heat through. Cover and keep warm.
- 3. In a small bowl, combine bread crumbs and 1/4 cup of the Parmesan with the melted butter.
- 4. Stir noodles and remaining Parmesan into hot chicken mixture. Heat and stir until bubbly. Divide among four 16-oz. individual casserole dishes. Top each with bread crumb mixture.
- 5. Bake in a preheated 450-degree oven for 5 minutes or until top begins to brown. If desired, top with fresh thyme.
- 6. NOTE: may use panko bread crumbs. Combined with Parmesan, they give a unique texture to the topping.
PARMESAN CHICKEN & NOODLES
I found this recipe online and changed it to make it my own. You can use more or less parm to suit your taste. You can use less or more spinach. You can serve over noodles, rice or pasta. I use more butter than called for because I add the noodles to the frying pan so the noodles can be coated as well. When I made this dish my husband ate a lot and I got compliments.

Steps:
- Saute garlic in butter. The garlic can be chopped, sliced or minced. Your choice.
- Cut the chicken in bite size peices. Add chicken and cook until done and no pink is visible and the chicken is well coated with the butter and garlic.
- Add the parmesan cheese and stir well to coat the chicken.
- Add the spinach and cook until it starts to wilt.
- Add the cooked egg noodles and mix well.
