1/2 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon whole-grain mustard, plus more for serving

1/4 to 1/2 teaspoon caraway or celery seeds

1/2 head light-green cabbage, thinly sliced (about 6 cups)
1 small carrot, shredded
1 gala apple, julienned
1 bunch scallions, white and green parts, thinly sliced
1 large egg
1/2 cup milk
4 6-ounce cod or other white-fleshed fish fillets
1/3 cup all-purpose flour
1/3 cup cracker meal or crushed saltine crackers
1/4 teaspoon cayenne pepper
Kosher salt
Vegetable oil, for shallow frying

Steps:

  • Prepare the slaw: Whisk the mayonnaise, vinegar, mustard, sugar, caraway seeds, 1 1/2 teaspoons salt, and pepper to taste in a large bowl. Toss in the cabbage, carrot, apple and scallions; cover and refrigerate.
  • Prepare the fish: Whisk the egg and milk in a medium bowl; add the cod and set aside to soak. Mix the flour, cracker meal, cayenne pepper and a pinch of salt on a plate.
  • Heat 1 inch of oil in a heavy-bottomed skillet over medium-high heat. Remove the fish from the milk mixture and dredge in the flour mixture, turning to coat. Fry in the hot oil until golden, 2 to 4 minutes per side. Transfer to a paper-towel-lined plate to drain; season with salt and pepper. Serve with the slaw and extra mustard.

60 ml light soy sauce
40 ml rice wine vinegar
1 pinch five-spice powder
40 ml sesame oil (original recipe uses double this but I think it kills the flavour of the fish)
salt and pepper
1 bunch spring onion, finely shredded
1 red chile, very finely chopped
6 blue-eye cod fish fillets (175-225g each)
plain flour, seasoned with
salt and pepper, for dusting
1 tablespoon butter

Steps:

  • To make the dressing, boil the soy sauce, vinegar and 5 spice powder together.
  • Remove from the heat, mix in the sesame oil and season with salt and pepper.
  • Set aside.
  • Mix the spring onions with the chilli.
  • Lightly coat the fish fillets with seasoned flour.
  • Heat the knob of butter in a fry pan and cook for about 3-4 minutes on each side (depending on thickness) until cooked.
  • Reheat the dressing and add the onions and chilli-cook for 1-2 minutes more.
  • Serve the fish with the dressing spooned over.

8 ounces Yukon Gold potatoes
1 (8 ounce) fillet cod fillet
¼ cup bread crumbs
1 egg, lightly beaten
1 tablespoon minced parsley
1 tablespoon grated Parmesan cheese
1 clove garlic, finely chopped
¼ teaspoon ground black pepper
3 tablespoons olive oil

Steps:

  • Place potatoes into a large pot and add salted water to cover by 1 inch; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Add cod fillet to water and continue to simmer until fish starts to flake, 10 to 15 minutes. Drain and transfer potatoes and fish to a mixing bowl.
  • Add bread crumbs, egg, parsley, Parmesan cheese, garlic, and pepper to the fish and potatoes. Mash until thoroughly mixed. Form mixture into 6 discs.
  • Heat 1 tablespoon oil in a skillet over medium heat. Fry 2 cod cakes at a time in the hot oil until golden brown on each side, 5 to 10 minutes. Repeat with remaining cod cakes, adding more oil as necessary for each batch.

Champ, a traditional Irish accompaniment of potato and spring onion, adds real warmth to this simple cod dish

500g large potato , peeled and quartered
4 spring onions
2x pieces of cod , skin on
2 tbsp olive oil
142ml carton double cream
200ml milk
knob butter

Steps:

  • Cook the potatoes in a pan of boiling water until tender, about 10-15 mins. Meanwhile, chop the spring onions, separating the green part from the white.
  • Lay the cod on a piece of kitchen paper to remove any excess moisture. Heat a frying pan to a high heat, add the oil, then the fish, skin side down. Don't move the pan or even shake it as this will tear the skin. Cook for 4-5 mins until the edges start to colour. Turn the fish over and cook for a further 3-4 mins.
  • Bring the cream and milk to the boil in a pan with the butter, then add the chopped white part of the onions, simmer for a few minutes, then season, if you want to. Mash the potatoes and mix in the hot cream and milk and half the chopped green part of the spring onions. Sprinkle the rest over the mash. Serve with the fish, pouring over any pan juices.

12 new potatoes
2 thick cod fish fillets
olive oil
butter
salt and pepper
1 bunch fresh parsley, finely chopped
2 lemons, zest of, grated (recipe calls for 3)
2 garlic cloves, finely chopped
1/2 teaspoon black peppercorns, crushed
75 ml extra virgin olive oil (2 1/2 fl.ozs.)
2 teaspoons white vinegar (recipe calls for wine vinegar)
2 ripe tomatoes, de-seeded and diced finely
1 pinch crushed black pepper

Steps:

  • To make the Gremolata, simply combine the ingredients and stir well. Set aside.
  • To make the Sauce Vierge, heat the peppercorns in a small heavy-based pan, reduce the heat and add the extra virgin olive oil. Heat for a minute or so and then add the vinegar. Set aside.
  • Cook the new potatoes by simply boiling them in well salted water for 15-20 minutes.
  • While the potatoes are cooking, pan fry the cod in a mixture of olive oil and butter for about 3 to 4 minutes on both sides until just cooked.
  • Drain the potatoes and while they are still warm stir in the Gremolata and mix well.
  • Add the tomatoes to the Sauce Vierge. Heat gently to warm through if you wish.
  • To serve, spoon a portion of potatoes onto each plate, top with the cod and spoon the Sauce Vierge over the top and around the edge.

We found this recipe in Food Network Mag Feb/Mar 09 pg 67. If you don't like tartar sauce on fish, this slaw is a great alternative. The fish is crispy, you can use any white fish, our favorite is walleye but its not always available. You can also just use shredded coleslaw mix to cut time. For a lighter version, use nonfat Greek yogurt instead of mayo.

Steps:

  • Make the slaw: In a food processor, shred the cabbage, peeled and cored apple, and carrot. In a large bowl, mix up the mayo, vinegar, mustard, sugar, celery seeds, salt, and pepper to taste. Then throw in the shredded cabbage, carrot, apple, and the sliced scallions. Cover and put it in the fridge.
  • Prep the fish: In a medium bowl, whisk egg & milk, add the fish. Let the fish soak in the milk while you prepare the breading. On a plate, mix the flour, breading, cayenne pepper, and a pinch each of salt and pepper.
  • To cook: Heat about an inch of oil in a large skillet over med-high heat. Coat the fish in the flour, a nice even coating. Carefully lower the fish into the skillet and fry it until its nice and golden 2 to 4 minutes per side. The fish should break apart easily yet still be moist. Place finished fish on a paper towel lined plate to drain and then for more flavor, season with more salt and pepper.
  • Serve with the slaw.

1/4 cup flour
1 egg, beaten

Steps:

  • Preheat large sauté pan on medium. Dip fish in flour (coating both sides), then dip into egg mixture (allowing excess to drip off), and coat with panko. Place oil in pan, then add fish; cook 4-5 minutes on each side or until crust is golden and flesh is flaky. Drain on paper towel and season with salt and pepper. Serve with lemon, if desired. Other Preparation Methods Sauté: Preheat large sauté pan on medium. Place 2 tablespoons garlic herb butter in pan, then add fish; cook 2-3 minutes on each side or until opaque and separates easily. 1/3 cup olive oil
6 pieces sun-dried tomatoes, chopped
1 tablespoon capers
6 black olives, chopped
2 red potatoes, cooked and sliced
1 fresh tomato, peeled seeded and chopped
1/4 cup chopped fresh parsley
1 sprig rosemary, chopped

Steps:

  • Rub the Cod with Olive Oil, salt and pepper.
  • Place skin side down in hot saute pan.
  • Cook 3 minutes on skin side.
  • Turn and cook 2 minutes longer.

PAN-FRIED COD WITH LEMON BASIL SAUCE

Adapted from one of my favorite tilapia recipes to work with cod, mixed with one of my favorite spices, fresh basil. You can substitute dry white wine for the broth, or half and half it would be best. This is a great white no fail fish dish for any night of the week. I do like to serve it with potatoes or spinach to help accent and absorb the sauce. Do not hesitate to use lemon juice from concentrate, for fresh lemon can be too strong. If using fresh lemon use half, then add more to taste.

1/4 cup lemon juice

4 (6 -8 ounce) cod fish fillets
1/4 teaspoon kosher salt

  • Heat oil in large skillet over medium heat.

  • When oil heats add fillets and saute 3 mins both sides.
  • Remove fillets from pan and pour broth, lemon juice, and chopped fresh basil into the hot pan. Bring to a boil and whisk in 4 tablespoons of butter for 1 to 2 minutes, then simmer for 5 to 10 minutes till sauce reduces by half. Basil will turn the color of steamed spinach, it is okay, you will taste the sweet basil accent in the sauce.
  • Serve sauce over fillets.

This one is a favourite amongst my family. The sauce was inspired by a red pepper soup I had once, so i adapted it, and i think it goes really well with fish. I usually use thick cod fillets for this dish, but theoretically you could use any white fish you like. I like to serve this with mashed potatoes and seasonal vegetables.

4 thick cod fish fillets
2 red bell peppers
2 cloves garlic
1 teaspoon ginger
2 spring onions (scallions)
30 g butter
2 tablespoons vegetable oil
2 tablespoons plain flour
400 ml fish stock
salt and pepper
2 lemon wedges
1 tablespoon double cream (heavy) (optional)

Steps:

  • Begin by chopping roughly the red peppers, spring onions (scallions) ginger and garlic, and add them to a large sauce pan with 15g of the butter.
  • Fry gently for 3 minutes, then pour in the fish stock.
  • Allow the sauce to cook and reduce on medium heat for 15-20 minutes then turn the heat out and using a hand-held blender or food processor, blend the sauce and pour it all through a fine seive into another pan and set aside.
  • Ensure that the fish fillets are dry, then dredge each one in a thin layer of flour and season both sides with salt and pepper.
  • Add the oil to a pan, and allow it to get very hot.
  • carefully place the fish into the pan and let it fry for 2 minutes.
  • Shake the pan to loosen the fish, then turn them over.
  • Add the remaining butter and the juice of one lemon wedge to the pan and cook for a further 2 minutes.
  • Heat up the sauce if its cold, and add salt and pepper to taste and the juice of a lemon wedge.
  • If desired, add the double cream for a smoother, creamier finish.
  • Place a fish fillet onto a plate and pour over some of the sauce.

120 g fresh breadcrumbs
2 -3 tablespoons finely chopped fresh parsley

125 g plain flour, seasoned well

25 g butter
10 anya potatoes, peeled and cut into equal sized chunks
1 tablespoon olive oil

Steps:

  • In a plate add the breadcrumbs and parsley and season with salt and freshly ground pepper and give it a good mix.
  • Crack the eggs into a bowl and beat lightly together.
  • In a separate bowl, add the flour and season well with salt and pepper.
  • Dip a fish fillet first in the flour, then in the egg and, finally, in the breadcrumb mixture and continue with all the fillets.
  • Cover and refrigerate the fish for up to 2 hours before cooking.
  • To make the braised potatoes with peas, steam the potatoes over a pan of boiling, salted water, covered with a lid, for about 20 minutes until they are tender.
  • In a saucepan heat the olive oil with 1 tbsp of butter over a medium heat and fry the onion until soft for about 10 minutes.
  • Add the peas and toss well.
  • Add the chicken stock, bring to the boil and simmer for 5 minutes.
  • Add the potatoes and cook for another 2 minutes.
  • Remove from the heat, add the remaining butter, season with salt and freshly ground pepper and stir to combine.
  • To fry the fish, heat the olive oil and butter in a large non-stick frying pan over a medium to high heat.
  • Put the fish in the pan and cook gently for about 4 minutes on each side, turning once, until lightly golden.
  • To serve, pour the braised potatoes and peas in a shallow bowl and sprinkle chopped mint leaves on top and serve the fish on the side.

1 fluid ounce olive oil
1 ounce butter
salt
ground black pepper
2 ripe tomatoes
1 shallot, peeled
1 garlic clove, PEELED
2 small lemons, juice and zest of, FINELY GRATED

1 tablespoon chpd fresh tarragon
1 tablespoon snipped fresh chives

Steps:

  • To prepare the sauce, quarter the tomatoes, scoop out seeds, then finely dice flesh and put into a small bowl. Finely chop the shallot and crush the garlic, add to tomatoes with the lemon zest and juice, chpd herbs and olive oil. Season to taste. Cover and leave the flavours to infuse.
  • To cook the fish, heat olive oil and butter in a heavy based frying pan. Rinse the cod fillets and pat dry with kitchen roll. Season fillets to taste. Cook over a high heat for 2-3 min on each side, until just cooked through.
  • To serve, gently warm the sauce in a small pan and drizzle some over each serving plate. Top with cooked cod fillet.

This dish was created for a local fiery food show. It happened to be Lent at the time, so we figured fish would be a good seasonal choice. Then someone reminded us that the bacon was an unholy partner. With apologies to the Pope, we served it anyway because it was that sinfully good.

  • Make up a batch of sauce. Fry the bacon over medium-high heat just til crisp and brown. Pull it out of the pan, drain it on paper towels, crumble, and set aside.
  • Pour off all but 3 to 4 tablespoons of the bacon fat in the pan. Dump in the onions and fennel, seasoning with a pinch of salt and pepper. Sizzle over medium heat til brown and caramelized. Stir in the Mutha Sauce and lemon juice. Keep warm.
  • Toss the flour, Creole Seasoning, and a pinch of salt together. Dredge the fish in the mixture til the pieces are well coated.
  • Swirl the oil into a heavy skillet and heat it til hot but not smoking. Knock the excess flour off the fish pieces, and slip them into the skillet. Cook for 2 to 3 minutes, til lightly browned. Flip the pieces over and cook another 2 to 3 minutes, til cooked through. With a slotted spatula, transfer the fish to a platter.
  • Top each portion with a spoonful of sauce, some bacon crumbles, and some sliced scallions. Serve it right away.

BRAISED CHICORY WITH PAN-FRIED HOME SALT COD

Cooking heads of chicory in stock gives a soft, succulent side for this seafood supper or dinner party main

4 thick slices of fresh cod (about 200g) cut from the thick end of the fillet, skin on
3 tbsp salt flakes or coarse rock salt
grated zest and juice 1 lemon
4 large heads of chicory (about 750g)
4 tbsp extra virgin olive oil
50g butter
300ml good chicken stock
2 garlic cloves , coarsely sliced
2 tbsp olive oil
1 tbsp small capers , drained
1 tbsp olive oil , for frying
small pack flat-leaf parsley , roughly chopped
crusty bread , to serve (optional)

Steps:

  • Wash and trim the fillets as necessary. Feeling the cod carefully with your fingers, locate and remove the pin bones from the centre of the fillets. Lay the fish, skin-side down, in a shallow dish. Mix the salt with the lemon zest and sprinkle evenly over the fillets. Cover the dish with cling film and chill for 30 mins.
  • Cut the chicory in half lengthways and remove and discard the tough central core (it may be bitter). Blanch in plenty of boiling water for 2 mins, then drain well.
  • Heat the extra virgin oil and butter in a large sauté pan and add the chicory, cut-side down. Cook for 5 mins or so until the surface of the chicory begins to brown. Turn the chicory and pour in the lemon juice and stock. Add the garlic, season and bring to a simmer, then cover the pan with a lid. Cook for 20 mins.
  • Wash the cod fillets well under running cold water, then pat dry using kitchen paper. Brush the fish with the olive oil, then place in a heavy-based non-stick pan, skin-side down. Cook the fish on a medium-high heat for 5-7 mins or until the skin is golden brown. The fish should be nearly opaque. Turn and cook for a further 1-2 mins, then turn over once more, remove the pan from the heat and leave the fish to rest for 2 mins.
  • Add the capers to the chicory and sprinke with the parsley. Serve with the fish and crusty bread, if you like.
