Creamy Pan-Roasted Scallops With Fresh Tomatoes image

In this homage to a classic dish at Grand Central Oyster Bar in New York, scallops are quickly poached in a creamy, piquant tomato sauce that's spiked with Worcestershire and celery seed. If you want to work a little ahead, you can make the sauce through Step 2, and leave it in the pan, covered for an hour or two. Reheat it before adding the scallops in Step 3. Then serve the scallops right away, with some bread or rice to soak up every last drop of the herby, savory sauce.

1/4 cup thinly sliced shallots or red onion
Pinch of celery seeds
Salt and black pepper
2 cups chopped fresh tomatoes
2/3 cup dry white vermouth, dry white wine or clam juice
4 teaspoons Worcestershire sauce
1 cup heavy cream
2 pounds sea scallops, patted dry
1/2 cup chopped fresh chives, plus more for garnish
1/2 cup chopped celery leaves or parsley leaves, or a combination, plus more for garnish

Steps:

  • Heat a large skillet over medium-high and add the butter, letting it melt. Add shallots, celery seeds and a pinch each salt and pepper, and cook until the shallots are tender and opaque, about 3 to 5 minutes. Stir in tomatoes. Bring to a simmer, stirring occasionally, and cook until jammy, 9 to 13 minutes.
  • Increase heat to medium-high and stir in vermouth. Cook until about a third of the liquid evaporates, about 5 minutes. Add Worcestershire and cream, and simmer, reducing heat if needed and stirring occasionally, until sauce thickens enough to coat a spoon, 5 to 7 minutes.
  • Season scallops with salt and pepper, and add to the pan. Cook, uncovered, until scallops are just cooked through and opaque, 3 to 6 minutes, depending on the size of the scallops. Stir in chives and celery leaves. Serve immediately, garnished with more chives and celery leaves.

1 pound fingerling potatoes, washed and sliced lengthwise
1/4 cup olive oil
Salt and freshly ground black pepper
1 pound asparagus, washed, tough ends removed
1 tablespoon extra-virgin olive oil
12 to 16 jumbo sea scallops, or approximately 1 1/2 pounds
Salt and freshly ground black pepper
9 tablespoons clarified butter
1 1/3 ounces hazelnuts, toasted and coarsely chopped
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley leaves, plus more for garnish
1 or 2 drops white truffle oil, optional

Steps:

  • For the potatoes: Preheat oven to 400 degrees F.
  • In a large bowl, toss the fingerling potatoes with the olive oil and season with salt and pepper, to taste. Add the potatoes to a roasting pan and bake for about 25 minutes. Test with fork for tenderness. Remove them from oven to a bowl and set aside.
  • For the asparagus: Bring a large pan of salted water to a boil over high heat. Add the asparagus and blanch until they become bright green, about 2 minutes. Remove and plunge into an ice bath or rinse under cold water.
  • For the scallops: Heat a nonstick saute pan over medium heat until very hot and add the olive oil. Season scallops lightly with salt and pepper. When oil is hot, add the scallops and saute the first side until golden brown, approximately 2 minutes. Turn the scallops over, and after 1 minute, add the butter and the hazelnuts. When scallops are seared, transfer them to a plate and keep warm.
  • Add lemon juice to the butter and hazelnuts. When the butter has browned add the 2 tablespoons of the chopped parsley. (Add 1 or 2 drops of white truffle oil to the butter, if desired.)
  • Toss the potatoes and asparagus in the brown butter until heated through. Transfer the vegetables to a serving platter. Position the scallops over the vegetables and garnish with chopped parsley. Drizzle remaining brown butter over scallops and serve.

Steps:

  • Place basil, spinach, and pine nuts in the bowl of a food processor and pulse to chop. Add 2 tablespoons olive oil in a steady stream until pesto is creamy, stopping to scrape down sides. Stir in 1 tablespoon Parmesan cheese and black pepper with a spoon.
  • Heat chicken stock and water in separate saucepans over medium heat until simmering, about 5 minutes; reduce heat, cover, and keep warm.
  • Melt 2 tablespoons butter in a large saucepan over medium heat until foamy. Add shallots; cook and stir until soft, about 5 minutes. Add rice and saffron; stir until coated with butter. Pour in wine and simmer until absorbed, about 5 minutes.
  • Pour enough warm stock into the saucepan to barely cover the rice; cook and stir until absorbed. Continue adding stock, and then water, stirring constantly, until each addition is absorbed and rice is tender yet firm to the bite and risotto is thick and creamy, about 20 minutes.
  • Spoon pesto into risotto. Remove saucepan from heat; stir in 1/3 cup Parmesan cheese.
  • Pat scallops dry with paper towels and season with salt and pepper.
  • Melt 2 tablespoons butter with 1 tablespoon olive oil in a skillet over medium heat. Arrange scallops in the hot skillet and cook, without touching, until deep golden brown underneath, about 2 minutes. Flip each scallop and sear on the second side until golden brown, about 2 minutes more.
  • Serve scallops over risotto.

I found this recipe from the website of the Hell's Kitchen TV show and made only one or two small changes. It's as fancy as anything they serve on the show and my boyfriend said it was the best thing I'd ever cooked for him! Of course fresh scallops are not cheap but this is an excellent dish for a special or romantic occasion where you want to impress. This is a small portion so be sure to supplement with a hearty side dish. Alternatively, this can be served as an appetizer.

6 medium fresh scallops
1 large yam (or 2 sweet potatoes)
1/2 cup walnuts
5 teaspoons olive oil
2 teaspoons granulated sugar
3 teaspoons red wine vinegar
3 teaspoons walnut oil
3 teaspoons chopped shallots (or green onion)
2 cups baby arugula leaves
1 tablespoon soft butter
salt
pepper

Steps:

  • Preheat oven to 350°F.
  • For the puree: Wash the yam and towel dry. Puncture it with a fork in several places, season it with salt and pepper, wrap it in a damp paper towel and microwave on high for approximately 3 minutes (until the center is cooked and soft). Cut the cooked yam in half long ways and scoop out the flesh. Puree in a food processor or with a blender. Season with butter, salt, and pepper to taste. Set aside.
  • For the vinaigrette: Place walnuts on a baking sheet and cover with the granulated sugar. Bake at 350 for 7-8 minutes. Remove from oven and cool. Then, in a bowl, whisk together the walnut oil, 4 tsp of olive oil, vinegar, walnuts, and shallots. Season with salt and pepper and set aside.
  • For the scallops: Season the scallops with salt and pepper on both sides. Heat a non-stick pan on high heat (7 out of 10 on my stove) with the remaining 1 tsp of olive oil. Sauté the scallops a few minutes on each side until golden brown. Total sauté time should be about 6 minutes.
  • Once scallops are ready, quickly toss 2 tsps of the vinaigrette with the arugula leaves in a separate bowl.
  • For assembly: Spread the puree onto each plate into a flat pancake (you can warm the puree in the microwave if it has become cold). Top the puree pancakes with a small pile of seasoned arugula leaves. Then place 3 sautéed scallops on top of the leaves. Finish each plate by drizzling the vinaigrette over the top, drizzling around the plates edge for a "gourmet" finish!

Steps:

  • Heat the oil in a large skillet over high heat. Season both sides of the scallops with salt, to taste. Add the scallops to the hot pan, and don't touch! Let them caramelize until golden brown, about 3 minutes, and then flip. Add the butter and coriander and allow the butter to melt. Begin to baste the scallops, spooning the melted butter along the tops of the scallops, so the scallops barely cook through, about 2 to 3 minutes. Remove from the heat.
  • Build your cilantro salad by adding cilantro leaves, pickled onions and pickled chiles to a medium mixing bowl. Add the lime juice and extra-virgin olive oil and mix to combine.
  • Put a couple of spoonfuls of creamed corn down on each plate, then top it with 3 scallops. Finish with a heaping spoonful of cilantro salad. Drizzle with a little extra-virgin olive oil and serve immediately.
  • In a medium-saucepan, add corn stock and bring to a simmer.
  • Heat a large saucepan over medium heat and melt the butter. Add the shallots, a pinch of salt, and let sweat, cooking until the shallots are a bit translucent. Add the garlic, a bit more salt and cook about 1 minute more. Add the corn kernels and continue to cook for a few minutes, adding a touch more salt as you go. Keep stirring so the mixture combines together and nothing sticks to the bottom of the pan. Using a ladle, add some of the warmed corn stock, about 1 1/2 cups, adding more if it seems dry, and stir to combine. Season with a little cracked pepper. Let the corn mixture cook for about 5 to 7 minutes. Stir in the lime zest and fold in the creme fraiche. Taste for seasoning and adjust, if necessary.
  • Corn Cob Stock: Cut the kernels from the cobs and reserve the kernels for another purpose. Toss the cobs into a large pot with the onion, garlic, thyme, coriander, stock and salt. Bring to a boil, over medium heat, then lower the heat and simmer for 45 minutes. Strain the liquid through a fine mesh strainer, discarding the solids. You should have about 4 cups.
  • Put the sliced chiles in a medium mixing bowl.
  • Add all the pickling liquids and spices to a medium saucepan and bring it to a boil over medium heat. Pour the hot liquid over the sliced chiles and set sit for about 20 minutes. Drain the chiles and discard the pickling juice and spices. Use right away or store in a covered container in the refrigerator for a couple weeks.
  • Pack the onions into 2 (1-quart) jars and cover with enough water to come within 1/2-inch of the rim. Pour the water out into a measuring cup. Note the volume, pour off half of the water, and replace it with vinegar. Add 2 tablespoons sugar and 2 tablespoons salt for every 3 cups of liquid.
  • Pour the vinegar mixture into a nonreactive saucepan, add the mustard seeds, red pepper flakes, coriander seeds, black peppercorns, garlic, and bay leaves, and bring to a boil over high heat. Allow the liquid to boil for 2 minutes, and then remove it from the heat.
  • Pour the hot liquid into the jars to cover the onions and screw on the lids. Refrigerate for up to 1 month.

1 c. Red quinoa
3 c. shrimp stock*
¼ c. dried porcini mushrooms
¼ c. white wine
4 Tbsp cold unsalted butter

½ c. diced parsnips
1 1/2c. frisee coarsely chopped
12 chives
For Limonata sauce:
3 roasted garlic clove smashed and chopped fine
¾ c. fresh lemon juice
Zest of 1 lemon
1 ¼ tsp salt
4 oz. canola oil
4 oz. extra virgin olive oil

Steps:

  • For Limonata Sauce: Whisk all ingredients together Make limonata a head and refrigerate. To Prepare Quinoa: Reconstitute dried porcini mushrooms with 1/2c. hot water. Set aside for 10 minutes. Strain off water. Reserve. Chop porcini mushrooms. Set aside. Rinse quinoa until water runs clear. Place in medium saucepan: Bring 2 c. water, 2 c. shrimp stock & 1/4c.white wine to a boil. Season lightly with salt. Add quinoa. Cook for about 10minutes. Add chopped porcini mushrooms and the reserved porcini water to quinoa. Continue to cook quinoa for about 10 minutes more until tender. Keep warm. Prepare Scallops: Season with salt and pepper. Sear scallops on both sides. Place in 400 degree oven for about 4 minutes. Saute diced parsnips. Season with salt. Add remaining cup of shrimp stock to parsnips. Add quinoa and frisee to pan. Add cold butter. Stir to blend in butter and heat the quinoa. Add Thai fish sauce and 1 Tbsp limonata. Add chives.(reserve a few for garnish) Divide quinoa among 4 plates. Place scallops on top of quinoa. Dress each scallop with a splash of limonata . 2 pounds large diver scallops (U-10's)
6 cloves garlic cloves, crushed
8 to 10 each 8 to 10 each fresh sage leaves - large, divided
2 -3 tablespoon coarsely chopped fresh parsley ...pluse some for garnish
6 tablespoons unsalted butter, divided
1/4 cup extra virgin olive oil + some for sautéing the scallops
1/2 cup sweet red vermouth ...good quality Martini & Rossi Rosso
2 cups acorn squash - one large squash
1 tablespoon brown sugar firmly packed
1 tablespoon Herbes de Provence
Dash ground nutmeg - for the pasta sauce
1/8 teaspoon ground nutmeg - for the squash
1/8 teaspoon ground white pepper
Dash cayenne pepper ...just a dash
1 cup cracker meal - very fine mesh for dusting the scallops

Steps:

  • Prepare and Bake the Acorn Squash 1 Preheat oven to 350 degrees F. 2 Cut the squash in half lengthwise and remove the seeds. Place face-up on an oven safe baking dish such as a pie plate. 3 Melt 1/3 of the butter in a microwave (use the defrost setting). Tightly roll 2 medium to large sage leaves lengthwise and finely julienne. Add the julienne cut sage, brown sugar, Herbes de Provence, nutmeg for the squash, ground white pepper, and cayenne pepper to the melted butter. Baste the squash with the butter mixture and bake at 350 degrees until fork tender but NOT mushy, about 35 to 40 minutes. Do not rely solely on recommended cook times. The size and ripeness of the squash and individual oven calibration can significantly change coking times. See TIPS. 4 Allow the squash to cool completely and then carefully remove the fruit from the skin with a large serving spoon. Carefully dice the squash with a large chef's knife into 3/4 inch cubes. Set aside or refrigerate if preparing the squash in advance. Prepare the Pasta Sauce 1 Add 2/3 of the butter and olive oil to a large sauté or frying pan. Smash the garlic with a chef's knife to remove the skin (leave whole) and add to the butter-oil mixture. Sauté over medium heat until the garlic is golden brown (about 5 minutes). Add the vermouth. Cook until the volume is reduced by about 50%. Remove from heat. Julienne the remaining sage leaves as before and add to the butter mixture. Set aside. Prepare the Scallops 1 Dry the scallops thoroughly with paper towels. This prevents splatter, and a mess, when sautéing. 2 Place the cracker meal in a large plastic bag, add the scallops and shake vigorously. Remove the scallops to a plate and shake-off excess cracker meal. Set aside. This may have to be done in batches. Cook the Pasta 1 Bring 4 quarts of salted water to a boil in a large pot. When the water is vigorously boiling, drop the past and cook for 4 minutes if using the recommended pasta, otherwise follow the manufacturer's cooking recommendation. Drain the pasta and set aside. See TIPS. Sauté the Scallops 1 Add a couple of tablespoons of olive oil to a large frying or sauté pan over medium high heat. When the oil is hot (shimmering), quickly add the scallops without over-crowding. Sauté until lightly brown to golden brown and then turn until lightly brown on the other side (about 1.5 minutes per side). DO NOT over cook scallops. They should be rare and still translucent in the center. See recipe photo. Remember the scallops will continue to cook when removed from the pan. Remove the scallops to a room temperature plate and set aside. Finish and Assemble the Dish 1 Chop the parsley. 2 Re-heat the sauce over medium heat and add the squash. When hot add the drained pasta. Stir to warm and coat the pasta. Stir in the parsley and plate the pasta. Arrange the scallops over the pasta. Finish with a drizzle of extra virgin olive oil and grated parmesan if desired. Serve Servings: 4 Degree of Difficulty: Moderately difficult Oven Temperature: 350°F TIPS: Preparing and baking the squash ahead of time makes this dish much easier. Up to a day in advance is fine. The cooking time for the squash can be significantly reduced by microwaveing the raw squash on high for a few minutes before basting and baking. We strongly recommend using Cipriani Pappardelle. This pasta is extremely thin and very delicious. It's a bit hard to find. We found the best price is at The Fresh Market. See their website for locations. It can also be ordered from Fresh Market via the internet at http://www.freshmarket.com/online-market/detail.aspx?ID=160 ; or from Amazon.com, but the price is substantially higher. Cipriani Pappardelle comes in 250 gram boxes, 8.82 ounces. A suitable alternative pasta may be very thin egg noodles found in pasta section of most grocery stores. We recommend only diver scallops. The best we've ever found come from Costco. They are available weekends from their seafood kiosk or anytime frozen in 2 pound bags. They are day-boat scallops without any preservatives.

1 cup dry white wine

1/4 cup orange juice
1/2 cup whipping cream
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2 inch cubes
1 teaspoon Sherry wine vinegar
2 tablespoons chopped fresh dill
18 large sea scallops

Steps:

  • Peel and remove pith from oranges. Cut between membranes to release segments. Preheat oven to 350. Toss beets with 1 1/2 tbsp. of the oil on a rimmed baking sheet to coat. Salt and pepper. Roast until tender, stirring occasionally, about 50 minutes. Combine wine, shallots, and juice in a small saucepan over medium-high heat. Boil until reduced to 1/3 cup, about 10 minutes. Add cream; reduce heat and simmer until thickened, about 5 minutes. Strain and discard solids. Return liquid to same saucepan over med-low heat. Add butter, several pieces at a time, and stir until melted (do not boil). Whisk in vinegar. Season with salt and pepper. Stir in dill. Keep warm. Heat remaining oil in large nonstick skillet over high heat. Sprinkle scallops with salt and pepper. Add scallops to skillet and cook until brown on both sides and just opaque in center, about 2 1/2 minutes in total.

Coriander Spaetzle
Ingredients
1 1/2 cups all-purpose flour
Pinch of kosher salt
2 eggs
½ cup milk
1 teaspoon ground coriander
Zest of 1 lime
Extra-virgin olive oil
Directions
Bring a large pot of liberally salted water to a boil over medium heat.
In a small bowl, whisk together the eggs, milk, coriander, lime zest and milk and mix well.
In a large bowl, add flour and make a hole in the center. Add a pinch of kosher salt. Using a fork, gradually combine the milk/egg mixture with the flour. Mix until they're just combined.
Place the batter in a colander over the boiling water. Using a rubber spatula or a spaetzle maker, push the batter through a colander into the boiling water.
Boil the spaetzle for 2 to 3 minutes or until firm. Drain the spaetzle and place in a medium bowl. Add some olive oil, toss to coat evenly and let cool.
Dish assembly
12 sea scallops, washed and placed on a dry towel
1/4 cup olive oil
1 tablespoon butter
3 cups Olathe corn, kernels sliced off the cob
1/2 cup shallots, diced
1 teaspoon garlic, chopped
Cooked spaetzle
1 small handful of fresh herbs, preferably cilantro
Jalapeno rings
Salt and pepper to taste

Steps:

  • Directions 1. Liberally salt an pepper scallops. 2. Heat a large pan, preferably a cast-iron skillet, until it's smoking. And 1/4 cup olive oil and place scallops in pan and sear on one side. Once they're golden, turn down the heat, flip them over, and finish with a tablespoon butter. Cook until both sides are golden. Remove scallops from pan and drain on a paper towel. 3. In the same pan, over high heat, add the cooked spaetzle and cook until golden brown (don't shake the pan). 4. Add corn, garlic, shallots and salt and pepper to taste. Saute spaetzle for about 3 minutes. 5. Distribute spaetzle and scallops equally on four plates. Garnish with fresh herbs

2 cups chicken stock
for beurre blanc:
2 tablespoons orange vinegar
1/3 cup white wine
1/3 cup freshly squeezed orange juice
2 tablespoons chopped shallots
1/2 teaspoon salt
pinch white pepper
for risotto:
2 tablespoons butter
2 shallots, minced
1 cup Arborio rice
1/2 cup dry white wine
Juice from one blood orange
freshly grated zest of one blood orange
1 pound large scallops, rinsed and drained, at room temperature
1 tablespoon vegetable oil
to finish:
3-4 tablespoons cold unsalted butter, in chunks
1 tablespoon orange vinegar, or lemon juice
dash of hot pepper sauce (optional)
freshly ground pepper, to taste

Steps:

  • freshly ground pepper, to taste Preheat oven to 450°F. In small saucepan, heat chicken stock just to simmer; cover and keep hot. While the stock is heating, prepare the beurre blanc base: Make infusion with vinegar, wine, orange juice, shallots, salt and pepper. Reduce to 3 tablespoons. Remove from heat and set aside. In medium saucepan over medium -high heat, melt 2 tablespoons butter. Add shallots, sauté just until they become translucent, and about 3 minutes. While stirring, add rice, pouring it in "like rain," so that each grain is separate. Continue sautéing and stirring about 4 minutes more. Rice will become slightly more opaque. Add 1/2 cup wine, orange juice and zest from one orange, stirring. When you can see the dry pan at the bottom when you drag the spoon across, add about 1/4 cup of the hot chicken stock. It is important not to let the rice dry out at this point. Continue cooking, stirring and adding stock until all of the stock has been added. This will take about 20 minutes. Meanwhile, pat the scallops dry. Heat oil in heavy oven-proof skillet over high heat. Add scallops, cook two minutes. Turn. Remove pan from heat and place in the preheated oven. Cook 3-4 minutes longer, until scallops are opaque and just cooked through. Remove from the pan, and keep warm. Rewarm the beurre blanc base over low heat and whisk in butter, chunk by chunk. Taste risotto for doneness. Stir in the orange vinegar or lemon juice. Correct the seasonings and add hot pepper sauce if desired. To serve, scoop risotto into centers of four large bowls. Top with scallops. Drizzle Orange Beurre Blanc around perimeter. Serve immediately.

3 tablespoons unsalted butter
1/2 cup fresh bread crumbs, preferably from brioche
Salt and freshly ground pepper
1 tablespoon vegetable oil
1 1/2 pounds bay scallops
4 large white mushrooms, thinly sliced
1 large shallot, thinly sliced
1 tablespoon fresh lemon juice
1/4 cup water
1 tablespoon chopped parsley

Steps:

  • In a large skillet, melt 1 tablespoon of the butter. Add the bread crumbs, season lightly with salt and pepper and cook over moderate heat, stirring, until the crumbs are golden brown and crisp, about 3 minutes. Scrape the crumbs onto a plate. Wipe out the skillet. Add the oil and heat until shimmering. Add 1 tablespoon of the butter and let it melt. Add the scallops, season with salt and pepper and brown over high heat, about 2 minutes total. Transfer the scallops to a large, shallow dish. Melt the remaining 1 tablespoon of butter in the skillet. Add the mushrooms, season with salt and pepper and cook over moderate heat until their liquid is almost evaporated, about 4 minutes. Add the shallot and cook, stirring, until softened, about 3 minutes. Add the lemon juice and cook for 30 seconds. Add the water and simmer for 1 minute. Return the scallops and any accumulated juices to the skillet and season with salt and pepper. Remove from the heat and stir in the parsley. Spoon the scallops and mushrooms onto plates, sprinkle with the bread crumbs and serve.
