PAPA D'S PANCIT
Traditional Filipino noodle dish. I came up with this blend of ingredients after looking through several Pancit recipes. I feel that boneless, skinless chicken thigh meat has more moisture and flavor. Submitted to www.recipezaar.com on January 12, 2010

Steps:
- Heat butter In a wok or large skillet over medium high heat and saute garlic and onion until translucent.
- Add chicken and shrimp until half cooked.
- Add all vegetables except cabbage and stir fry for about 2 minutes.
- Add black pepper.
- Add chicken broth, soy sauce, oyster sauce and bring to a boil.
- Add cabbage and noodles, mixing gently to prevent them from breaking.
- Simmer until liquid is absorbed and noodles are done, about 10 minutes.
- Serve with sliced green onions.

Steps:
- Boil pork chops for 30-45 minutes.
- Let pork chops cool and pull apart into bite size pieces. Remove the fat.
- Reserve broth.
- Soak rice noodles in cold water for 10-15 min until soft.
- Heat oil and saute onions and garlic until soft.
- Add celery and carrots continue stir frying for 2-3 minutes.
- Add cabbage and stir fry for about 5 minutes more.
- Add green beans and stir fry for 1-2 minutes.
- Add about 1/4 c broth and 1/4 c soy sauce and bring to a boil.
- Pull noodles apart with hands to make in closer to bite size pieces before draining.
- Add 1/4 c broth, if needed.
- Add noodles and mix together.
- Serve immediately.
FILIPINO PANCIT
Pancit is Filipino comfort food. Pancit refers generically to the Filipino noodle, which can be Pancit Bihon, a rice flour noodle, or Pancit Canton, an egg/wheat noodle. This recipe combines both types with lean pork and a variety of vegetables.

Steps:
- Soak the pancit noodles for about 5 minutes until soft.
- Slice and chop the vegetables and the meat and set aside. Heat the oil in a wok or large non-stick pan and add the pork, onion and garlic. Saute until the pork is cooked through. Add the vegetables and saute about 3 minutes.
- Add the water, soy sauce, oyster sauce, bouillon, sugar and pepper (to taste). Bring to a simmer and let the mixture cook for about 5 minutes.
- Add the soaked pancit and the vermicelli. Stir until the vermicelli is cooked and the noodles have soaked up the broth.
- Serve with a wedge of lemon to squeeze over the top before eating.

QUICK AND EASY PANCIT
This pancit is extremely good and easy to make. I found this gem on Allrecipes.com and have made it twice now. It's just the best. I use green onion instead of regular onion and I've made it using shrimp instead of chicken; pork would be good too. Instead of regular head cabbage, I used Napa cabbage which is just great. I hope you enjoy this as much as my family does.

- Place the rice noodles in a large bowl, and cover with warm water. When soft, drain, and set aside.
- Heat oil in a wok or large skillet over medium heat. Saute onion and garlic until soft.
- Stir in chicken, cabbage, carrots and soy sauce. Cook until cabbage begins to soften. Toss in noodles, and cook until heated through, stirring constantly. Transfer pancit to a serving dish and garnish with quartered lemons.

Steps:
- Using a large skillet, lightly sauté in a small amount of oil, the onions and garlic.
- Add the pork and shrimp.
- Add cabbage, carrots, soy sauce and 1 cup water.
- Turn heat to medium and simmer for 5 minutes.
- Stir and simmer until carrots are cooked.
- Place noodles on top of mixture and spoon vegetables and broth over the noodles.
- You might have to add a little more water if the noodles have not wilted.
- Cover and allow to steam for about 2 minutes.
- Turn out on a platter and garnish with lemon wedges.
- The recipe can be varied with chicken leftovers,
- bean sprouts or green onions.
- Squeeze the lemon wedges over Pancit before eating.

FILIPINO PANCIT
I got this recipe from my mother when I moved out of the house, because I wanted to make filipino food that she used to cook for us so that I can cook them for my family and keep passing down the recipes. This is one of my favorites! My family absolutely loves it. Its definitely worth all the work done to make this dish.

- In a zip lock bag, marinade the cubed chicken with the teriyaki sauce and 2 cloves of minced garlic overnight.
- The next day, in a large bowl, soak the rice noodles in warm water for 15-30 minutes, drain completely.
- Drain the marinade off the chicken and discard the marinade.
- In a skillet, heat 1 tablespoon of oil on medium high heat and brown the chicken, drain and set aside.
- In a large pot, heat 2 tablespoons of oil on medium high heat and sautee 3 cloves of minced garlic and accent for 30 seconds.
- Add the carrots and stir fry for about 5 minutes.
- Add the cabbage, onions, and 1 tablespoon of soy sauce and stir fry until the vegetables are tender.
- Add the chicken to the vegetables and continue stir frying.
- Now add the noodles to the pot with 1/8 cup of oil and 1/4 cup of soy sauce and mix very well.
- Keep cooking and mixing until the noodles are tender and cooked thoroughly.
- Serve with the green onions and/or lemon juice from the lemon slices.
PAPA D'S LASAGNA
This is a moist lasagna, if you prefer a firmer texture reduce the amount of beef broth and/or drain the stewed tomatoes. Ricotta cheese can be used in place of the cottage cheese.

- For meat sauce: Over medium high heat sauté onion and garlic in oil until lightly browned. Add beef and brown. Drain.
- Add remaining ingredients stir to combine and simmer uncovered for 1 hour, salt and pepper to taste, add wine stir and cook an additional 1/2 hour. Skim of any grease that forms during this time. Remove bay leaf.
- For cheese sauce mix together all ingredients except mozzarella.
- Cook lasagna noodles according to package directions drain and rinse.
- In a 9 x 13 casserole dish sprayed with non-stick spread out a small amount of sauce then place 1/3 of the noodles on the bottom, add 1/3 cheese sauce, 1/3 meat sauce and 1/3 of mozzarella. Repeat layer.
- Bake in a pre-heated 325º F oven for 45 minutes. Let stand for 10 minutes before cutting.
