MEDITERRANEAN SALMON PASTA SALAD



Mediterranean Salmon Pasta Salad image

This quick and easy pasta salad features mezze penne pasta, tomatoes, cucumbers, shallot, salmon, and a lemon-pepper-dill vinaigrette. You can use leftover salmon if you like, but those new handy pouches of salmon are great to have on hand in the pantry for salads like this!

½ (16 ounce) package mezze (short) penne pasta
1 cup sliced and quartered cucumber
1 cup halved cherry tomatoes
2 tablespoons minced shallot
1 (2.6 ounce) pouch wild-caught pink salmon (such as Chicken of the Sea®)
¼ cup extra-virgin olive oil
1 tablespoon white wine vinegar
1 tablespoon freshly squeezed lemon juice
1 teaspoon lemon-pepper seasoning
½ teaspoon Dijon mustard
½ teaspoon salt
¼ teaspoon dried dill weed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain, rinse in cold water, drain well, and place in a serving bowl.
  • Top pasta with cucumber, tomatoes, and shallot. Break up salmon and sprinkle on top.
  • Whisk olive oil, vinegar, lemon juice, lemon-pepper seasoning, mustard, salt, and dill in a small bowl for the vinaigrette. Drizzle over the salad and toss gently to combine.

This recipe was one of my husband's favorite ways to enjoy salmon. I've had it so long I don't even remember where it came from originally. This salad is a nice light meal for a hot summer day, and it lets the salmon flavor come through. -Mary Dennis, Bryan, Ohio

Number Of Ingredients 12

1 package (8 ounces) spiral pasta, cooked and drained
2 cups fully cooked salmon chunks or 1 can (14-3/4 ounces) pink salmon, drained, bones and skin removed
1-1/2 cups quartered cherry tomatoes
1 medium cucumber, quartered and sliced
1 small red onion, sliced
1/2 cup canola oil
1/3 cup fresh lemon or lime juice
1-1/2 teaspoons dill weed
1 garlic clove, minced
3/4 teaspoon salt
1/4 teaspoon pepper
1 head lettuce, torn

Steps:

  • In a large bowl, toss the pasta, salmon, tomatoes, cucumber and onion. For dressing, combine the oil, lemon or lime juice, dill, garlic, salt and pepper; mix well. Pour over pasta. Cover and chill. Serve over lettuce.

dressing
1/3 c lowfat plain yogurt
2 Tbsp light mayonnaise
2 Tbsp fresh chopped parsley

3 eggs, hard-cooked, quartered
1 c cooked elbow macaroni or other pasta, drained
1 can(s) (7 3/4 oz.) salmon, drained and flaked
1/2 c chopped green bell pepper
1/4 c chopped celery
1/2 cucumber, peeled, seeded and diced
2 Tbsp chopped green onion

Steps:

  • 1. In a small bowl, combine dressing ingredients; cover and refrigerate.
  • 2. Drain and flake salmon. Prep vegetables.
  • 3. Cook eggs to hard boiled (could do ahead). Cook macaroni per package directions, rinse with cold water and drain.
  • 4. In medium bowl, combine remaining ingredients, except lettuce and eggs. Stir in dressing and toss.
  • 5. Serve on lettuce leaves, and garnish with eggs. Makes 4 servings. Each serving is 205 calories.

PAM'S SALMON AND MACARONI SALAD



Pam's Salmon and Macaroni Salad image

High school recipe for Foods III, senior class. When Salmon was about the same price as Tuna. I love to play with this salad, adding other things and trying new herbs. But this is the "Original" version.

2-3 c cooked macaroni
1 c cucumber, chopped
1- 15oz can(s) can salmon, flaked (remove bones and skin if desired)
1 Tbsp grated onion
1 Tbsp minced parsley
1 Tbsp chopped fresh dill
3/4 c mayonnaise
1/4 tsp salt
1/8 tsp pepper
2-4 Tbsp lemon juice
1/2 to 3/4 c chopped celery

Steps:

  • 1. Cook Macaroni as directed in salted water. Drain macaroni and cool under very cold running water. Shake as much water off as possible before making salad.
  • 2. While cooking pasta, chop and prepare all other ingredients.
  • 3. Combine all ingredients and toss lightly to blend.
  • 4. Serve on lettuce cups and garnish with chopped parsley and /or paprika.
  • 5. I just love the Directions. So Gourmet don't you think?
