PINEAPPLE PARADISE CAKE WITH COCONUT CREAM FROSTING
This is another wonderful cake that I found along time ago in our local paper. It is great for large gatherings, pot lucks or picnics.

Steps:
- For cake: Preheat oven to 350°F.
- Using a slotted spoon, set aside 1/4 cup pineapple for frosting.
- In mixing bowl, combine remaining pineapple and juice with flour, sugar, eggs, baking soda, vegetable oil and coconut flavoring.
- Beat at medium speed 2 minutes.
- Pour into greased and floured 10-1/2 x 15-1/2 x 1 inch baking pan.
- Bake 20 to 25 minutes or until toothpick inserted into center comes out clean.
- Let cool completely.
- To make frosting: Beat cream cheese, butter, sour cream, vanilla and coconut flavoring until smooth and creamy.
- Add powdered sugar; beat until frosting is a spreadable consistency.
- Stir in coconut and reserved 1/4 cup pineapple.
- Use to frost cake.
ALOHA PARADISE CAKE
Steps:
- Mix cake mix according to directions on the box, replacing the liquid with reserved pineapple juice and water. Bake at 350F for 35 minutes in 9x13 pan. Set aside to cool when done. In large bowl mix vanilla pudding, milk, and cream cheese. Beat until smooth. Add in crushed pineapple, Pour mixture over cooled cake. Top with thawed Cool Whip. Sprinkle coconut and pecans on top, and allow to chill further until ready to serve

This is truly an amazingly delicious dessert. As my husband has been known to say, "One piece and you're in paradise, two pieces you think you've died and gone to heaven, three pieces and you throw up!"

Steps:
- Cookie Layer: Pour the two cups of whipping cream into a bowl.
- Dip the cookies into the cream and place in one layer in a 9 X 13 inch pan.
- Set aside.
- Chocolate Layer: Melt the butter, chocolate, sugar, cocoa and instant coffee all together in the microwave, or over a small flame in a saucepan.
- Mix well.
- Remove from heat.
- Add the egg yolks one at a time to the chocolate mixture, mixing well after each yolk.
- Add the liqueur.
- Whip the egg whites until stiff and gently fold into the chocolate mixture.
- Pour over the cookie layer and refrigerate for 1 hour.
- Vanilla Layer: Whip the package of instant vanilla pudding with the cream.
- Refrigerate in a small bowl until serving time.
- Serving time-- spread the vanilla mixture over the chocolate.
- Drizzle with chocolate syrup if desired.
- Prepare yourself for compliments galore.
NEW YORK TIMES INSPIRED GRAINS OF PARADISE LEMON PUDDING CAKE

- Place a large pan on a rack in the center of the oven. Fill the pan halfway with water. With the pan inside, heat the oven to 350 degrees. Butter an 8-inch square or round baking dish.
- In a large bowl, whisk together egg yolks, lemon zest, lemon juice and butter. In another bowl, stir together the sugar, flour, RawSpiceBar's Grains of Paradise and salt. Whisk half the flour mixture into the egg yolks, then half the milk. Whisk in remaining flour mixture, then remaining milk. Whip the egg whites until soft peaks form, then gently fold them into the batter.
- Pour batter into the buttered dish. Place the dish in the pan of water in the oven. Bake until the cake is set, about 45 minutes.
PARADISE CAKE (HIMMEL'S FUTTER)

- Beat egg whites. Fold in sugar, cornstarch, baking powder and slightly beaten egg yolks. Stir in dates and nuts. Grease 8x8 pan. Bake at 325 for 1/2 hour. Serves 6. Top with banana slices and orange segments. Top with whipped cream or Cool Whip

CHOCOLATE PARADISE CAKE - DEE DEE'S
This chocolate paradise is filled with orange, honey, pears, coconut and pecans. Truly a chocolate and orange lovers delight! I started making this cake some years ago. I love the orange and chocolate combined with the coconut and pecans. And the whipped cream layers alternating with the filling finishes this cake...yum!! Hope...

Steps:
- 1. Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans.
- 2. Finely chop pears; refrigerate. NOTE: I used a blender to chop pears.
- 3. In large bowl, combine cake mix, reserved pear liquid (plus enough water to make 1¼ cups), margarine, honey, orange peel and eggs at low speed until moistened; beat 2 minutes at highest speed. Pour into prepared pans.
- 4. Bake for 25 to 35 minutes or until toothpick inserted in center comes out clean.
- 5. Cool in pans 15 minutes; remove from pans to rack. Cool completely.
- 6. In small bowl, blend filling ingredients; set aside.
- 7. In large bowl, beat cream until slightly thickened. Blend in powdered sugar and vanilla; beat until firm peaks form (do no over beat).
- 8. Slice each cake layer in half to make 4 layers. Place 1 layer on serving plate; spread with 1 cup frosting; top with second layer; spread with half of pear filing. Repeat layers, ending with pear filling, spreading pear filling to within 1 inch of edge on top layer; frost top edge and side of cake with remaining frosting. Refrigerate at least 2 hours before serving. Store any leftovers in refrigerator.
- 9. NOTE: frost sides of cake with chocolate frosting (add 1/2 tsp orange flavoring) in place of whipped cream frosting if desired
LEMON PARADISE CAKE
I love this simple and delicious cake. It reminds me of summer. You and your family will be making this one quite a bit if you like lemon cake. BTW..... This is perfect for pot lucks, family get-togethers or for a simple girls night in. You can slice the pieces as I've shown here and have everyone get at them, that's what I do when I have brunch and it's always a hit. Take me to the tropics. Pare it up with with a frosty momosa or plain orange,mango, peach juice by Dole brand juice. It's the perfect compliment to this cake.

- Bake cake according to directions on box.
- Meanwhile combine sugar and pineapple in a sauce pan and boil over medium heat stirring constantly, let cool.
- Remove cake from oven and poke holes in the cake and pour Pineapple mixture over the top of the cake and set aside.
- Make the pudding mix and spread it over he top of the cake, cool in the refrigerator until chilled.
- Toast coconut in a dry frying pan until it is golden brown.
- spread Cool whip over the top of the cake and then sprinkle with toasted coconut.
