ROASTED HERITAGE BERKSHIRE PORK CHOPS WITH APPLE PAN SAUCE

Roasted Heritage Berkshire Pork Chops With Apple Pan Sauce image

This was love at first bite! No more dry pork chops! Now for a little background on the other white meat. Also known as: Kurobuta (in Japan) Origin and cultivation: named after Berkshire, in England, where it was raised over 300 years ago Appearance: marbled pork Flavor: richer than typical pork Recipe courtesy of NewFoodCookbook.com Cooking time is for cooking the chops, sauce ad apples.

Provided by Chicagoland Chef du

Categories     Pork

Time 30m

Yield 2 serving(s)

Number Of Ingredients 9

2 berkshire pork chops, 1 inch thick, I used 3 boneless, bone in works too
1 apple, peeled, cored, chopped
1/4 cup calvados
1/2 cup demi-glace, can use More Than Gourmet Classic French Veal Stock mixed with water to equal 1/2C
1 teaspoon sage, fresh, chopped
2 tablespoons butter, divided
1 tablespoon olive oil
salt, to taste
pepper, to taste

Steps:

  • Preheat the oven to 350ºF.
  • Pat the pork chops dry and sprinkle with salt and pepper.
  • In an ovenproof pan, put in 1 tablespoon of butter and olive oil, and on high heat, sear the pork chops for 2 minutes on each side, until nice and brown.
  • Spoon out most of the fat in the pan and put the pan in the oven.
  • Roast the pork chops for 10 minutes, until the internal temperature is 140ºF. It may take less time. Berkshire pork is best at this temperature, which is lower than the USDA recommended temperature of 160ºF. If you are a concerned person, then you are better off sticking with 160ºF. NOTE: cooking time may vary depending on thickness of chops.
  • A couple minutes before you think the pork chops are done, you can peel, core and chop the apple into little pieces.
  • Take the pan out of the oven, remove the pork chops and keep warm.
  • In the now empty pan used to roast the pork, put back on a burner on medium-high heat, and then add the apples, sage and remaining tablespoon of butter. Caramelize for a minute or two.
  • Add the Calvados and reduce by half to burn off the alcohol.
  • Add the demi-glace, any juices in the bowl from the reserved pork, and salt and pepper. Reduce for minute or two until it is nice and thick.
  • Spoon the sauce and apples over the pork chops and serve.
  • Serving suggestions: Serve with Boiled carrots and potatoes.

PAN-ROASTED PORK CHOPS WITH APPLE FRITTERS

Pan-Roasted Pork Chops With Apple Fritters image

The recipe takes a little planning. You want to brine the pork chops for a day or two before you set out to cook. This gives them a juiciness and depth of flavor you are otherwise unlikely to get from a commercially raised hog. (If you have access to a pig raised on acorns and herbs, feel free to cut corners.) Chef Josh Cohen toasts the spices he uses in his brining liquid before incorporating them. This is very much to the good of the chops and is worth the few extra moments it requires.

Time P2DT1h

Yield Serves 4

Number Of Ingredients 28

1 cup apple cider
6 tablespoons sugar
4 tablespoons kosher salt, plus more for seasoning
3 bay leaves
2 dried chiles de árbol
5 juniper berries
1 teaspoon caraway seeds
1 teaspoon mustard seeds
1 teaspoon coriander seeds
4 pork chops on the bone, approximately 1 ½ inches thick
Freshly ground black pepper
2 tablespoons neutral oil, like canola
1 tablespoon unsalted butter
2 shallots peeled and finely diced
1 teaspoon thyme leaves, chopped
2 tablespoons brandy
1 cup heavy cream
½ cup pork or chicken stock
2 teaspoons whole grain mustard
1 teaspoon horseradish, ideally freshly grated
2 cups apple cider
1 cinnamon stick
4 Granny Smith apples, peeled, cored and cut into ½-inch rounds
1 whole egg
½ cup very cold seltzer water
½ cup rice flour
½ cup all-purpose flour
1 cup neutral oil, like canola

Steps:

  • In a large bowl, mix the apple cider with 4 cups of water, the sugar and the salt. Toast the bay leaves, chilies, juniper berries, caraway seeds, mustard seeds and coriander seeds in a small pan set over medium heat until you can smell them, then add to the brine, and stir to combine. Add the pork chops, cover and place in the refrigerator to brine overnight or for up to 48 hours.
  • To pan-roast the pork chops, preheat oven to 375. Remove chops from brine, and pat dry with paper towel. Season the meat aggressively with freshly ground black pepper and a little salt. Set a large sauté pan that will fit in the oven over medium-high heat. Add the oil, and when it is shimmering, place the chops in the pan. Cook until well seared on one side, approximately 4 minutes, then turn the chops over, and place pan in the oven to finish, approximately 6 to 8 minutes. (The internal temperature of the pork, measured at the center of the chop, should be between 140 and 145 for medium rare.) Remove the meat from the pan, and allow to rest for 5 minutes or so while you make the sauce.
  • Return the pan to the stovetop, over medium heat, and add the butter, stirring and scraping to incorporate meat drippings, then add the shallots and the thyme. Cook for approximately 3 minutes, then add the brandy. Allow the mixture to reduce by half, then add the cream and the stock and reduce again, until the sauce coats the back of a spoon. Remove the sauce from the heat, and whisk in the mustard and the horseradish.
  • For the apple fritters, heat the apple cider and the cinnamon stick with a couple of inches of water in a large pot set over high heat. Add the apple rounds, and blanch for 1 minute, then remove to a towel to dry. Whisk together the egg and the seltzer until frothy, then gently mix in the flours. Put the oil in a large pan set over medium-high heat. When the oil is shimmering, dip the apple rings into the batter, and fry in the oil until golden brown.
  • Serve the pork chops with a few apple fritters and a heavy drizzle of sauce across the top. The usual accompaniment is potato-and-horseradish pierogies sautéed in brown butter, though roasted new potatoes with a topping of butter and freshly grated horseradish will answer almost as well.

PAN ROASTED PORK CHOPS WITH PEA SHOOT PESTO

Pan Roasted Pork Chops With Pea Shoot Pesto image

A pesto built on pea shoots, pine nuts and cilantro brightens this pork chop recipe. The chops are seared, then roasted in an oven for 15 minutes, putting dinner on the table in less than an hour. To serve, pair it with a light salad coated with lemon and olive oil, salt and pepper. Try it tonight.

Provided by Melissa Clark

Time 1h

Yield 4 servings

Number Of Ingredients 20

3/4 cup pine nuts
3 cups pea shoots
1/2 cup fresh cilantro leaves
1/4 cup grated Parmesan
2 cloves garlic, chopped
3/4 teaspoon kosher salt
1/3 cup extra virgin olive oil
4 1 1/4-inch-thick) bone-in pork chops (about 3/4 pound each)
1 clove garlic, halved
1 1/2 teaspoons kosher salt
Freshly ground black pepper
3 tablespoons extra virgin olive oil
2 cups pea shoots
1 small bunch arugula, cleaned
3 tablespoons fresh cilantro leaves
1 small shallot, thinly sliced
Extra virgin olive oil, for drizzling
Lemon juice, for drizzling
Coarse sea salt, such as fleur de sel, to taste
Freshly ground black pepper

Steps:

  • In a small skillet over medium-low heat, toast pine nuts, tossing occasionally, until golden, about 3 minutes.
  • To prepare pesto, in a food processor or blender combine pea shoots, 1/2 cup toasted pine nuts, cilantro, Parmesan, garlic and salt. Pulse until roughly chopped. With motor running, slowly drizzle in olive oil; blend until well combined. Scrape pesto into a bowl.
  • Heat oven to 350 degrees. Cut each pork chop horizontally in half to bone, making a pocket for stuffing. Rub pork chops all over with cut side of garlic clove, grinding garlic juices into bone and meat. Season chops all over with salt and pepper, and fill each pocket with 1 tablespoon pesto.
  • In a very large ovenproof skillet, heat oil over medium-high heat until shimmering. Sear pork chops until well browned, about 3 minutes a side. Transfer skillet to oven. Cook pork chops until they register 140 degrees on an instant-read thermometer, 12 to 15 minutes (or cook pork to taste). Let stand in skillet for 5 minutes.
  • Meanwhile, prepare salad: In a large bowl, toss together pea shoots, arugula, remaining 1/4 cup pine nuts, cilantro and shallot. Toss with enough olive oil to lightly coat greens; drizzle with lemon juice and season with salt and pepper.
  • Divide salad among 4 serving plates. Place a pork chop on each bed of greens. Top chops with additional pesto. Spoon pan juices over each plate.

PAN-SEARED, OVEN-ROASTED THICK-CUT PORK CHOPS

Pan-Seared, Oven-Roasted Thick-Cut Pork Chops image

Number Of Ingredients 8

3/4 cup ¾cup dark brown sugar (lightly packed)
1/2 cups ½cup kosher salt (or ¼ cup table salt)
10 cloves 10medium cloves garlic, crushed
4 pieces 4 bay leaves, crumbled
8 pieces 8 whole cloves
3 tablespoon 3tablespoons whole black peppercorns, crushed
4 pieces 4 bone-in rib loin pork chops (12-ounces each), 1 ½-inches-thick
2 tablespoon 2tablespoons vegetable oil

Steps:

  • 1. In gallon-sized zipper-lock plastic bag, dissolve sugar and salt in 2 cups hot water. Add garlic, bay leaves, cloves, peppercorns, and 4 cups cold water; cool mixture to room temperature. Add pork chops, then seal bag, pressing out as much air as possible; refrigerate until fully seasoned, about 1 hour, turning bag once. Remove chops from brine and dry thoroughly with paper towels.
  • 2. Adjust oven rack to lower-middle position, place shallow roasting pan or jelly-roll pan on oven rack, and heat oven to 450 degrees. When oven reaches 450 degrees, heat oil in 12-inch heavy-bottomed skillet over high heat until shimmering but not smoking, about 2 minutes. Place chops in skillet; cook until well-browned and nice crust has formed on surface, about 2 minutes. Turn chops over with tongs; cook until well-browned and a nice crust has formed on second side, about 2 minutes longer. Using tongs, transfer chops to preheated pan in oven. Roast until instant-read thermometer inserted into the center of each chop registers 125-127 degrees, 8 to 10 minutes, turning chops over once halfway through cooking time. Transfer each chop to platter; cover loosely with foil (be sure not to wrap foil tightly around meat), and let rest about 5 minutes. (Check internal temperature; it should register about 145 degrees).
  • 3. Transfer the browned chops to a preheated baking sheet. To check internal temperatures, insert an instant-read thermometer into the center of the chop from the side.

PAN ROASTED BRINED PORK CHOPS

PAN ROASTED BRINED PORK CHOPS image

Categories     Pork     Roast     Dinner

Yield 2

Number Of Ingredients 10

1/2 cup kosher salt
1/2 cup sugar
1 teaspoon juniper berries
1/2 teaspoon whole black peppercorns
1 head of garlic, halved crosswise, plus 2 unpeeled cloves for basting
2 large sprigs thyme
1 2-inch-thick bone-in pork chop (2 ribs; about 1 1/4 lb.)
2 tablespoons grapeseed or vegetable oil
3 tablespoons unsalted butter
Flaky or coarse sea salt

Steps:

  • Bring 2 cups water to a boil in a medium saucepan. Add kosher salt, sugar, juniper berries, peppercorns, halved head of garlic, and 1 thyme sprig; stir to dissolve salt and sugar. Transfer to a medium bowl and add 5 cups ice cubes. Stir until brine is cool. Add pork chop; cover and chill for at least 8 and up to 12 hours. Preheat oven to 450°. Set a wire rack inside a rimmed baking sheet. Remove chop from brine; pat dry. Heat oil over medium-high heat in a large cast-iron or other oven-proof skillet. Cook chop until beginning to brown, 3-4 minutes. Turn and cook until second side is beginning to brown, about 2 minutes. Keep turning chop every 2 minutes until both sides are deep golden brown, 10-12 minutes total. Transfer skillet to oven and roast chop, turning every 2 minutes to prevent it from browning too quickly, until an instant-read thermometer inserted horizontally into center of meat registers 135°, about 14 minutes. (Chop will continue to cook during basting and resting.) Carefully drain fat from skillet and place over medium heat. Add butter, 2 unpeeled garlic cloves, and remaining thyme sprig; cook until butter is foamy. Carefully tip skillet and, using a large spoon, baste chop repeatedly with butter until butter is brown and smells nutty, 2-3 minutes. Transfer pork chop to prepared rack and let rest, turning often to ensure juices are evenly distributed, for 15 minutes. Cut pork from bones, slice, and sprinkle with sea salt.

Provided by Betty Crocker Kitchens

Categories     Entree

Time 1h

Yield 4

Number Of Ingredients 18

1/4 cup sugar
1 tablespoon water
1 medium Golden Delicious apple or other sweet crisp apple, finely chopped (1 cup)
1 medium onion, finely chopped (1/2 cup)
2 cloves garlic, finely chopped
1/4 teaspoon ground cinnamon
3 tablespoons cider vinegar
1 3/4 cups apple cider
3/4 cup chicken broth
2 dried bay leaves
1 fresh thyme sprig
1/2 cup apricot preserves
3 tablespoons cold firm butter, cut into 3 pieces
3 slices thick-cut bacon
4 pork loin or rib chops, about 1 1/4 inches thick (1 1/2 lb)
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 tablespoons chopped fresh parsley

Steps:

  • In 10-inch skillet (preferably nonstick), mix sugar and water with wooden spoon. Heat over medium-high heat 5 to 7 minutes, without stirring, until sugar turns dark golden brown and just begins to smoke (do not allow to burn). Remove from heat.
  • Add apple, onion, garlic and cinnamon to skillet and stir to coat (sugar may clump and harden at first but will melt again when heated). Return to heat and cook 3 minutes, stirring occasionally, until some liquid escapes from mixture.
  • Remove from heat and add vinegar (avert your head; the fumes from the vinegar can take your breath away). Stir and return to heat. Slowly stir in apple cider and broth (sugar may clump-that is okay, it will melt). When all liquids have been added, add bay leaves and thyme.
  • Heat to boiling. Reduce heat to medium. Simmer uncovered 20 to 30 minutes, stirring occasionally, until reduced by half.
  • Meanwhile, heat oven to 375°F. In 10-inch ovenproof skillet, cook bacon over medium-high heat until crisp and brown. Remove bacon from skillet; drain on paper towels, crumble and set aside. There should be about 1 tablespoon bacon drippings remaining in pan. If there is more, pour off excess; if there is less, add a little vegetable oil.
  • Sprinkle pork with salt and pepper. Place pork in bacon drippings in skillet and cook 4 minutes or until brown. Flip and brown on other side, about 4 minutes longer. Cover skillet with lid or foil and place in oven. Roast 8 minutes or until slightly firm when touched and meat thermometer inserted in center reads 155°F (pork will continue to cook to 160°F when removed from oven). Remove pork from skillet and place on plate. Cover tightly with foil; set aside.
  • The skillet used to cook the pork should have some cooking liquid in it. Place this skillet over medium heat. Pour the reduced sauce into skillet and stir to combine. Stir in apricot preserves and heat sauce to boiling. Boil 5 minutes, stirring occasionally, until slightly thickened. Remove skillet from heat. Beat in butter, 1 piece at a time, with wire whisk, adding the next piece only after the first has been completely beaten in and melted. When all of the butter has been beaten in, taste sauce and season with salt and pepper if desired. Remove and discard bay leaves and thyme sprig.
  • Place pork on warm serving plates and top with sauce. Sprinkle with crumbled bacon and the parsley.

Categories     Dinner

Yield 4 servings

Number Of Ingredients 23

FOR THE PEA SHOOT PESTO:
3/4 cup pine nuts
3 cups pea shoots
1/2 cup fresh cilantro leaves
1/4 cup grated Parmesan
2 cloves garlic, chopped
3/4 teaspoon kosher salt
1/3 cup extra virgin olive oil
For the pork chops:
4 1 1/4-inch-thick) bone-in pork chops (about 3/4 pound each)
1 clove garlic, halved
1 1/2 teaspoons kosher salt
Freshly ground black pepper
3 tablespoons extra virgin olive oil
For the pea shoot and arugula salad:
2 cups pea shoots
1 small bunch arugula, cleaned
3 tablespoons fresh cilantro leaves
1 small shallot, thinly sliced
Extra virgin olive oil, for drizzling
Lemon juice, for drizzling
Coarse sea salt, such as fleur de sel, to taste
Freshly ground black pepper.

Steps:

  • 1. In a small skillet over medium-low heat, toast pine nuts, tossing occasionally, until golden, about 3 minutes. 2. To prepare pesto, in a food processor or blender combine pea shoots, 1/2 cup toasted pine nuts, cilantro, Parmesan, garlic and salt. Pulse until roughly chopped. With motor running, slowly drizzle in olive oil; blend until well combined. Scrape pesto into a bowl. 3. Heat oven to 350 degrees. Cut each pork chop horizontally in half to bone, making a pocket for stuffing. Rub pork chops all over with cut side of garlic clove, grinding garlic juices into bone and meat. Season chops all over with salt and pepper, and fill each pocket with 1 tablespoon pesto. 4. In a very large ovenproof skillet, heat oil over medium-high heat until shimmering. Sear pork chops until well browned, about 3 minutes a side. Transfer skillet to oven. Cook pork chops until they register 140 degrees on an instant-read thermometer, 12 to 15 minutes (or cook pork to taste). Let stand in skillet for 5 minutes. 5. Meanwhile, prepare salad: In a large bowl, toss together pea shoots, arugula, remaining 1/4 cup pine nuts, cilantro and shallot. Toss with enough olive oil to lightly coat greens; drizzle with lemon juice and season with salt and pepper. 6. Divide salad among 4 serving plates. Place a pork chop on each bed of greens. Top chops with additional pesto. Spoon pan juices over each plate.
