6 (8-ounce) pompano fillets, skin on
Salt and white pepper
1 to 2 tablespoons oil, plus 1 to 2 tablespoons more, if needed
1 1/2 pounds jumbo lump crabmeat, picked over
10 ounces (2 1/2 sticks) butter, melted
1 ounce parsley leaves, chopped
Parsley sprigs, for garnish
3 lemons, halved

Steps:

  • Season the fish with salt and white pepper. Heat oil in a large skillet or grill pan over medium-high heat. Add fish, skin side up, and cook for about 3 minutes or until browned. (You may have to cook fish in 2 batches, add more oil as necessary.) Flip fish and cook for an additional 3 minutes or until cooked through. Keep warm.
  • While the fish is cooking, heat the crabmeat and melted butter in another large skillet over medium heat. Season with salt and pepper. Cook just until crabmeat is hot.
  • To serve, place a pompano fillet in the center of each plate, and top with 3 ounces of crabmeat. Garnish with chopped parsley, parsley sprigs, and a lemon half.

1/2 teaspoon kosher salt
2 tablespoons whole unsalted butter
2 teaspoons chopped shallots
12 baby heirloom tomatoes, halved

Steps:

  • Heat the oil in a medium saute pan over high heat. Sprinkle the fish evenly with the salt. Place in the pan skin-side down and cook translucent. Flip, add the butter and let brown. Add the shallots, tomatoes and red onions. Saute until the shallots are translucent and the tomatoes are blistered. Baste the fish with the juices and butter and remove from the pan. Place the fish on a plate and spoon the onion and tomato over and around the fish.

1 1/4 pounds Pompano, cleaned
All purpose flour (for dusting)
1 egg
Clarified butter
6 ounces jumbo shrimp
6 ounces mushrooms
1 lemon
1/4 cup dry sherry
1 level teaspoon fresh chives
2 teaspoons salted butter
2 teaspoons all purpose flour

Steps:

  • Rinse fish and pat dry. Baste the grill rack with clarified butter. Break the eggs onto a platter and mix with the clarified butter to form an egg wash for the fish. Preheat the broiler. Dust the fish with flour. Brush with egg wash on both sides. Place under broiler and broil for 5 minutes. Remove from the oven turn the fish over and brush and brush with egg wash. Return to the broiler and broil until golden brown. Remove the shell and then the sand track from the shrimp and cut them in half lengthwise. Wash the mushrooms, dry and cut into 1/2-inch slices. Saute shrimp and mushrooms a few minutes in a hot pan coated with a little clarified butter. Squeeze about 2 teaspoons of lemon juice over the mixture and sprinkle with salt and pepper. Add 2 ounces Sherry and ignite. Wash, dry and chop the chives. Add to shrimp-mushroom mixture.
  • Blend the 2 teaspoons of salted butter with the 2 tablespoons of flour to form a "Beurre Manie." Add butter-flour mixture to the pan and stir until well combined. Heat a serving platter. Slide fish onto platter, cut in half from the head to the tail and pour shrimp-mushroom sauce over fish.

1/4 cup Armagnac
2 tablespoons maple syrup
1 1/2 tablespoons cranberry syrup
2 sprigs fresh thyme, chopped
Pinch freshly ground coriander
Pinch freshly ground pepper
16 ounces foie gras of duck, sliced into scallops
1 tablespoon butter
1 shallot, chopped
1/2 cup white wine
2 1/2 cups duck broth or chicken stock
1/4 cup maple syrup
2 tablespoons chopped fresh cranberries
1/2 lemon, juiced
Salt and pepper

Steps:

  • Combine the Armagnac, maple syrup, cranberry syrup, thyme, coriander, and pepper. Marinate the foie gras scallops for 6 to 8 hours in the refrigerator. Remove the foie gras from the marinade and reserve marinade.
  • In a very hot saute pan, pan-fry foie gras for approximately 1 minute each side until golden brown. Salt lightly and place on a serving platter. Cover with plastic wrap. Refrigerate. Remove from refrigerator 20 minutes before serving to bring to room temperature.
  • In a saute pan over medium-high heat, add the butter and melt. Add the shallots and saute until translucent, about 2 minutes. Deglaze with white wine and cook until the liquid is reduced by half. Add the duck broth and reduce by 1/3. Add the reserved marinade, maple syrup, and fresh cranberries. Reduce until mixture thickens and then puree until velvety smooth. Add the lemon juice and salt and pepper, to taste.
  • Pour sauce over foie gras scallops and serve.
