I love reubens and rarely make them as I live with a "sauerkraut-phobe". Perhaps 1/2 & 1/2, with and without the kraut then everyone's happy?

4 ounces thinly sliced deli corned beef, chopped (about 1 cup)
3/4 cup shredded swiss cheese
1/4 cup light thousand island dressing
1 garlic clove, minced
4 flat pita bread rounds (without pockets)
1 (8 ounce) can sauerkraut, drained and squeezed dry

Steps:

  • Preheat oven to 425ºF.
  • Mix chopped corned beef & Swiss cheese. Set aside.
  • Combine salad dressing & garlic.
  • Assembly order:.
  • Spread pita with salad dressing/garlic mixture.
  • Sprinkle with dry sauerkraut.
  • Top with corned beef/cheese mix.
  • Bake on a stone or baking pan for 10-12 minutes or until cheese is melted and edges are lightly browned.
  • * Cooks note - For pizzas with tender crusts, be sure to use pitas without pockets for this recipe.

6 tablespoons Dijon mustard, divided
4 small Boboli pizza crusts
1 lb shredded swiss cheese, divided
1 lb corned beef, thinly sliced
2 2/3 cups sauerkraut, well drained
2 teaspoons caraway seeds

Steps:

  • Spread each pizza crust with 1 tablespoon of mustard.
  • Sprinkle half of the cheese evenly over the pizza crusts.
  • Place corned beef slices evenly over the pizza crusts, folding as needed.
  • Spread the remainder of the mustard evenly over the corned beef slices on each pizza.
  • Add sauerkraut evenly onto each pizza.
  • Sprinkle remainder of cheese evenly over each pizza.
  • Sprinkle with caraway seeds.
  • Place pizzas on a pre-heated baking sheet.
  • Bake at 450 for 10-12 minutes or until pizzas are well heated and cheese is melted.

Refrigerated pizza dough is found next to the refrigerated crescent rolls in your grocery. Hubby is going to pack the leftovers in his lunch box for quick meal on the go.

1 lb pkg refrigerated pizza dough
1 1/2 cups shredded swiss cheese
1 lb deli-sliced pastrami or 1 lb corned beef
1 cup sauerkraut (drained well)
1/2 tablespoon olive oil

Steps:

  • Cut Pizza Dough in half. Form one piece in to a round disk / or square. Use a floured rolling pin or stretch with your hands.
  • Place disk of dough on a parchment lined pan or greased pizza pan. Sprinkle half the cheese on top, leaving a 1inch boarder around the edges Next top with the meat, then the drained kraut. Top with the remaining cheese.
  • Roll out the second piece of dough and place on top over the filling. Tightly crimp together the edges to seal. Brush the top with olive oil .
  • Bake on lower third of oven at 450 degrees for 20-25 mins .
  • Cut Pizza into slices. Dip in thousand Island Dressing. Yummmm!

1 pillsbury pizza crust
1 1/2 cups thousand island dressing (more or less)
1 cup shredded swiss cheese (more or less)
1 cup shredded provolone cheese (more or less)
1 1/2 cups sauerkraut (more or less)
8 ounces pastrami (Thinly Sliced) or 8 ounces corned beef (Thinly Sliced)

Steps:

  • Bake pizza dough according to packaged directions.
  • Use the thousand Island dressing as the sauce for the base of the pizza.
  • Sprinkle partial cheese mixture on top of thousand island dressing.
  • Place half the meat. Add sauerkraut evenly all over, then repeat by layering with the rest of the remaining meat and shredded cheese.
  • Place back in the oven and bake until all is melted and the outer crust is dark golden brown. Pull out and Let cool, slice and serve warm.
