Steps:
- Mix the mayonnaise with the relish to make the "secret sauce". Set aside for now.
- On waxed paper, form the 1/5 pound beef patty. It should be about 1/4 inch thick and 5 inches in diameter. Freeze at least an hour.
- Fire up the indoor electric grill, or outdoor barbecue. Follow the manufacturer's instructions for pre-heating.
- . Toast the buns by laying them face down on the grill for 30-60 seconds. (About :30 for outdoor barbecue, :60 for indoor.).
- Cook the frozen beef patty about 2 mnutes per side, (outdoor barbecue) or 3 minutes per side (indoor barbecue grill). Salt and pepper liberally on both sides.
- . Dress your toasted top buns (crown) in the following order:.
- special sauce pickles lettuce cheese.
- . Place the cooked beef patty on top of the dressed bun, and add the bottom. (heel).
- Microwave about 10 seconds to warm the bun, and serve.
- OR -- wrap in a 12"x12" sheet of foil, and warm in your oven (200°) 2-3 minutes--then serve.
- The SUPER Papa Burger.
- Proceed as above, except cook two beef patties per burger instead of one, placing the cheese in between the patties.

- Combine first nine ingredients; mix lightly. Shape into four 3/4-in.-thick patties. Press patties into flour to lightly coat both sides., In a large cast-iron or other heavy skillet, cook burgers over medium heat until a thermometer reads 160°, 4-5 minutes per side. Layer bun bottoms with salad dressing, lettuce, burgers, cheese, onion and tomato slices. Replace bun tops.

THE BIG PAPA BURGER
Steps:
- Preheat a griddle over medium-high heat.
- For the pork patties: Combine the pork, eggs, barbecue sauce, all-purpose seasoning, Worcestershire sauce and sazon seasoning in a bowl and mix with your hands until completely incorporated. Form into 8 patties and set aside.
- For the brisket patties: Combine the brisket, eggs, steak seasoning and Worcestershire sauce in a bowl and mix with your hands until completely incorporated. Form into 8 patties.
- For the burgers: Cook the pork and brisket patties on the griddle until done, 5 to 6 minutes per side. Just before removing from the heat, add the Cheddar to the brisket patties.
- Assemble the burgers by placing 1 pork patty and 1 brisket patty on each potato bun. Garnish the burgers with a slice of tomato and sweet onion, a piece of lettuce, and the pickles and jalapenos, if using.

PAPA'S BURGER
In the basement of Hemingway's home in Cuba in an effort to preserve his legend the JFK Library found many articles, letters, etc. One of the items was a typed recipe for a western Burger/ Papa burger. Unfortunately, many ingredients are no longer available so I have taken liberty to create my own version.

Steps:
- spread the meat with a fork and add the garlic, onion and dry seasonings and mix with your hand. Let the meat sit for 10 minutes in the refer.
- Add capers and everything else including the wine and let marinate for ten more minutes. Then, make two thick, juicy patties.
- Heat the oil in the pan to near smoking. Drop patties in and turn heat to medium. after a few minutes turn up the heat and flip burgers. cook for two minutes and turn down the flame again to med. Both sides should be crispy brown but pink in the middle.
- Plate the burger patties with or w/o buns and top with heaping tablespoon of room temp. homemade India Relish.
