Caribbean Coconut Rice
3 cups minute rice
2.5 cups coconut milk (whatever equals 1 can)
1/2 cup water
1 bunch fresh cilantro (~ 2 cups chopped)
2/3 can drained & chopped pineapple chunks in its own juice (no syrup)
3 limes
Fresh-cracked sea salt to taste
Hot pepper spice to taste - I use Out of Our Gourd hot pepper spice blend from the Dane County Farmer's Market:

Island Paradise Shrimp
1 bag frozen, peeled, deveined, fully-cooked shrimp
3 tablespoons butter
1 lime
1/2 cup chopped cilantro
1/3 can drained & chopped pineapple (whatever is left over from rice)
Fresh-cracked garlic sea salt to taste. I use this one:

Steps:

  • Rice preparation: Prepare rice according to package, but use mixture of coconut milk & water for the liquid. Let stand for an additional 5 minutes so that when you fold in the remaining ingredients, the cilantro doesn't completely melt from the heat. Or, you could fold the cilantro into the rice right before serving. Shrimp preparation: prepare frying pan with butter on medium heat. Add shrimp, lime juice, pineapple and garlic sea salt. Sauté for around 7 minutes or until shrimp is heated throughout. Fold in chopped cilantro and sauté for an additional 1 or 2 minutes before serving. Makes 6 small servings.

½ cup orange juice
½ cup grapefruit juice
2 tablespoons frozen strawberries

Steps:

  • In a blender, combine coconut rum, orange juice, grapefruit juice and frozen strawberries. Blend until smooth. Pour into glass and serve.
  • In a cocktail mixer, combine coconut rum, orange juice and grapefruit juice. Mix well and pour into glasses. Garnish with frozen strawberries.

1/2 pt goya or any good olive oil
12 mussels
12 clams
2 diced up pork chops
2 cloves of garlic minced
3 small onions chopped up
1 medium tomato, skin off, seeded and chopped
1 green pepper seeded and cut into slices
1 yellow pepper seeded and cut into slices
1 red or orange pepper seeded and cut into slices
1 whole chicken cut into parts
a pinch of salt & pepper for taste
1 tsp paprika
1/2 tsp dried oregano, and dried thyme
6 lobster claws
24 oz white rice
3 c chicken brooth
1/4 tsp saffron
4 charizos chopped up into little pieces (i like goya)
12 uncooked shrimps, peeled and veined
1 small cans of beans or 6 oz of fresh beans
4 tsp capers
2 lemon cut into wedges

Steps:

  • 1. Scrub and debeard the mussels and clams, discarding any that don't close when tapped sharply. Set aside.
  • 2. Heat 1/4 cup (2fl. oz) of the olive oil in a skillet. Add the pork, and brown all sides. Make sure that the juices from the pork chops are clear.
  • 3. Mix in the garlic, onions, tomato, and the bell peppers, Stir constantly until cooked. Then set aside.
  • 4. In another skillet, heat a further 1/4 cup (2 fl. oz) olive oil and cook the chicken until browned on all sides. Season with salt, pepper, paprika, rosemary, thyme, and cumin. Transfer the chicken to a plate and set aside.
  • 5. In the same skillet, cook the lobster claws overt high heat for several minutes until its shell turns pink. Set the skillet aside.
  • 6. Preheat the oven to 200 ºF. Heat 4 tablespoons olive oil in a skillet, and sauté the rice until it's translucent. Pour in the chicken broth, and combine well. Add the pork mixture, stirring constantly. Sprinkle in the saffron and continue to stir until well mixed.
  • 7. Transfer the rice into a paella pan. Mix in the lobster claws, chicken, chorizo sausages, mussels, clams, shrimp, peas, and capers, combining well. Bake the paella, uncovered, and on the lowest oven shelf, for around 25 minutes, or until all the liquid has been absorbed.
  • 8. Discard any mussels and clams that have failed to open. Serve the paella straight from the pan, garnished with lemon wedges

1 cup black beans, rinsed drained and mashed
1 cup cooked brown rice
1 garlic clove, pressed
2 tablespoons leeks, whites only, finely chopped
2 tablespoons sweet potatoes, cooked and mashed
1 teaspoon chili powder
1/2 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon cumin
1 teaspoon salt
1 tablespoon olive oil
4 hamburger buns, toasted

Steps:

  • Mix all ingredients except oil and buns in a large bowl. Coat clean hands with olive oil to mix. Divide mixture into fourths and shape into patties.
  • Heat grill pan over medium flame and coat lightly with oil. Add patties and cook 5 minutes per side or until golden and crispy. Serve on buns and dress with your favorite condiments.

- 1 - 12 can ounce frozen orange juice "unsweetened"
- 3 - 20 ounce cans crushed pineapple in syrup " undrained"
- 6 habanero chilies, chopped fine
- 4 serrano chilies, chopped fine
- 2 - 3 tablespoons honey
- 1 small onion finely chopped
- 4 cloves roasted garlic smashed
- 1 cup yellow mustard
- 1/3 cup apple cider vinegar
- 1 teaspoon fresh grated ginger "if you use powdered use about 2/3 of a teaspoon
- 1 tablespoon sea salt or kosher salt
- 1 teaspoon fresh ground pepper
- 1 -2 tablespoons white sugar or to taste

Steps:

  • Simmer the onions, garlic, chilies in the orange juice, till the onions are translucent and the peppers are soft.
  • In a large soup pot, add the onion mixture with the orange juice and the rest of the ingredients and simmer till it is reduced by half. Checking for salt, pepper and sugar to taste as you go. Stir this about every 15 minutes, cool for about 45 minutes.
  • At this point you'll want to put this into a food processor or blender and whiz till it is smooth.
  • Put into clean jars and refrigerate this will last for a month or longer.
