I love simple and easy recipes and this one is on the top of my list. A classic recipe with a twist that's great for any or no occasion. Enjoy the sweet, tangy cranberry apple deliciousness!

12 ounce bag fresh or frozen cranberries
6 ounce can frozen apple juice concentrate, slightly thawed
1/4 - 1/2 cup granulated sugar
pinch sea salt and cinnamon, optional

Steps:

  • 1.Rinse cranberries under cold water. Place into a medium saucepan along with the apple juice concentrate. Cook for a minute or two and then add the sugar, salt and cinnamon if using. 2.Cook over medium heat until the cranberries start to burst. Cook just a minute or two more. Taste for sweetness. Let cool in pan on stove for about 20 minutes then place in sealed container in fridge. Serve when chilled. Keeps for up to 3 days in fridge. Enjoy!

  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

1 cup water
1 cup white sugar
1 (12 ounce) package fresh cranberries
1 orange, peeled and pureed
1 apple - peeled, cored and diced
1 pear - peeled, cored and diced
1 cup chopped dried mixed fruit
1 cup chopped pecans
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • In a medium saucepan, boil water and sugar until the sugar dissolves. Reduce the heat to simmer, and stir in cranberries, pureed orange, apple, pear, dried fruit, pecans, salt, cinnamon, and nutmeg. Cover, and simmer for 30 minutes, stirring occasionally, until the cranberries burst. Remove from heat, and let cool to room temperature.

My neighbor, Dennis, is quite a good cook, and one of his favorite dishes to take to Thanksgiving dinners is his special cranberry sauce. This is truly wonderfully tasty. Try it with your next Turkey dinner (Or put some on a leftover turkey sandwich for a punch of flavor)

1 pkg fresh cranberries, 12 oz.
2 medium navel oranges
3/4 to 1 c sugar
1/3 c ruby port
1/2 tsp cinnamon, ground
1/2 tsp cardamom, ground
1/2 c toasted nuts (pecans or walnuts), coarsely chopped
1 or 2 pinch salt

Steps:

  • 1. Wash and zest both oranges, then peel and chop into about 3/4 inch pieces. Place all ingredients except nuts, in a heavy bottomed sauce pan and bring to a boil. Turn down heat to a low simmer and cook until berries pop and orange pieces dissolve somewhat. Stirring often, simmer until thickened, about 5 to 10 minutes. Remove from heat and stir in toasted nuts. Refrigerate or serve warm.

1 cup(s) sugar
1/3 cup(s) dried cherries
- grated rind of 1 orange
1/2 cup(s) orange juice
1 - fresh mandarin orange, peeled, or 1 can
- pinch salt

Steps:

  • Wash and drain berries.
  • Place all ingredients in a sauce pan.
  • Cover, bring to a boil, reduce to simmer
  • Cook until berries pop, about 20-25 minutes.
  • Can be made several days ahead.

  • In a saucepan, combine cranberries, sugar, orange zest and juice, cinnamon, 1/4 teaspoon salt, and 1/4 cup water. Bring to a boil, then reduce heat to medium and simmer, stirring occasionally, until cranberries burst and mixture thickens slightly, 12 to 15 minutes. (Sauce will thicken more as it cools.) Remove from heat; let cool completely. Refrigerate in an airtight container up to 1 week.
