Simple is best! These crisp and golden brown Pan Fried Pork Chops come together with about 5 minutes of prep for an easy weeknight dinner that your family will love!

1 tablespoon butter
1 tablespoon vegetable oil
2 - 4 thick-cut bone-in pork chops ((about 1 - 1 ¼ - inch thick, about 12 ounces each))
2 teaspoons seasoned salt (such as Lawry's brand)
½ teaspoon pepper
¼ cup all-purpose flour
Optional garnish: chopped fresh parsley or sage

Steps:

  • Place flour in a shallow dish.
  • Pat pork chops dry and season liberally with seasoned salt and pepper on both sides. Dredge the pork chops in flour, shaking off the excess.
  • Melt butter and oil in a large, heavy skillet over medium-high heat.
  • Add chops to the hot skillet and cook until browned on both sides and a meat thermometer registers 140°F - 145°F (about 7-10 minutes per side). Smaller bone-in pork chops will cook in 5-6 minutes per side, so just keep an eye on your chops and use the thermometer to know when they're done. The internal temperature of the pork chops will continue to rise after you remove them from the pan.
  • Transfer pork chops to a plate, tent with foil, and allow to rest for about 5-10 minutes before serving.
  • Note: Depending on the size of your pan (and pork chops), you might need to cook the pork chops in batches of two. Just make sure that you don't overcrowd your pan by trying to squeeze too many chops in at once!

1 teaspoon seasoned salt, plus more for seasoning
1 teaspoon ground black pepper, plus more for seasoning
8 pork breakfast chops
1 cup all-purpose flour
Cayenne pepper
1/2 cup canola oil
1 tablespoon butter
Smashed new potatoes, for serving

Steps:

  • Salt and pepper both sides of the pork chops.
  • Combine the flour and some cayenne, salt and black pepper. Dredge each side of the pork chops in the flour mixture, and then set aside on a plate.
  • Heat the canola oil over medium to medium-high heat. Add the butter. When the butter is melted and the butter/oil mixture is hot, cook 3 pork chops at a time, 2 to 3 minutes on the first side. Flip and cook until the chops are golden brown on the other side, 1 to 2 minutes (make sure no pink juices remain). Remove to a plate and repeat with the remaining pork chops.
  • Delicious and simple! Serve with smashed new potatoes.

This is an easy way to prepare fennel bulbs. Fennel tastes great pan-fried and you don't need a lot of seasoning as fennel has so much flavor on its own, which just intensifies while sauteeing.

Steps:

  • Chop fennel greens and set aside.
  • Heat 1 tablespoon oil in a nonstick pan over medium heat. Lay some fennel slices in a single layer in the pan; cook until nicely browned on both sides, about 5 minutes. Season with salt and lemon pepper. Remove from pan. Add another tablespoon oil and layer in the next batch of fennel slices and cook the same way. Repeat with remaining oil and fennel. Serve sprinkled with fennel greens.

6 big pork loin chops
3 garlic cloves , crushed
small handful flat-leaf parsley , chopped
½ tsp fennel seeds , roughly chopped
zest and juice 1 lemon , plus 1 lemon, quartered
3 tbsp olive oil
6 bay leaves

Steps:

  • Sit the chops in a dish. Mix together the garlic, parsley, fennel seeds, lemon zest and juice, oil and bay, then rub all over the chops. Leave the chops to marinate for at least an hour, or up to a day.
  • Heat a barbecue, frying pan or griddle pan. Season the chops, then cook for 5-8 mins on each side until cooked through (if cooking in batches, wrap the cooked chops in foil while you finish the rest). Add the lemon quarters for the last min to char, then serve alongside the pork.

3 tablespoons vegetable oil
1 cup pomegranate seeds (from 1 large pomegranate)
2 scallions, finely chopped
1/4 cup chopped fresh cilantro
1 teaspoon seasoned rice vinegar
2 teaspoons honey
1/4 teaspoon salt

Steps:

  • Halve fennel bulb lengthwise and core it, then cut into 1/4-inch dice. Cook fennel in 2 tablespoons oil in a 12-inch heavy skillet over moderate heat, stirring, until tender, about 15 minutes. Transfer fennel to a bowl and stir in pomegranate seeds, scallions, cilantro, vinegar, honey, and salt.
  • Pat pork chops dry and season with salt and pepper. Brined Pork Chops With Fennel image

Pork and fennel - both fennel seed and the bulb-shaped vegetable - are often companions, and the combination of flavors is quite delicious. For best results, let the chops soak for at least a few hours, preferably overnight, in a quickly made brine.

1/4 cup kosher salt
2 tablespoons granulated sugar
2 bay leaves
6 black peppercorns, lightly crushed
6 allspice berries, lightly crushed
1 teaspoon fennel seeds, lightly crushed
2 bone-in pork chops, about 12 ounces each
2 tablespoons olive oil
1 large onion, sliced 1/4-inch thick
3 or 4 trimmed fennel bulbs, about 1 pound, sliced 1/4-inch thick
Salt and pepper
2 garlic cloves, minced
1/2 teaspoon fennel seeds, crushed
2 tablespoons roughly chopped parsley
A few tender green fennel fronds
Lemon wedges, for serving

Steps:

  • Make the brine: Put salt, sugar, bay leaves, peppercorns, allspice and fennel seeds in a bowl. Whisk in 4 cups water to dissolve salt and sugar.
  • Put pork chops in one layer in a glass or plastic container. Pour brine over to completely submerge chops. Cover and refrigerate for at least 2 hours, preferably longer, up to overnight. Remove chops from brine and pat dry. Discard brine.
  • Cook the chops: Heat oven to 400 degrees. Set a wide, heavy skillet over high heat and add olive oil. When oil is wavy, add chops in one layer and let brown for about 3 minutes per side.
  • Remove chops from pan and set aside. Reduce heat to medium-high and add sliced onion and fennel, stirring to coat with oil. Season with salt and pepper and cook, stirring, until beginning to color, about 5 minutes. Stir in garlic and crushed fennel seeds and turn off heat.
  • Lay the chops on top of the onion-fennel mixture (alternatively, transfer all of it to a baking dish) and place pan, uncovered, in oven for 20 to 25 minutes, until the internal temperature of chops is 140 degrees.
  • Remove chops and let rest for about 5 minutes. Transfer onion-fennel mixture to a platter and keep warm. Cut chops into 1/8-inch slices and add to platter. Sprinkle with parsley and garnish with fennel fronds. Serve with lemon wedges.

This is a very quick preparation with impressive results. Use a cast iron pan for the best crust on the chops.

SEASONING:
1 tablespoon(s) fennel seeds
1 tablespoon(s) fresh rosemary, minced
1/2 teaspoon(s) red pepper flakes
salt & pepper, to taste
CHOPS:
4 bone-in center cut chops, 1 inch thick
3 tablespoon(s) olive oil, divided use
2 tablespoon(s) salted butter, halved
3 tablespoon(s) fresh lemon juice, divided use
1 large fennel bulb with fronds
3 - scallions
1 cup(s) italian parsley, chopped

Steps:

  • With a mortar and pestle (or in a spice grinder), crush the seasoning ingredients until they are a fine powder. Set aside 1/2 teaspoon, and rub the rest into the chops.
  • Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat until it almost smokes. Add the chops and cook till browned on the bottom, about 5-6 minutes. Flip the chops and continue cooking 3-4 minutes until done (about 135 F). Remove from pan and cover with foil to keep warm.
  • To the same skillet over medium high heat, add 1/4 cup water and deglaze the pan with a wooden spoon. Whisk in the butter until melted and well combined. Add 1 tablespoon of the lemon juice. Season with salt and pepper to taste. Remove from heat and cover to keep warm.
  • Cut the fennel bulb in half. Core it, then slice it very thinly against the grain. Mince about 1/4 cup of the fennel fronds. Thinly slice the scallions on the diagonal. Set aside.
  • In a medium bowl, add the 1/2 teaspoon of reserved seasoning. Add the remaining tablespoon olive oil and 2 tablespoons lemon juice. Whisk to combine. Add the fennel, scallions and parsley - toss to coat. Season with salt and pepper to taste.
  • Plate the chops, pour the warm sauce over each one, then top with a quarter of the fennel salad.
