PARMESAN LEMON HERB BROWN RICE
This is adapted from a photo copy from a book or magazine. It says "The Best Light Recipe" at the top. My notes were to increase the lemon and decrease the basil. So I offered that below. Please use fresh lemon and herbs. Using the oven method gives you a fluffy and chewy brown rice instead of wet and soupy or burnt and crunchy.

Steps:
- Adjust an oven rack to the middle position.
- Preheat oven to 375°F.
- Spread rice in a 8x8 glass baking dish.
- Combine the onion, oil, and salt in a medium saucepan. Cover and cook over medium-low heat, stirring occasionally, until the onion is softened, 8-10 minutes.
- Stir in the broth and bring to a boil.
- Once broth is boiling immediately pour it over the rice.
- Cover the baking dish tightly with a double layer of foil.
- Bake until rice is tender, about 1 hour 10 minutes.
- Remove baking dish from oven, uncover, and fluff the rice with a fork.
- Stir in the parmesan, parsley, basil, lemon juice, lemon zest and pepper.
- Cover the dish with a clean kitchen towel and let stand for 5 minutes.
- Uncover and let the rice stand for 5 minutes longer before serving.

GARLIC PARMESAN BROWN RICE NOODLES
Steps:
- Cook the noodles according to package instructions. Drain well, drizzle with a small amount of olive oil and set aside. Heat a large skillet over medium-high heat and add 1 tablespoon of oil. Add the tofu strips and stir fry until they brown up slightly, sprinkling 1/2 teaspoon of granulated garlic and a generous pinch of parmesan about midway through the cooking process. Remove from heat & set aside (blot with paper towel if needed) In the same skillet add the remaining olive oil and half of the chopped fresh garlic. Cook until garlic just begins to brown and turn fragrant. Add the mushrooms to the pan, cook them up, and place them with the tofu. Add the other half of the garlic. When it becomes fragrant, add the spinach and cook for 30 seconds to a minute, until it just begins to wilt. Add the noodles, granulated garlic, parmesan, tofu and other veggies and toss together until combined. Remove from heat.
PARMESAN BROWN RICE
Nice to serve with lemon roast chicken and maybe a mixed-vegetable medley. Perfect meal for the diabetic!

Steps:
- Melt butter or margarine in heavy non-stick saucepan over medium heat.
- Saute shallots, mushrooms and garlic, about 3-4 minutes, until tender.
- Stir in scallions and dill.
- Saute another 1-2 minutes.
- Add rice and saute stirring frquently, until rice begins to crackle.
- Add seasoning, if using.
- Stir in liquids, increase heat to high and bring to a boil.
- Reduce heat to low and cover tightly.
- Simmer for 45 minutes.(DON'T REMOVE COVER).
- Remove from heat and stir in Parmesan until melted.
- Sprinkle with chopped parsley before serving.

- Cut the ends off zucchini and squash, cut in half length wise, then in half....end up with 4 pieces of each.
- carve out the insides to make little boats.
- on a cookie sheet, bake for about 5 mins, meanwhile make the instant brown rice and stir in the parmesan cheese.
- fill the "mini" boats with mixture and sprinkle with the Panko, drizzle w/olive oil and bake at 350 degrees for 5-7 mins...then broil for 5 mins..or until golden brown crust....excellent side dish....
