THE CARIBBEAN MANGO FOOL
From my DD's Children's World Cookbook & Posted for ZWT-5. A very healthy, slushy fruit drink that can also be served as a dessert. Although coconut in fresh, dried or liquid form, is an important ingredient in Caribbean Cooking, this recipe does not depend on it if there is an allergy or personal preference not to use it. Enjoy!

Steps:
- Put mango pieces in blender & liquidize (or mash well in a bowl with a fork).
- Stir the lime or lemon juice into the mango puree, mixing well.
- In another bowl, whisk the cream until it starts to thicken, but not enough to form peaks. Set aside.
- Stir in the yogurt & coconut milk (if using) into the mango mixture.
- Gently fold the cream into the mango mixture.
- Pour the fool into bowls or glasses and put them into the refrigerator to chill until serving time.
- Decorate with slices of mango before serving.

Steps:
- Preheat oven to 425°F
- In a large mixing bowl, whisk together the flour, sugar, baking powder and salt.
- Stir in the canola oil with a fork until pea size crumbs form. In a small bowl combine the milk, egg, lime zest and papaya.
- Add to the flour mixture and stir with fork until blended. Dough will be sticky.
- Turn out dough on generously floured board. Lightly form two balls and flatten into disks about 5 inches in diameter. Don't over work the dough.
- Place disks on ungreased cookie sheet and cut into desired number of wedges. Brush lightly with milk and bake for about 20 minutes.

GREEN PAPAYA SALAD WITH LIME AND PEPITAS
Steps:
- For the lime vinaigrette: In a medium bowl, whisk the olive oil, mirin, fish sauce, rice vinegar, soy sauce, sugar, lime zest and juice, and salt and pepper to taste.
- For the salad: Add the rice to a dry cast-iron skillet set over medium heat and toast, stirring frequently, until nutty and fragrant, 10 to 12 minutes. Transfer to a bowl to cool. Place the rice in a spice grinder and pulse until finely ground (the size of kosher salt). Set aside.
- Heat the sesame oil in a saute pan over high heat. Add the green beans and cook until well charred on the outside, about 2 minutes. Transfer to a plate and set aside. (The beans should still be almost raw in the middle so they remain crunchy.) Place the cherry tomatoes in the same pan and lightly char; transfer to the plate with the beans and let cool. Cut the tomatoes in half (it's okay if they get a little smashed), and cut the beans into 2-inch-long pieces.
- In a large bowl, combine the green beans, tomatoes, mung beans, red onions, scallions, papayas, Thai bird chiles, red peppers, cucumbers, basil, mint, pepitas, 1/2 teaspoon salt and pinch of pepper. Drizzle with the lime vinaigrette and mix well. Transfer the salad to a large serving platter and garnish with the toasted ground rice (for fragrance and a crunchy texture).
MANGO FOOL
Super light and fluffy, sweet and tangy. Love it. The original recipe called for a whole cup of sugar, but I halved it for health and it tasted just fine.

Steps:
- Peel and cut the mangoes into small pieces and dump them in a blender.
- Put aside enough slices to garnish.
- Add the ginger, sugar and lime juice to the blender and blend until smooth.
- In a separate bowl, whip the cream (I would suggest an electric mixer) until peaks form.
- Fold the mango mixture into the whipped cream, a bit at a time.
- Stir, then gradually add more, until they are all mixed together.
- Pour the mixture into bowls and chill for one hour before serving.

PAPAYA LIME FOOL

- Mash papaya flesh with a fork until smooth or pulse in a food processor until coarsely puréed. Add 5 tablespoons sugar and 2 tablespoons lime juice and stir or pulse to combine. Add more sugar and lime juice to taste (papayas vary in sweetness and acidity).
- Beat cream in a large bowl until it holds soft peaks, then fold in papaya mixture gently but thoroughly.
- Divide among 8 (6-ounce) glasses and chill at least 1 hour to allow flavors to develop.
