FILIPINO PANDESAL BREAD ( BREAD MACHINE )

Filipino Pandesal Bread ( Bread Machine ) image

This recipe is from the Philippines. It makes the best rolls ever! They are wonderful fresh from the oven, with a little butter or some jam. They also freeze very well, so don't worry about any leftovers (if there are any!). Time to prepare the dough and rising time are not included. SOURCE: WWW.

HOT UBE PANDESAL (FILIPINO PURPLE YAM BREAD ROLLS)

Hot Ube Pandesal (Filipino Purple Yam Bread Rolls) image

What I'm sharing here is my version of the hot pandesal we ate for breakfast as kids and even for merienda (snack time), with hot chocolate or warm milk. I love food with ube flavor thus incorporating it with my favorite breakfast bread. I know there are many pan de sal recipes online but hope you give this a try and let me know what you think. Thank you! Serve hot with or without spread/butter of your choice. For leftovers, warm in a toaster oven before serving for better taste.

UBE PANDESAL RECIPE BY TASTY

Ube Pandesal Recipe by Tasty image

This twist on a classic Filipino bread roll features a rich, fluffy ube dough filled with melty cheese and rolled in bread crumbs for a crunchy coating.

Provided by Aleya Zenieris

Categories     Bakery Goods

Time 2h

Yield 24 pandesal

Number Of Ingredients 12

½ cup whole milk, room temperature
1 cup warm water
1 large egg, room temperature
1 ½ tablespoons ube flavoring
4 cups bread flour
1 tablespoon instant yeast
½ cup sugar
½ teaspoon kosher salt
3 tablespoons unsalted butter, softened
nonstick cooking spray, for greasing
14 oz easy melt processed cheese, cut into ½-inch (1.24 cm) pieces, room temperature
1 cup fine plain bread crumbs

Steps:

  • In a 4-cup spouted measuring cup or medium bowl, whisk together the milk, warm water, and egg. Whisk in the ube flavoring.
  • In a large bowl, combine the flour, yeast, sugar, and salt and mix well.
  • Make a well in the center of the dry ingredients, then pour the wet ingredients into the well. Slowly mix together using a whisk or your hands until all of the moisture is absorbed by the dry ingredients and a dough begins to form, about 3 minutes. Add the butter to the dough and knead until incorporated, about 5 minutes.
  • Spray a clean surface with nonstick spray. Transfer the dough to the surface. The dough will be sticky, but resist adding more flour as it will make the finished product tough and dry. Knead the dough by picking up from the center with both hands on either side of the dough and slapping the bottom end onto the countertop, then folding the top end forward. Rotate your hands 90 degrees and pick up the dough from the center again and repeat the slap and fold motion. Repeat until the dough is more elastic and has a significantly smoother texture, 8-10 minutes.
  • Transfer the dough to a clean large bowl greased with nonstick spray and spray the top of the dough with more nonstick spray. Cover and let rise in a warm place for 30-60 minutes, or until doubled in size.
  • Once the dough has risen, grease your hands with nonstick spray and portion the dough into 24-25 pieces, about 50 grams each, then roll into balls. Cover the portioned dough with a kitchen towel to prevent a crust from forming while you shape each pandesal.
  • Flatten a piece of dough evenly in your palm to create a disc about 3 inches in diameter. Place a cube of the easy-melt cheese in the center, gather the edges of the dough around the cheese and pinch to seal, then roll into a smooth ball. Immediately roll the finished pandesal in the bread crumbs to coat completely. Repeat with the remaining dough.
  • Place 8-12 pandesal on each of 2-3 baking sheets lined with parchment paper and lightly cover with plastic wrap. Let proof at room temperature until doubled in size, 60-90 minutes.
  • Preheat the oven to 350˚F (180˚C).
  • Remove the plastic wrap from the baking sheets. Bake the pandesal, working in batches if needed, for 18-20 minutes, until puffed and lightly golden on the bottoms. Let cool for 10 minutes before serving.
  • Enjoy!

PANDESAL (FILIPINO BREAD ROLLS - PAN DE SAL)

Pandesal (Filipino Bread Rolls - Pan de Sal) image

These rolls are often served for breakfast in the Philippines. It's usually part of a breakfast that would also include kesong puti (white cheese) and something more substantial such as champorado (chocolate rice porridge), sinangag (garlic fried rice) or a meat or fish dish such as tapa, carne norte, tocini, or longganisa pork...

Categories     Sweet Breads

Time 3h50m

Number Of Ingredients 9

1/4 c warm water
1/4 oz package active dry yeast
1 c lukewarm milk
2 oz butter, room temperature
2 large eggs, beaten
1/2 c granulated sugar
1 1/2 tsp salt
4 1/4 c bread flour (plus 1/4 to 1/2 cup for kneading)
1/2 c fine bread crumbs

Steps:

  • 1. In a large bowl, combine water and yeast. Allow to sit for 10 minutes until mixture becomes bubbly. Stir well.
  • 2. In a small bowl, combine milk, butter, eggs, sugar and salt. Stir together until incorporated.
  • 3. Add milk mixture and 2 cups flour to yeast mixture. Using an electric mixer, beat to combine. Gradually add the remaining 2-1/4 cup flour in ½ cup increments and continue to combine all ingredients.
  • 4. On a lightly-floured surface, turn over dough and knead, lightly adding flour as necessary, for about 10 minutes or until smooth, supple and elastic.
  • 5. In a lightly-oiled large bowl, place dough. Cover with film and allow to rise for about 1 to 1-1/2 hours or until double in size.
  • 6. On a lightly-floured surface, transfer dough and divide into 24 pieces. Shape each piece into a ball and roll on breadcrumbs to coat. Arrange balls about 1-inch apart on a lightly-greased baking sheet. (If you don't want them to be pull-apart but instead rise and bake separately, set them about 2 inches apart on baking sheet.) Cover with a cloth and allow to rise for about 1 to 1-1/2 hours or until double in size. Near the end of the rising time, start preheating oven to 350°F.
  • 7. Bake in a 350°F oven for about 15 to 20 minutes or until golden brown. Serve hot.

TASTY FILIPINO PANDESAL

Categories     Breads

Time 2h20m

Yield 24-36 rolls, 6-12 serving(s)

Number Of Ingredients 8

1 cup lukewarm water
1/2 cup vegetable oil
2 eggs (room temp)
1 teaspoon salt
1/2 cup sugar
4 3/4 cups bread flour (I suggest bread machine flour)
1 tablespoon fast rising yeast (I suggest for bread machine yeast)
breadcrumbs

Steps:

  • If you have a bread machine, add all ingredients (except the bread crumbs) in the order suggested by the manufacturer. Usually the liquid ingredients then dry ingredients. Select DOUGH cycle. But I suggest to combine lukewarm water and yeast and let it stand for 5 minutes before adding all the ingredients, then follow procedure 5-11.
  • To knead the dough manually, Combine lukewarm water and yeast. Stir. Let it stand for 5 minutes. Combine all ingredients except bread crumbs. (liquid ingredients then dry).
  • Knead the dough until smooth and elastic.
  • Place in a greased bowl. Let it stand in warm place to rise, covered for 1.5-2 hrs or until doubled.
  • Punch down the dough and turn out on a lightly floured board.
  • Divide dough into 24 equal parts and shape into ovals.
  • Roll lightly in bread crumbs.
  • Place on greased cookie sheet.
  • Cover, let rise in warm place, free from draft, until light and double- about 2-4 hrs to achieve light and fluffy bread. (Tip: I usually make the dough the night before, let it stand, 'till ready to bake it in the morning. So, you'll have fresh bake pan de sal at breakfast with kraft cheese -- yummy).
  • Bake at 375 degrees, for 15-20 minutes or until golden brown.
  • Enjoy!

CLASSIC FILIPINO PANDESAL RECIPE - (3.9/5)

Classic Filipino Pandesal Recipe - (3.9/5) image

Provided by vlacer

Number Of Ingredients 11

2 cups all-purpose flour
2 cups bread flour
1/2 cup white sugar
5 tablespoons melted butter
1 teaspoon baking powder
1 1/4 cup fresh milk (lukewarm)
1 pouch rapid rise yeast
1 cup bread crumbs
1 teaspoon salt
1 egg
1 tablespoon cooking oil

Steps:

  • Combine the yeast, sugar, and milk and stir until the yeast and sugar are fully dissolved. I've chosen milk instead of water because it just tastes better, but you can always use lukewarm water instead of the milk. In the mixing bowl, combine the dry ingredients: flour, sugar, salt, and baking powder then mix well. Add the egg, butter, cooking oil, and yeast-sugar-milk mixture in the mixing bowl with the dry ingredients then mix again until dough is formed. You can use your hands to effectively mix the ingredients. In a flat surface, knead the dough until the texture becomes fine. Mould the dough and put back in the mixing bowl, cover with damp cloth and let the dough rise for at least 45 minutes to 1 hour. After the dough has risen, transfer to a lightly floured working surface. Roll into a log then cut into four to six equal pieces. Take another portion of the dough, roll again into a log and cut into equal pieces, repeat this step until all the dough is done. Roll each piece of dough in breadcrumbs then arrange on a baking tray for at least an inch apart, you don't want it sticking together when it rises later on. Leave the dough in the tray to rise again for 15-20 minutes. Preheat the oven at 375°F (190 degree Celsius) for 10 minutes. If using a fan assisted oven, reduced the heat according to instructor's manual. Bake for 20-25 minutes or until nicely browned outside.

PANDESAL BREAD (FILIPINO BREAD ROLLS)

Pandesal Bread (Filipino Bread Rolls) image

Via TheLittleEpicurean.com. I love pandesal and we are most fortunate to have a Filipino restaurant a few miles away where I can purchase pan de sel to satisfy my bread-y addiction! 3 Tbsp unsalted butter, to room temperature
1/3 c granulated sugar
2 large eggs, lightly whisked

  • 3. Pour yeast mixture into the bowl of a stand mixer fitted with a hook attachment. Add remaining sugar, butter and lightly whisked eggs.

  • 7. Preheat oven to 350 degrees F. Remove plastic wrap and bake for 20-25 minutes until fragrant and golden brown. Eat bread rolls warm or at room temperature.
