HONEY MUSTARD-PANKO CHICKEN TENDERS

Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Lightly coat a large baking dish with oil.
- Prepare chicken tenders: Mix panko, Parmesan cheese, salt, pepper, and paprika together in a medium bowl. Mix mustard, honey, and olive oil together in a small bowl.
- Slice chicken in half horizontally to form thin fillets. Cut each fillet into strips. Dip chicken strips in the mustard mixture, then coat in the panko, and place in the prepared baking dish.
- Bake in the preheated oven until tenders are golden brown, 15 to 20 minutes, turning over halfway through.
- Prepare sauce: Mix garlic, mustard, honey, oil, lemon juice, salt, and pepper in a small bowl. Serve sauce with chicken tenders.

PANKO-AND-GINGER CRUSTED CHICKEN WITH SWEET AND SOUR MUSTARD SAUCE RECIPE

- Cut each chicken breast lenghtwise into 4 strips and season with salt and pepper. Combine the bread crumbs and the 2 tablespoons of ginger in a small bowl. Dip each chicken strip in the egg and coat with the bread crumb mixture. Heat the canola oil in a large saute pan over medium heat and add the chicken strips. Cook for 2-3 minutes on each side, or until golden brown. Remove from the pan and drain on paper towels. Serve with Sweet and Sour Mustard Sauce: 1/2 cup honey 1/2 cup Chinese mustard 2 tablespoons rice wine vinegar Combine all the ingredients in a small sauce pan and cook over medium heat for about 5 minutes, or until warm.
SWEET AND SOUR CHICKEN III
This version of the Asian-style favorite includes carrots, bell pepper, garlic and pineapple. The requisite soy sauce and vinegar add the sour to the sweet, and voila! Serve over hot cooked rice, if desired.
