Chocolate-Garlic Mojo with Toasted Cuban Bread (Tostadas de Pan Cubano con Mojo de Chocolate) image

Mojo Ganache
9 ounces dark chocolate, preferably Cluizel Concepción (66% cacao) or Cluizel Los Ancones (67% cacao), or a combination of the two, finely chopped
4 large garlic cloves, ground to a fine paste with mortar and pestle
1/2 cup extra-virgin olive oil
Coarse sea salt
1 tablespoon freshly squeezed lime juice
To Finish
1 loaf Cuban bread (about 10 ounces), thinly sliced on the diagonal
Coarse sea salt

Steps:

  • To prepare the ganache, put the chocolate in a double-boiler or a heatproof bowl over simmering water. When the chocolate is almost melted, remove from the heat and stir from the center out with a rubber spatula until smooth.
  • Combine the garlic and olive oil in a small skillet and just heat it through over low heat. Pour in a stream over the melted chocolate while stirring gently with the spatula, again from the center out. Season with salt to taste. Add the lime juice and stir gently to blend smoothly. The mixture will thicken like mayonnaise. Keep at room temperature.
  • When you are ready to serve, warm the sauce over simmering water if it has become too stiff. Toast the bread on both sides on a grill or under the broiler. Arrange the toasted slices on a large platter or flat basket lined with a plantain-leaf square. Accompany with the sauce in a bowl or cruet, the coarse salt, and a couple of decorative butter knives. ¡Delicioso!

Number Of Ingredients 6

1 1/2 pounds very ripe and flavorful tomatoes, preferably plum tomatoes, split in halves crosswise
2 large garlic cloves, mashed to a paste
4 tablespoons best-quality fruity extra virgin olive oil, plus more for drizzling
Kosher or sea salt
Good-quality French-style loaf, split in half and halves cut into 4-inch lengths
8 to 16 best-quality anchovy fillets, preferably jarred, optional

Steps:

  • With a coarse grater held over a bowl grate the tomatoes down to the skin. Pour off any excess liquid. Add the garlic, olive oil, and salt to taste (the mixture should be well seasoned). Let sit for a few minutes to meld flavors.
  • Lightly toast the split bread and drizzle with olive oil. Pour the tomato mixture into a serving bowl and arrange the bread and anchovies, if using, on plates. Let each guest spread the tomato mixture on the bread and top it off with one or two anchovy fillets.

This is from Country Recipes, by Land O Lakes. We use it often in summer or when we just don't want to use the oven. It's very very good, and easy. Can use margarine in place of butter.

1/3 cup butter
1/8 teaspoon cayenne pepper
1 teaspoon garlic, minced fresh
6 slices French bread, 1/2-inch thick
1/2 cup mozzarella cheese

Steps:

  • Melt butter in 10-inch skillet until sizzling.
  • Stir in cayenne pepper and garlic.
  • Dip both sides of each bread slice in melted butter and place in same skillet, cut side down.
  • Cook over medium heat, watching closely until bread is lightly browned about 2-3 minutes.
  • Reduce heat to low.
  • Turn bread over and sprinkle each slice with about 1 tablespoons of cheese.
  • Cover; continue cooking until cheese is melted, 1-2 minutes.
  • Serve immediately.
