4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
2 (28-ounce) cans crushed tomatoes
1 onion, diced
1 tablespoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
1/2 teaspoon crushed red pepper flakes, optional
1 pound penne
1 1/2 cups shredded mozzarella cheese
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley leaves

Steps:

  • Season chicken with salt and pepper, to taste. Place chicken into a 6-qt slow cooker. In a large bowl, combine crushed tomatoes, onion, basil, oregano, parsley and red pepper flakes, if using. Stir into the slow cooker and gently toss to combine. Cover and cook on low heat for 4 hours. Remove chicken from the slow cooker and shred, using two forks. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Stir pasta and chicken into the slow cooker; top with cheeses. Cover and cook on low heat for an additional 10-20 minutes, or until the cheeses have melted. Serve immediately, garnished with parsley, if desired.

1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
1/4 teaspoon salt
1 large egg, lightly beaten
1 tablespoon water
4 (6 ounces each ) boneless skinless chicken breast halves
1 jar (24 ounces) marinara sauce
4 slices part-skim mozzarella cheese
Hot cooked pasta, optional

Steps:

  • In a shallow bowl, combine bread crumbs, Parmesan cheese, Italian seasoning, pepper and salt. In another bowl, combine egg and water. Dip chicken in egg mixture, then in crumb mixture to coat both sides, patting to help coating adhere., Transfer chicken to a 4- or 5-qt. slow cooker. Pour sauce over chicken. Cook, covered, on low for 4-6 hours or until a thermometer inserted in chicken reads 165°. Top with cheese, recover, and cook for 10-15 minutes, until cheese is melted. If desired, serve with hot cooked pasta.

1 (10 ounce) can cream of chicken soup
1 (1 ounce) package parma rosa creamy tomato sauce mix (Knorr)

Steps:

  • Put all ingredients in the crock pot.
  • Cook for 7 hours on low, or 4-5 hours on high.
  • The chicken will fall apart.
  • I cooked some penne pasta and used the sauce over the noodles.
  • It is delicious!

1 can crushed tomatoes (15 oz.)
1 tablespoon Italian Seasoning
1 teaspoon garlic salt
1 cup Mozzarella Cheese
1/2 cup bread crumbs
tablespoon butter
1/2 teaspoon garlic salt

Steps:

  • Place chicken in the crock pot (chicken can be frozen).
  • In a bowl combine the crushed tomatoes italian seasoning and the 1 teaspoon of garlic salt.
  • Pour the sauce on top and cook on low for 6-8 hours or high 3-4 hours.
  • Once cooked through. Stir the sauce and top the chicken with the cheese.
  • Meanwhile in a skillet melt butter and add in the garlic salt and the breadcrumbs.
  • Cook until the breadcrumbs brown and become crisp.
  • Serve chicken and sauce on your favorite pasta and top with the breadcrumbs. ENJOY!

1/4 cup olive oil
2 large garlic cloves
1 1/2-2 lbs plum tomatoes
salt & freshly ground black pepper
1/4 cup heavy cream
1/2 cup freshly grated parmesan cheese
2 tablespoons parsley
1 pinch sugar (or a peeled carrot)
water, as needed

Steps:

  • In a large heavy saucepan, heat olive oil, then add the garlic cloves (whole so they add a "gentle" garlic flavor).
  • Add the tomatoes, salt and pepper. Cover and cook tomatoes until they're soft and collapsed (about 10 min.). If the skins bother you, then fish them out.
  • Uncover and cook, stirring often, until the mix is very smooth. Add water, if needed, to keep sauce from sticking to the pot. Stir in cream slowly, then add sugar (or carrot), if needed. (Taste it. The sweet carrot/sugar tempers the acidic tomatoes. You'll know if you need to add sugar if the sauce is really tart.).
  • Simmer the sauce a bit for the cream to become incorporated. Add water, if needed, to bring the sauce to desired consistency.

1 (1 1/3 ounce) envelope Knorr parma rosa sauce mix
1 cup milk
1/4 cup grated parmesan cheese
1 ounce grated parmesan cheese
1/4 cup shredded mozzarella cheese
1 tablespoon butter
1 dash white wine
1 lb chicken breast
1/2 bell pepper, sliced thin (yellow or red)
2 cups cooked egg noodles

Steps:

  • Pre-heat oven to 345 degrees.
  • Spray baking dish with butter flavored cooking spray.
  • In sauce pan, mix sauce mix, milk, 1/4 c parmesan cheese, mozzarella cheese, and butter. Cook on medium heat until cheese and butter are melted, stirring often.
  • When everything is melted, add wine and stir over heat until mixed.
  • Reduce heat to low.
  • Arrange chicken in baking dish, and spoon sauce over chicken, using just enough to cover the chicken breasts. (Leave the rest of the sauce in the pan on low heat, covered, and stir ocassionally while chicken bakes).
  • Arrange bell peppers on top of chicken.
  • Cover baking dish with aluminum foil and bake at 375 degrees for 30 minutes.
  • After 30 minutes, add cooked noodles to remaining sauce and stir to coat noodles. Spoon noodles around and over chicken and top with 1 oz grated cheese.
  • Return to oven for 5 minutes or until chicken is completely cooked.
  • After taking out of oven, leave dish to sit for a couple minutes for sauce to thicken.
