2 1/4 cups Original Bisquick™ mix
1/4 to 1/3 cup cornmeal
2/3 cup milk
1 jar (10 oz) basil pesto
1 plum (Roma) tomato, thinly sliced
2 cups shredded mozzarella cheese (8 oz)
1/2 cup shredded Parmesan cheese
1/4 cup thinly sliced fresh basil leaves
1 tablespoon olive oil

Steps:

  • Heat oven to 450°F. Spray large cookie sheet with cooking spray.
  • In large bowl, stir Bisquick™ mix, 1/4 cup cornmeal, and milk until soft dough forms.
  • Press dough into 13x9-inch rectangle on cookie sheet, using additional cornmeal as needed. Using fork, pierce dough at 1-inch intervals. Bake 8 minutes, or until just beginning to brown.
  • Spread pesto over crust. Top with tomato and cheeses. Bake an additional 8 to 10 minutes, or until cheese is melted. Sprinkle basil and olive oil over top. Cut into 2 rows by 4 rows.

1 pkg active dry yeast
3/4 c warm water (110 degrees)
2 1/2 c bisquick biscuit mix

Steps:

  • 1. soften yeast in warm water, stir in bisquick. beat vigorously for two minutes. dust surface of rolling area with flour and knead dough until smooth (about 25 times) divide dough in half and roll each piece of dough to a 12 inch circle. place dough circles on greased pizza pans or baking sheets and stretch and press to fit. brush dough with oil or olive oil( if you prefer.)you dont allow these to rise before baking. fill with your favorite pizza toppings and bake at 425 degrees for 15 minutes or until crusts are lightly brown and the filling and cheese hot and bubbly. makes two 12 inch crusts.

ASTONISHINGLY EASY "YEASTY" BISQUICK PIZZA DOUGH

This amazed me when I first came up with it. The yeast is basically a flavoring agent, the dough works pretty well without it but it does add a tiny bit of springy-ness. Measurements are (very) approximate, just follow the directions...

1 cup biscuit mix (I use reduced-fat Bisquick)
1 cup whole wheat flour
warm water
1 pinch yeast (hearty pinch)
olive oil

Steps:

  • Mix biscuit mix and yeast. Add warm water until it reaches about the consistency of cake batter.
  • Add wheat flour until a firm dough is formed. Pat or roll out into desired crust shape, using olive oil as desired to prevent sticking.
  • Top as desired and bake at around 400 degrees until done, time of course will depend on how thick you make it but 20 minutes is a good estimate.

It's low-cal and healthy, and can be tweaked significantly to suit your palate. I've changed this around to make Chicago-style pizza and buffalo chicken pizza, so it's a very versatile recipe!

2/3 cup Bisquick Heart Smart mix
2 egg whites
2 tablespoons water
1 teaspoon garlic salt, divided
1 bell pepper, seeded and diced
1/2 small onion, diced
1/4 lb mushroom, sliced
1 lb skinless chicken breast, cooked and diced
1 (15 ounce) can diced tomatoes, well-drained
1/2 teaspoon italian seasoning
1/4 teaspoon red pepper flakes
1/2 cup shredded mozzarella cheese
1/4 cup shredded parmesan cheese

Steps:

  • Preheat oven to 400°F.
  • Mix together Bisquick mix, egg whites, water, and half of the garlic salt. Spread the batter into a sprayed 8"x8" pan or casserole dish.
  • Cook bell pepper, onion and mushrooms in a pan over medium heat, stirring frequently, until onion is tender.
  • Stir in chicken, tomatoes, seasoning, red pepper flakes and rest of garlic salt, and heat until hot.
  • Spoon chicken and vegetable mixture over the batter in pan, then sprinkle with mozzarella and parmesan.
  • Bake 20-25 minutes, or until golden brown.

1 1/2 lbs Italian sausages, casings removed (mild or spicy)
1 onion, chopped
1 tablespoon minced fresh garlic (or to taste)
1 green bell pepper, seeded and chopped
1 1/2 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon dried Italian seasoning
1/2 teaspoon black pepper
1 pinch cayenne pepper (optional)
2/3 cup milk
2 eggs, lightly beaten
1 cup canned sliced mushrooms, well drained (or to taste)
2 cups shredded mozzarella cheese (or to taste)
1/2 cup grated parmesan cheese, divided (can use more)
2 cups pizza sauce (can use more, see my Kittencal's Pizza Sauce)

Steps:

  • Set oven to 350 degrees.
  • In a large skillet cook the sausage meat with onion, bell pepper and garlic until browned, stirring to break up the meat; drain fat and set aside.
  • Grease a 14-inch round deep-dish pizza pan then dust lightly with flour.
  • In a medium bowl mix together the flour with baking powder, salt, Italian seasoning, black pepper and cayenne pepper (if using) add in milk and eggs, stir until well blended.
  • Pour the mixture into the prepared pan tilting pan as necessary so that the batter covers the bottom of the pan.
  • Sprinkle the top of the batter with 1/4 cup parmesan cheese, then sprinkle the sausage mixture and sliced mushrooms over the batter and cheese.
  • Bake at 350 degrees for about 25-30 minutes or until pizza is golden brown.
  • Remove from oven and drizzle with pizza sauce, then 1/4 cup grated parmesan cheese and then top with grated mozza cheese; return to oven and bake about 8 minutes or until the crust is a deep golden brown and the cheese is melted.
  • Delicious!

1/2 cup ripe tomatoes, diced
2 cups Bisquick
1 1/2 cups mozzarella cheese, grated
1 cup milk
1 bell pepper, diced
1 onion, diced
1 cup pepperoni, diced
1/4-1/2 cup pizza sauce
1 tablespoon oil

Steps:

  • Heat oven to 425 degrees. Grease square pan 9x9.
  • Sautee the onion and bell pepper in the oil until the mixture is translucent.
  • Mix Bisquick, tomatoes, half of the cheese and milk in a medium bowl until a dough forms. Mix remaining cheese, pepper and onion mixture, pepperoni and pizza sauce in a small bowl.
  • Drop half the dough by tablespoonfuls closely together in the pan. Spoon half the cheese mixture over dough. Drop remaining doug over the cheese mixture. Top with the remaining cheese mixture.
  • Bake about 20-25 minutes until golden brown.
  • Serve warm.

After my daughter got her Easy Bake oven for Christmas I just couldn't stomach the $6 it cost to make two pizzas from their refill mixes. This is scaled down from the basic biscuit recipe on the Bisquick box. Remember when you eat it, it is kids pizza made in a toy oven! If you judge it that way, it tastes quite good. The key is to make sure the dough plus the toppings are below the lip of the pan before you slide it into the oven. We have the new Easy Bake that doesn't have a light bulb and comes with the rectangular tray. We just patted the dough into a circle on that.

  • Spray the cooking tray with nonstick spray.

1/3 cup very warm water (120°F to 130°F)
1/4 cup pizza sauce, or 4 sliced plum (Roma) tomatoes
7 to 10 slices fresh mozzarella cheese
1/4 cup chopped fresh basil leaves
2 tablespoons olive oil

Steps:

  • Spray gas or charcoal grill rack with cooking spray, or brush with oil. Heat grill.
  • In large bowl, stir together 1 1/2 cups Bisquick mix and the very warm water; beat 20 strokes, just until soft dough forms. On surface lightly sprinkled with Bisquick mix, knead dough 2 to 3 minutes, adding additional Bisquick mix to dough until no longer sticky. Roll or press dough to 12-inch diameter. Make sure dough is uniform thickness to ensure even cooking.
  • Place dough directly on gas grill rack over medium heat or on charcoal grill rack 4 to 6 inches from medium coals. Cook 5 to 7 minutes or until bottom of crust is browned. Turn crust over; add sauce and cheese. Close cover; cook pizza 5 to 7 minutes longer or until cheese is melted. Garnish pizza with fresh basil and olive oil.

I like the convenience and taste of Bisquick and I use the Heart Smart variety. This is a recipe from my grandma's collection; of course she did have the newer variety available, but I find that it works just as well in these older recipes.

  • Mix Bisquick, salt, and water into a soft dough. Turn dough onto floured surface and gently roll into ball. Knead 5 times.

  • Place dough on grill over medium coals and cook 8 min.(I lightly wipe the grill grate with olive oil..very lightly) Turn and spread with sauce. Then top with meat, cheese, and seasonings.

BIZARRE BISQUICK VEGGIE PIZZA (WITHOUT SAUCE TO WORRY ABOUT!)

This is a quick and hearty vegetarian meal for one that I cooked up tonight for dinner, and it doesn't call for a pizza base, sauce, or special cheeses! It's a bit "upside down", with yummy parmesan cheese in the crust, followed by a layer of sliced tomatoes, which acts as the "pizza sauce". A little bit of stove-top "crust"-making and a little pop in the oven, and your yummy, unconventional pizza is ready!

1/2 cup original Bisquick baking mix
1/4 cup milk (You can use skim)
1 teaspoon water
cooking spray
1 tablespoon grated parmesan cheese
1/4 teaspoon dried oregano
1/8 teaspoon paprika (You can use less)
1 medium tomatoes, sliced
1/4 cup sliced onion
1/3 cup sliced green bell pepper
2 tablespoons corn kernels
black pepper

Steps:

  • Mix together Bisquick, milk and water in a bowl and whisk until a smooth batter of pourable consistency is formed.
  • Ensure that the batter isn't too thin; you need a substantial base to hold all those veggies!
  • Preheat oven to 250 degrees Celcius (480 degrees Fahrenheit) using the top heating element only.
  • Instructions for ovens without this facility with follow.
  • Spray a baking sheet with cooking spray; set aside.
  • Heat a non-stick skillet (or spray a regular skillet with cooking spray) on a medium-high flame until hot.
  • Pour the Bisquick batter onto the skillet quickly, such that you get a 6-inch diameter circle or thereabouts.
  • My"crusts" are usually pretty darn weird-shaped!
  • Immediately sprinkle oregano, paprika and parmesan cheese over the top of the"crust".
  • Cook only on one side for a minute or two, or until the bottom of the pancake is well browned (This is IF your oven has the facility of heating only the top element).
  • If your oven is old-fashioned and it heats from all sides, cook the crust until it just starts to brown.
  • Now remove the crust from the skillet and place it carefully (same side up, DON'T FLIP) on the baking sheet sprayed with cooking spray.
  • Carefully place the tomato slices over the crust covering as much of it as you can.
  • Now top with onion and bell pepper slices, and corn kernels.
  • Sprinkle with black pepper.
  • Bake in the preheated oven with only the top heating element switched on, even now, if you have that facility, for 15 minutes.
  • Even in a regular oven, with all heating elements switched on, bake for 15 minutes (you adjusted the time during the crust-making, see!).
  • Remove from the baking sheet onto your serving plate gently.
  • Attempt to slice it, give up, grab a large spoon and dig in!
  • Relish the satisfaction and thank the parmesan cheese.
