Buttered Noodles With Eggs and Parmesan Cheese image

A very quick and easy recipe to use as a side or main dish. On the table in no time and so delicious!

1 lb thin noodles
4 eggs
1/3 cup freshly grated parmesan cheese
2 tablespoons parsley, chopped
salt (to taste)
1/4 teaspoon black pepper
4 tablespoons butter

Steps:

  • Cook noodles in a large pot of lightly salted water until al dente.
  • While the pasta is cooking, place the eggs, grated cheese, parsley, salt and pepper into a mixing bowl and beat with a whisk until well combined.
  • When the noodles are almost cooked, melt the butter in a large nonstick skillet over medium heat.
  • Quickly drain the pasta and add it to the skillet.
  • Toss briefly to coat it with the butter.
  • Add the egg mixture to the skillet and using a flat wooden spoon, mix quickly together for less than a minute until the eggs and noodles become creamy and thick.
  • Do not cook the eggs too long or they will scramble and ruin the dish.
  • Serve immediately.

Number Of Ingredients 10

1/2 pound thin noodles
Salt to taste
4 ripe plum tomatoes, about 3/4 pound
1 tablespoon butter
Freshly ground pepper to taste
1 tablespoon olive oil
Pinch of freshly grated nutmeg
1/4 teaspoon red-pepper flakes
2 tablespoons coarsely chopped basil or parsley
3 tablespoons grated Parmesan cheese

Steps:

  • Bring enough water to a boil to cover the noodles. Add salt. Cook until done, then drain. Reserve 1/4 cup cooking liquid.
  • Core and peel the tomatoes, and cut them into 1/4-inch cubes.
  • Heat the butter in a saucepan, and add the tomatoes. Add salt and pepper. Cook over high heat for 1 minute, stirring occasionally.
  • Add the olive oil, noodles and the drained liquid to the saucepan in which the noodles were cooked. Add the tomatoes, nutmeg, red pepper flakes and basil. Blend well over low heat, and add the cheese. Mix well and serve.

This is the other recipe that I made with the grilled chicken and was yummy too. I love the combo of crushed crackers and parmesan added to the noodles to give a different texture and taste. A great side dish to almost any meal. It is super easy to make and still has lots of flavor. I have added a couple of spices to this recipe...

Number Of Ingredients 10

4 Tbsp butter
1 tsp beau monde seasoning
1/4 tsp onion salt
1 tsp black pepper
8 oz noodles, cooked
1/4 c vegetable oil
2 clove garlic, (use garlic press)
2 Tbsp chopped parsley or basil
1/3 c ritz crackers, crushed
1/3 c parmesan cheese, shredded

Steps:

  • 1. Cook noodles as directed. Add butter to a large frying pan on medium heat till melted and add oil. Stir in your garlic, beau monde, onion salt, parsley or basil, & pepper. Saute for a couple of minutes and set aside.
  • 2. Add crackers and parmesan cheese; mix well.
  • 3. Then add to your drained noodles and stir till noodles are covered well.
