2 pounds sea scallops, rinsed and patted dry
Coarse sea salt and freshly ground black pepper
2 tablespoons unsalted butter
2 tablespoons olive oil
1 shallot, minced
1 clove garlic, minced
1/4 cup dry white wine
1 1/2 cups corn kernels (from about 3 ears)
1/4 cup heavy cream
4 fresh basil leaves, thinly sliced
2 tablespoons chopped fresh chives

Steps:

  • Remove the muscle from each scallop and discard. Season both sides with salt and pepper.
  • Heat 1 tablespoon butter with 1 tablespoon olive oil in a large nonstick skillet over medium-high heat until hot. Place half of the scallops in the pan and cook, turning once, until golden brown, 1 to 1 1/2 minutes per side. Transfer scallops to a plate and loosely cover to keep warm. Repeat process with remaining butter, olive oil, and scallops.
  • Reduce heat to medium; add shallot and garlic and cook, stirring, until softened, about 1 minute. Add wine and scrape brown bits from bottom of skillet. Add corn, cream, basil, and chives. Cook, stirring often, until cream is reduced and slightly thickened, about 3 minutes. Transfer half of the sauce to the jar of a blender and puree until smooth. Return pureed sauce to the skillet with the remaining sauce, add scallops and any juices that have accumulated on the plate; cook until warm about 1 minute.
  • Divide scallops evenly among 4 plates. Spoon sauce around scallops and serve immediately.

1 cup apple cider
2 tablespoons cornstarch
16 medium sea scallops (about 1 pound)
1/4 teaspoon dried thyme
2 teaspoons fresh lemon juice

Steps:

  • Cook bacon in large nonstick skillet over medium-high heat until crisp. Using tongs, transfer to paper towels and drain. Crumble bacon. Pour off all but 2 teaspoons bacon drippings from skillet.
  • Whisk apple cider and cornstarch in small bowl to blend well. Sprinkle scallops with thyme salt and pepper.
  • Heat bacon drippings in skillet over high heat. Add scallops and cook until golden brown and almost cooked through, about 2 minutes per side. Transfer to plate. Add cider mixture to skillet and bring to boil, whisking constantly. Boil until thickened to sauce consistency, whisking occasionally, about 1 minute. Season to taste with salt and pepper. Stir in lemon juice. Return scallops to skillet and toss until just opaque in center, about 1 minute. Transfer scallops to plates. Sprinkle bacon over.

1/2 cup pan searing flour

Steps:

  • Start with fresh sea scallops, as large as you can buy. If you buy them frozen, defrost before preparing the recipe.
  • Preheat oven to 450 degrees.
  • Heat olive oil in pan over medium heat. Rinse scallops with cold water, pat dry with paper towels.
  • Pour pan searing flour into quart size plastic bag; coat scallops one by one with flour shaking off excess.
  • Add scallops to pan; when scallops appear brown paper bag color 1/4 up flip with tongs.
  • Add butter and spoon butter over scallops as "crusting" occurs.
  • Transfer scallops and butter oil mixture to oven safe dish and place in oven for 7- 10 minutes and enjoy!

1 lb sea scallops, colossal (approximately 8 at 2 inches in diameter)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
2 tablespoons flour
1 tablespoon olive oil
2 tablespoons butter
1/4 cup sage, fresh, chiffonade (roll leaves into a bunch and chop into thin strips)

Steps:

  • With a paper towel, thoroughly dry all sides of scallops.
  • Season all sides of scallops evenly with garlic powder, onion powder and black pepper. Then evenly coat all sides with flour and pat of excess flour.
  • In an oven-safe skillet (cast iron preferred), heat olive oil over medium-high heat until glistening.
  • Add scallops. Cook for 3 - 5 minutes and turn over when bottom edges change color 1/4 of the way up, and seared side has turned paper bag brown.
  • Lower skillet to medium heat. Add butter to pan (being careful not to burn). When butter has melted and begins to foam, baste scallops with it for 1 - 3 minutes. (The butter will become amber in color. If it seems to be any darker than "amber", reduce heat a little.)
  • During the last one minute of cooking time, sprinkle fresh sage into butter and allow to crisp. Scallops are done when their sides are evenly white from top to bottom (no longer opaque) or internal temperature reaches 140°F.

2 ounces extra virgin olive oil

2 Tbs. shallots, minced
1 cup red onion, diced
4 cups arborio rice
2 quarts chicken stock, preheated to be hot and simmering
1 cup romano cheese, grated
2 Tbs. sweet basil leaves, chiffonade
2 Tbs. lemon basil leaves, chiffonade
2 Tbs. chives, snipped
2 cups white asparagus, blanched, chilled and cut 1 inch long
2 lemons, juiced and zest both
1 Tbs. kosher salt

Steps:

  • Sea Scallops: Pan sear sea scallops in extra virgin olive oil, salt and pepper scallops prior to placing in hot pan. Once the scallop is in the pan do not turn it over until it is nice and golden brown. In large sauce pot over medium high heat, saute in olive oil, garlic, shallots, and red onions until translucent. Add arborio rice and cook for 2 min. until rice starts to brown. Once rice starts to brown, ass hot chicken stock 2 cups at a time, stirring lightly. Make sure chicken stock is absorbed before adding the next 2 cups. Repeat this process until all chicken stock is used. The risotto should be creamy and kernels should be al dente. Add romano cheese, sweet basil, lemon basil, chives, white asparagus, lemon juice and zest, stir until herbs are incorporated. Season with salt and pepper. Serve immediately with Sea Scallop on top of Risotto.

1 1/2 ounces olive oil

1 cup orange juice
2/3 cup orange juice concentrate
2 tablespoons olive oil
12 large shallots, peeled
1 1/2 ounces sherry wine vinegar
2 cups chicken stock
1 tablespoon butter

Steps:

  • Dry scallops well and season with salt and pepper.
  • Heat olive oil in large saute pan until smoking then add the scallops.
  • Don't overcrowd them.
  • Brown well.
  • Let cook over medium high heat until done, about 5-8 minutes.
  • Keep Warm.
  • In non-aluminum pan bring orange juice and concentrate to boil.
  • Lower heat and simmer for 5 minutes.
  • Set aside.
  • In a saute pan, heat olive oil until almost smoking.
  • Add the shallots, browning them well on all sides.
  • Add orange juice mixture and chicken stock, cover.
  • Let simmer over moderate heat until shallots are nearly cooked through.
  • Remove shallots and let the remaining liquid reduce uncovered to about one cup.

Steps:

  • Bring large pot of water to rolling boil. Add generous amount of salt to water and cook linguine to just before al dente.
  • Season scallops with salt and pepper. Heat olive oil and butter in large skillet over medium high heat. Sear scallops about 2 minutes on each side; remove from skillet to a plate and cover with foil. Set aside.
  • Add shallot and garlic to the same skillet and saute until softened.
  • Add the wine and cook until reduced to almost gone.
  • Add the clam juice and reduce by about 1/2.
  • Add red pepper flakes, the herbs, capers, lemon zest and lemon juice. Season with pepper to taste and add the butter.

3.5 ounces (100 grams) European cucumber
8.8 ounces (250 grams) chicken stock
4 tablespoons extra-virgin olive oil

1.8 ounces (50 grams) cornichons, cut into brunoise
3 tablespoons cornichon vinegar

5.30 ounces (150 grams) butter, room temperature

7.1 ounces (200 grams) verjus (vinegar from unripened white grapes)

Steps:

  • Wash, peel, and rewash potatoes. Cut off edges of potato to form a rectangle. Keep edges for cooking with the chicken stock. Slice potato length-wise in 1/4-inch slices. Do the same width-wise, forming 1/4-inch cubes when finished.
  • Wash, peel, and rewash cucumbers. Cut cucumbers in half; scrape the seeds out with a spoon and cut in half one more time. Then cut into diced cubes the same size as potatoes. You should have equal amounts of potatoes to cucumbers.
  • Reduce the chicken stock with the potato edges by 75 percent or until the potato edges until they are soft. Smash the potato edges to form a smooth puree.
  • Blanch the potato cubes in salted water.
  • Heat extra-virgin olive oil in a saute pan. Lightly sear the shallots and cucumbers. Add the cornichons and vinegar. Cook until everything is al dente, then stir in the chicken stock puree and potato cubes. Season with freshly ground pepper and salt.
  • For the Parsley Butter: Place the butter in a food processor and blend until smooth. When the butter is smooth, add fresh Italian parsley. Blend the butter and the parsley together until the parsley emulsifies with the butter. Add a touch of salt. Cool mixture to preserve the green color and fresh taste of the parsley.
  • For the Verjus du Perigord: Over medium heat, melt the sugar, and cook until caramelized and golden brown. Add the verjus and reduce the liquid to 1/3 the volume. Add the veal stock and reduce by 1/4. Remove the foam that accumulates on top of the stock. Add creme fraiche and blend with hand blender. Slowly add the extra-virgin olive oil to form an emulsion and hand blend again.
  • Preheat the oven to 400 degrees F.
  • Over a low flame melt a little olive oil and butter in a pan. It is important to keep the temperature very low, so the butter remains brown and maintains a nutty flavor.
  • Lightly sear the scallops until golden brown on both sides. After searing the scallops, remove them from the pan and place on a drying rack.
  • Bake for 2 to 3 minutes (depending on the size). The scallops should be medium rare. Reheat the potato-cucumber salad and add the butter at the last minute to retain the color and freshness of the parsley. On a hot, oversized plate, place the potato-cucumber salad in the center of the dish. Place the scallops on top. Drizzle the tops of the scallops with warm verjus and serve.

Steps:

  • In a saucepan combine Blackberry wine, bay leaves, allspice berries, whole cloves, Serrano pepper, blackberries and dash sea salt.
  • Bring wine to a full boil and reduce by half.
  • Place Blackberry Coulis in a bowl. Discard bay leaves, allspice and cloves. Puree Coulis and strain using a fine-mesh sieve. Hold Blackberry Coulis warm for service.
  • Rinse scallops under cold water and pat dry. In a bowl combine Old Bay Seasoning, Cajun Seasoning, fine sea salt, white pepper and whisk in olive oil. Toss scallops until coated.
  • In a sauté pan melt butter, add scallops and sear 1-2 minutes per side. Do not over crowd the pan. Add Chardonnay wine and reduce by half.
  • Cover warm plates with Blackberry Coulis, place 3-scallops per plate.

1/4 cup mascarpone cheese

2 cups apple cider
1 cup apple cider vinegar
1/4 cup chopped shallots
Lentils
6 whole cloves
1 medium onion, peeled
6 cups water
1 1/2 cups French green lentils (lentilles du Puy; about 12 ounces)
2 bay leaves
6 slices thick-cut applewood-smoked bacon, cut crosswise inch thick
1/4 cup chopped shallots
1 teaspoon chopped fresh thyme
Scallops
6 tablespoons butter, divided
18 sea scallops, patted dry
2 tablespoons olive oil

Steps:

  • For mascarpone cream:
  • Place wine and shallots in heavy small saucepan. Boil until almost dry, about 6 minutes. Add cream. Boil until reduced by half, about 2 minutes. Stir in mascarpone, lemon peel, and chives. DO AHEAD: Can be made 1 day ahead. Transfer to small bowl; cover and chill. Rewarm before serving.
  • For cider reduction:
  • Place cider, vinegar, and shallots in heavy medium saucepan. Boil until reduced to 3/4 cup, about 15 minutes. Strain; discard solids in strainer. Return cider mixture to pan. DO AHEAD: Cider reduction can be made 1 day ahead. Cover and refrigerate.
  • For lentils:
  • Press thin end of cloves into peeled onion. Place onion in heavy large saucepan. Add 6 cups water, lentils, and bay leaves. Bring to boil. Reduce heat to medium-low and simmer until lentils are tender, stirring occasionally, about 30 minutes.
  • Meanwhile, cook bacon in heavy large skillet over medium heat until crisp. Using slotted spoon, transfer bacon to paper towels. Pour all but 3 tablespoons fat from skillet. Add shallots to skillet and sauté over medium heat until golden, about 2 minutes.
  • Drain lentils, discarding onion and bay leaves. Add reserved bacon, lentils, and thyme to shallots. DO AHEAD: Lentils can be made 2 hours ahead. Let stand at room temperature. Rewarm over medium heat, stirring often.
  • For scallops:
  • Bring cider reduction to simmer. Whisk in 5 tablespoons butter, 1 tablespoon at a time. Keep warm.
  • Season scallops with salt and pepper. Melt 1 tablespoon butter with oil in heavy large skillet over medium-high heat. Add scallops and cook until brown, about 2 minutes per side.
  • Divide lentils among 6 plates. Arrange 3 scallops atop lentils on each plate. Drizzle cider reduction over scallops and around lentils. Drizzle warm mascarpone cream over.

Sweet scallops nestled in a dreamy, creamy cauliflower purée make a simple but elegant dish. Crisped capers add just the right bit of briny pop.

1/2 cup heavy cream
1-1/2 tsp. fresh thyme leaves
1/2 large head cauliflower, cut into 2-inch florets (about 3-1/2 cups)
Kosher salt
1 tsp. fresh lemon juice; more to taste
1/8 tsp. cayenne; more to taste
3 Tbs. canola oil; more as needed
1/4 cup drained capers, patted dry
1/2 tsp. finely grated lemon zest
1-1/4 lb. dry sea scallops, side muscle removed
1 Tbs. unsalted butter; more as needed
1 Tbs. finely chopped fresh flat-leaf parsley

Steps:

  • Position a rack in the center of the oven and heat to 350°F. Line a large rimmed baking sheet with a clean kitchen towel.
  • In a 2-quart saucepan, bring the cream and 1 tsp. of the thyme to a simmer over medium heat. Reduce the heat to low, and cook until reduced to about 1/3 cup, 7 to 9 minutes.
  • In a wide pot fitted with a steamer basket, bring about 2 inches of water to a boil. Add the cauliflower and season with 1/2 tsp. salt. Cover and steam until just tender, 8 to 10 minutes.
  • Transfer the cauliflower to the prepared baking sheet and let dry for a few minutes. Remove the towel, letting the cauliflower fall onto the baking sheet, and bake the cauliflower until dry but not browned, 10 to 15 minutes. Transfer to a blender, and add the cream, lemon juice, 1/2 tsp. salt, and the cayenne. Blend until smooth. Season to taste with salt, lemon juice, and cayenne. Keep warm.
  • Heat 2 Tbs. of the oil in a medium skillet over medium-high heat. Add the capers and the remaining 1/2 tsp. thyme, cover with a splatter shield (if you have one), and cook, stirring occasionally, until the capers are golden and puffed, 2 to 3 minutes. Add the lemon zest, cook for just a few seconds, and then, using a slotted spoon, transfer the capers, thyme, and zest to a paper-towel-lined plate.
  • Pat the scallops dry. Heat a large cast-iron or other heavy-duty skillet over medium-high heat until very hot. Add the remaining 1 Tbs. oil and the butter. Season the scallops with salt. Working in batches if necessary to keep from crowding, cook the scallops, undisturbed, until very well browned on one side, 2 to 3 minutes. Flip and cook until just barely cooked through, 2 to 4 minutes more, depending on size. Transfer to a plate. Repeat, if necessary, wiping out the pan and adding more butter and oil as needed.
  • Divide the cauliflower purée among serving plates, and top with the scallops. Garnish with the capers and parsley, and serve.

4 cups balsamic vinegar
1/4 cup granulated sugar
1 pound parsnips, peeled and chopped into even pieces
2 cups heavy cream
Salt and pepper
1 1/2 pounds large scallops (preferably U-8 or U-10)
4 tablespoons extra-virgin olive oil
5 ounces baby carrots, halved lengthways
4 ounces (1 stick) unsalted butter
4 sprigs fresh thyme
2 cups micro arugula or baby arugula
Lemon juice, for garnish
Truffle oil, for garnish

Steps:

  • For the balsamic reduction: Combine the balsamic vinegar and sugar in a medium saucepan. Bring to a boil, reduce the heat and simmer until reduced by three-quarters of its original volume. Set aside to cool.
  • For the parsnip puree: place the parsnips in a heavy-bottomed saucepan, add enough heavy cream to cover and bring to a slow boil. Reduce the heat and simmer until the parsnips are cooked. Place in a blender and process until smooth. Season to taste with salt and pepper.
  • Next, carefully remove the connective tissue found on the side of each scallop, if applicable. Pat dry with a paper towel and season both sides with salt and pepper. In a small saute pan, heat 2 tablespoons of the olive oil over high heat to smoke point, then place half of the dry, seasoned scallops in the pan, being careful to not splash the oil. When the scallops are golden brown and have released from the pan, turn over and sear on the opposite side. Add half of the carrots, half of the butter and half of the thyme to the pan. When the butter begins to foam, lower the heat and carefully angle the pan so the butter is to one side, and baste the scallops while they finish cooking. Repeat the process with the rest of the scallops in a new pan or quickly rinse the previous pan.
  • In a bowl, mix the arugula with a touch of lemon juice, truffle oil and salt.

4 large shucked diver scallops
4 large sea urchins for sauce to put on scallops
1 dehydrated scallop roe sac for sauce to put on scallops
4 sprigs fresh tarragon
2 finely chopped medium size shallots
3 tablespoons 35 percent whipping cream
4 tablespoons white wine vinegar
1/2 cup crisp acidic white wine
1/2 cup fish stock
250 g sea greens
1 large parsnip, peel and rough chopped
2 bay leaves
5 cups 2% milk
2 tablespoons honey
1 pinch kosher salt
1/2 lb unsalted butter (diced and cold)

Steps:

  • For the beurre blanc:.
  • In a medium sauce pot, simmer shallots, white wine vinegar and tarragon for 3-4 minutes.
  • Add white wine and fish stock, continue to reduce by half and strain.
  • In a medium sauce pot, slowly add a ¼ lb of butter to the mixture until emulsified.
  • With a hand held blender, puree the sea urchin and whipping cream to the emulsified mixture.
  • Season to taste, with salt and pepper.
  • In a large fry pan over medium heat, pan sear scallops 3-4 minutes.
  • Assemble ingredients in a scallop shell.
  • For the parsnip puree:.
  • In a medium size pot, cook chopped parsnip with milk, honey, bay leaf and a pinc of salt for 15-20 minutes.
  • Strain and puree in a food processor, slowly adding 3 T of butter.
  • Pass through tamis to remove any fibrous strands.

5 tablespoons olive oil, divided
1 tablespoon grated lemon peel
1 tablespoon minced peeled fresh ginger
3 medium red onions, thinly sliced
1/3 cup dry red wine
1/4 cup red wine vinegar
2 tablespoons golden brown sugar
Chopped fresh chives

Steps:

1/4 c each soy sauce, mirin & lemon juice
2 Tbsp finely grated ginger
2 clove garlic minced
2 Tbsp honey
SCALLOPS
1 lb sea scallops patted dry
salt and pepper
2 Tbsp vegetable oil
micro cilantro for garnish

Steps:

  • 1. For the sauce: Mix all ingredients together in a saucepan. Bring to a boil. Reduce heat to simmer and simmer until thickened and reduced. About 10 minutes
  • 2. For the scallops: Season the scallops with salt and pepper. Add oil to a hot pan and sear the scallops about 2 minutes per side.
  • 3. Spoon sauce onto a plate. Top with scallops and micro cilantro. Serve immediately.

2 pounds (4 large) ripe, black, plantains
Ice water
3 cups water
1/4 cup sweet butter
1 tablespoons finely chopped garlic (2 large cloves)
3 tablespoons chopped scallions (3 large)
2 pounds U10 scallops - large, dry, day boat quality
1/3 cup olive oil
1/2 cup flour
2 tablespoons Spanish Pimenton (smoked, hot paprika)
8 ounces dry-cured Spanish chorizo sausage, thinly sliced
1/2 cup white raisins, soaked in hot water for 10 minutes and drained
3 sprigs cilantro leaves only
1/2 cup shelled pistachio nuts (about 1 ounce)
Salt and pepper

Steps:

  • Cut off the ends of the plantains and slice a slit into the skin on two sides. Cut the plantains into 1 inch pieces, soak them in ice water for 10 minutes. Remove from the water and use a sharp knife to peel the skin away. Place the plantain pieces in a pot with 3 cups water and bring to a boil. Reduce heat and simmer for 15 minutes, then drain, reserving the cooking liquid, and mash the plantains in a potato ricer or with a potato masher. Add a bit of cooking liquid to loosen, then add the butter, garlic, and scallions. Season with salt and pepper and hold, keeping warm, until ready to use.
  • Clean the scallops of the connective muscle, and rinse lightly. Drain and pat dry.
  • Combine the flour, pimenton, paprika, salt, and pepper in a wide, shallow bowl.
  • Heat the olive oil in a heavy-bottomed skillet over medium heat. Dust the scallops in the flour-pimenton mixture, add them to the skillet and sauté until lightly browned on one side. Turn and cook the second side. Add the chorizo and cook several more minutes. Stir in the drained raisins.
  • Place a spoonful of mashed plantains on each plate, and top with several scallops and some of the raisins and chorizo. Sprinkle with cilantro leaves and pistachios and serve.

  • 1. Prepare scallops: Chop the fresh herbs. Season each scallop with a sprinkle of olive oil, salt and the herbs use a knife to draw a grid or stripe pattern on the scallops flat surfaces, for an aesthetic finish. Set aside for 10 mins, while preparing the vegies 2. To make the vegie strings: Julienne the zucchini, peppers and leeks and saute them in the oil with the shallots Set aside. 3. To make saffron sauce: In a separate saucepan heat the heavy cream with the saffron. Bring to a boil. lower heat to a simmer and let reduce for 12 mins or until desired consistency is reached. Season with salt at the end to taste. Lesss salt is more, since the scallops will also be seasoned. 4. To cook scallops" Pan sear the scallops for one minute on each side over high heat. 5. To assemble: Spoon a few tablespoons of saffron sauce in the center of each plate. Lay a quarter of the vegie strings in a small bundle on top of the sauce. Arrange 3 scallops in a triangle on top of each vegie bundle Garnish with a sprig of rosemary in middle standing up

PAN-SEARED SEA SCALLOPS IN HERB BUTTER WINE SAUCE

If you love seafood, this is for you! Plump, juicy, pan-seared sea scallops are one of my personal favorites. These are great served as an appetizer or as a main course with a green salad and a baked potato. If at all possible, use fresh scallops that haven't been treated with an artificial moisture preservative. If not, you may use thawed, previously-frozen sea scallops, just be sure to choose the kind without any other ingredient listed on the package. As for the sauce, less is more because you want to let the flavor of the scallops shine. Add a pinch of fleur de sel to finish, if desired.

FOR THE HERB BUTTER (ENOUGH FOR DOUBLE RECIPE):
8 tablespoon(s) (1 stick) unsalted butter, room temperature
1 tablespoon(s) finely minced shallots (see note)
2 teaspoon(s) grated lemon zest (see note)
1 1/2 teaspoon(s) minced lemon thyme (see note)
1 1/2 teaspoon(s) minced fresh flat leaf parsley
1 teaspoon(s) 1 tsp white wine (optional)
FOR SEARING THE SCALLOPS AND DEGLAZING PAN:
1/2 tablespoon(s) olive oil
1/2 tablespoon(s) unsalted butter
2 pound(s) sea scallops
- fine sea salt (to taste)
1/2 cup(s) dry white wine

Steps:

  • Using a fork or electric mixer, beat one stick of butter until fluffy.
  • Add remaining herb butter ingredients (shallots, zest, thyme, parsley and wine.) Mix well and set aside.
  • Pat scallops dry with paper towels and lightly season with salt.
  • In a large skillet (I usually use nonstick), over medium-high heat, melt 1 1/2 tablespoons butter and add oil.
  • Place 1/3 to 1/2 of the scallops in hot skillet (sear in 2 or 3 batches, don't overcrowd) and cook for 2 minutes (approximately) on each side, until lightly browned on each side and slightly opaque in the center. (Be sure to watch the heat! Better undercooked than overcooked!)
  • Remove to a warm plate and repeat searing until all scallops are cooked, adding a bit of extra oil as needed.
  • Reduce heat to medium and add 1/2 cup dry white wine to skillet to deglaze; simmer for 1-2 minutes.
  • Remove from heat and add half of the herb butter; stir until melted and combined; drain off, and into skillet, any juices that have accumulated on the plate of cooked scallops and return skillet to medium heat for 30 seconds. Taste for seasoning.
  • Pour a small amount of sauce on plate and arrange scallops on top. Garnish with chopped parsley or chives. Serve immediately.
  • Cover and refrigerate remaining unused herb butter.
  • Note: If you don't have shallots, use chives. No zest? Leave it out. No lemon thyme? Use a pinch of dried thyme or leave it out. It will be fine.
