1 package (15 ounces) refrigerated pie pastry
4 ounces provolone cheese, shredded
1 pound leeks (white portion only), sliced
6 medium plum tomatoes, thinly sliced
1/4 cup grated Parmesan cheese
1-1/2 teaspoons garlic powder
1/8 teaspoon pepper
1 cup shredded part-skim mozzarella cheese

Steps:

  • Place both pastry sheets on greased baking sheets. Sprinkle each with provolone cheese, leaving 1 in. around edges. Arrange leeks and tomato slices over provolone cheese. Sprinkle with Parmesan cheese, garlic powder and pepper. Top with mozzarella cheese. Fold edges over filling., Bake at 425° for 18-22 minutes or until crusts are lightly browned. Cut into wedges. Serve warm.

1 refrigerated pie crust
4 ounces sliced pancetta, cut into small strips (can sub with bacon)
1 large leek, chopped (white and light green part only)
1 tablespoon fresh thyme, chopped
1 1/2 cups gruyere cheese, shredded (can sub with swiss)
3 plum tomatoes, seeded and cut into 1/4-inch slices
3 large eggs
1/2 cup heavy cream
1/2 cup half-and-half
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Blindbake pie crust in 9" pan, preferably one with a removable bottom, at 400 degrees for twenty minutes or until set and light golden in color. *special tip- line crust with nonstick foil and fill crust with dried beans before baking.not necessary but makes it prettier!*.
  • Transfer to wire rack to cool (remove foil and beans if you used them).
  • Reduce oven to 375.
  • Cook pancetta in large skillet until crisp, remove with slotted spoon to paper towels.
  • Discard all but 11/2 tbs drippings.
  • Add leek and sautee until tender (about 5 minutes).
  • Stir in thyme and remove from heat.
  • Add pancetta to leeks and combine.
  • Sprinkle 1 cup of cheese over bottom of pie shell.
  • Spread pancetta/leek mixture over cheese and top with tomato slices.
  • In a medium bowl, combine combine eggs, cream, half-and-half, salt and pepper.
  • Slowly pour egg mixture over tart filling, letting it seep into it.
  • Top with remaining cheese.
  • Bake 30 minutes or until knife comes out clean and top is lightly browned.

2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 cup cold butter
9 to 11 tablespoons cold water
FILLING:
1 pound thick-sliced bacon, diced
3-1/2 pounds leeks (white portion only), sliced
2 tablespoons all-purpose flour
4 large eggs
1 cup half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg

Steps:

  • In a bowl, combine the flour, salt and sugar; cut in butter until crumbly. Gradually add water, tossing with a fork until a ball forms. Cover and refrigerate for 30 minutes., In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 2 tablespoons drippings. Saute leeks in drippings until tender; stir in the bacon. Stir in flour until blended; set aside., On a floured surface, roll dough to 1/8-in. thickness. Transfer to an ungreased 10-in. springform pan. Spoon leek mixture into crust. Trim pastry to 1/4 in. above filling; press pastry against sides of pan. Bake at 400° for 10 minutes., Meanwhile, in a bowl, beat the eggs, cream, salt, pepper and nutmeg. Pour over leek mixture. Bake until a knife inserted in the center comes out clean, 20-25 minutes longer. Serve warm.

This quiche-like tart features sautéed leeks, pancetta, and tomato slices surrounded by nutty melted Gruyere cheese.

1 refrigerated piecrust
3 plum tomatoes
4 oz. pancetta or bacon
1 large leek
1 tbsp. chopped fresh thyme leaves
1 1/2 c. shredded Gruyère cheese
3 large eggs
1/2 c. heavy cream
1/2 c. half-and-half
1/4 tsp. Salt
1/4 tsp. freshly ground pepper

Steps:

  • Unroll piecrust and press onto bottom and sides of a 9-inch tart or quiche pan with removable bottom. Fold edge inward and press against side of pan to form side crust. Chill 20 minutes in refrigerator.
  • Heat oven to 400 degrees F. Line piecrust with nonstick foil and fill with pie weights or dried beans. Bake 25 minutes, or until pastry is set and very pale golden. Transfer to a wire rack; remove foil and weights.
  • Reduce oven temperature to 375 degrees F. In large skillet, over medium heat, cook pancetta or bacon until crisp, about 8 minutes; remove with slotted spoon to paper towel. Discard 1 tablespoon drippings from skillet; add leek and sauté 5 minutes, until tender. Stir in thyme and remove from heat.
  • Sprinkle 1 cup of the cheese over bottom of tart crust. Spread leeks and pancetta over cheese. Arrange tomato slices over top. In a 1-quart measure, whisk eggs, cream, half-and-half, salt, and pepper until blended. Gradually pour the egg mixture over filling, to allow it to seep slowly between filling ingredients. Sprinkle top with remaining cheese.
  • Bake 30 to 35 minutes or until a knife inserted in center of custard comes out clean and top is golden. Serve warm.

PASTA WITH PANCETTA AND LEEKS

12 ounces shaped pasta, such as farfalle
3 ounces chopped pancetta
2 whole leeks, sliced thin
1 tablespoon butter, optional
1/2 cup dry white wine
1/2 cup heavy cream
Salt and freshly ground pepper
Shaved Parmesan, for serving

Steps:

  • Cook the pasta according to package directions to al dente and set aside, reserving 1/2 cup of the pasta water.
  • Saute the pancetta in a large skillet over medium heat until the fat is rendered and it starts to brown. Add the leeks and cook, about 8 minutes. When you add the leeks, you can also throw in a pat or 2 of butter if you want to. This'll give the dish some scrumptious flavor.
  • After 8 to 10 minutes, pour in the wine, and then cook until reduced, an additional 1 to 2 minutes. Reduce the heat to low, and then pour in the cream. Add salt and pepper to taste. Stir in some Parmesan.
  • Toss in the pasta, adding a little pasta water to thin as needed. Serve with Parmesan over the top - delicious!

2 pints cherry tomatoes
1 thinly sliced large red onion
1 tablespoon olive oil
1/2 teaspoon red-pepper flakes
4 ounces thinly sliced pancetta
3/4 pound penne
1/2 cup chopped parsley

Steps:

  • On a rimmed baking sheet, toss tomatoes with onion, oil, and red-pepper flakes; season, and top with pancetta. Roast at 450 degrees until tomatoes burst, 20 minutes, rotating pan once. Cook pound penne, reserving 1/4 cup pasta water. Toss penne with tomato mixture, parsley, and pasta water; season.

3 cups flour
1/3 cup sugar
1 1/2 teaspoons salt
1 teaspoon fennel seed, crushed
1 cup butter, chilled and cut into pieces
2 eggs, beaten
3 tablespoons butter
1 tablespoon olive oil
5 -6 leeks, white and light green parts only, cut into 2-inch lengths and sliced inot 1/4 " juliene (about 4 cups)
1/3 cup shallot, sliced
2 garlic cloves, minced
1 pinch saffron, crushed and dissolved in 1 tablespoon hot water
2 tablespoons anise liqueur
1/2 cup parsley, chopped
salt and pepper
10 ounces Fontina cheese, grated
10 tomatoes, sliced into 1/4-inch rounds
4 eggs, room temperature
2/3 cup whipping cream
1 teaspoon salt
3 tablespoons butter, softened

Steps:

  • To make the pastry: in a food processor combine 3 cups of flour, sugar and salt until on/off turns. Add fennel and process for 30 seconds. Blend in 1 cup of butter (broken into pieces) using on/off turns until mixture resembles coarse meal. Add eggs while machine is running and mix just until dough comes together. You may need to add a bit more flour if dough doesn't come together. Remove dough from processor and shape into disc and wrap in wax paper and refrigerate for several hours or overnight.
  • To prepare filling: melt the 3 T of butter and oil in a large skillet over medium heat. Add leeks and shallots and cook until soft (10 minutes). Add garlic and saffron and stir 2 minutes more. Blend in liqueur and cook for 2 more minutes or until it evaporates. Stir in parsley and salt and pepper. Cool to room temperature before proceeding.
  • To assemble tart: preheat oven to 425 degrees F.
  • On a floured board roll dough out to fit 11-inch tart pan circle (about 1/4 inch thick). Fit into pan with a removeable bottom, and trim edges. Chill 30 minutes.
  • Line pastry with foil and fill with dried beans or pie weights. Bake for 8-10 minutes, remove foil and weights and bake for 10 more minutes or until golden.
  • Spoon in leek mixture. Sprinkle with cheese. Top with tomato slices, overlapping circles.
  • Whisk together eggs, cream and salt and then pour over filling.
  • Set tart on a baking sheet and bake for 30-40 minutes or until filling is set. Brush with melted butter during last 5 minutes of baking. Cool in pan on rack.

1 cup all purpose flour
1/4 teaspoon salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
3 ounces chilled cream cheese, cut into 1/2-inch cubes
Filling
2 tablespoons (1/4 stick) butter
2 cups chopped leeks (white and pale green parts only; about 3 large)
1 teaspoon vegetable oil
4 ounces thinly sliced pancetta,* chopped
2/3 cup half and half
2 large egg yolks
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 ounces soft fresh goat cheese, crumbled
Fresh parsley leaves

Steps:

  • For crust:
  • Blend flour and salt in processor 5 seconds. Add butter and cream cheese. Using on/off turns, blend until moist clumps form. Gather dough; shape into 6-inch-long log. Wrap and chill at least 1 hour and up to 1 day.
  • Cut log into 24 1/4-inch-thick rounds. Press 1 round into each cup of 2 nonstick 12-cup mini muffin pans; freeze 30 minutes.
  • Meanwhile, prepare filling:
  • Preheat oven to 350°F. Melt butter in large skillet over medium heat. Add leeks and sauté 10 minutes; cool. Heat oil in small skillet over medium-high heat. Add pancetta; sauté until crisp, about 6 minutes. Using slotted spoon, transfer pancetta to paper towels. Whisk half and half and next 3 ingredients in medium bowl to blend. Mix in goat cheese, then leeks and pancetta.
  • Spoon filling into shells. Bake until filling is set and crust edges are golden, about 30 minutes. Cool in pans 5 minutes. (Can be made 1 day ahead. Cool, cover, and chill in pans. Rewarm uncovered in 350°F oven 12 minutes.)
  • Using small knife, cut around tartlets to loosen. Turn out tartlets and arrange on platter; top each with parsley leaf.
  • *Pancetta (bacon cured in salt) is available at Italian markets and specialty foods stores
