50ml tequila blanco (we used El Jimador)
10ml agave syrup
10ml lime juice
60ml pink grapefruit juice
soda water
sea salt
wedge pink grapefruit

Steps:

  • Dip the rim of a highball glass in a bowl of water, shake off the excess, then sprinkle a spoonful of salt onto a plate or saucer and dip the glass into that to coat the rim.
  • Fill a cocktail shaker with ice, then add all the remaining ingredients minus the soda water. Shake until the outside of the shaker feels cold, then strain into your prepared glass. Add a few fresh ice cubes and top with soda water to serve. Garnish with the wedge of grapefruit.

MEZCAL PALOMA

A paloma is traditionally made with tequila, grapefruit juice, and lime, but this version uses mezcal instead of tequila for a nice smoky twist! The smoke flavor is due to the underground ovens filled with volcanic rock, coal and wood that are used to cook the agave to produce the mezcal. I like to rim the glass with coarse smoked salt or black salt, but feel free to use regular kosher salt.

1 cup ice cubes
2 ounces mezcal
3 ounces grapefruit soda

Steps:

  • Rub the cut side of a lime wedge around the edge of the glass. Place salt on a plate and invert glass into salt to rim the glass. Fill glass with ice. Squeeze juice from the same lime wedge into the glass. Pour mezcal over ice, then top with grapefruit soda. Garnish with remaining lime wedge.

  • Fill a cocktail shaker with ice and add the tequila, grapefruit juice, lime juice and agave syrup. Attach the shaker lid and shake vigorously for 15 seconds. Fill a glass with ice and strain the cocktail over the ice. Top with seltzer and garnish with the lime wedge.

It gets its light, bubbly flavor from Mexican soda (which is also great on its own) and a platinum tequila. The "drunken lime" floater is a cored-out half lime filled with a shot of reposado tequila.

¼ cup white sugar
1 red grapefruit, halved widthwise
¼ cup kosher salt
1 cup ice cubes, or as needed
4 fluid ounces tequila
2 tablespoons simple syrup, or to taste
4 fluid ounces club soda

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cut limes in half widthwise. Cut 1 half into 3 wheels.
  • Pour sugar into a shallow bowl. Dip lime halves, 2 of the lime wheels, and grapefruit into sugar to coat thoroughly.
  • Place limes and grapefruit cut-side down on the hot grill. Cook, turning lime wheels occasionally, until browned and grill marks form, 5 to 10 minutes. Transfer to a rimmed baking sheet to cool.
  • Rub remaining lime wheel over the rim of 2 highball glasses. Dip rims in kosher salt. Fill glasses with ice.
  • Juice grilled lime halves and grapefruit into a small pitcher. Pour in any juices that accumulated on the baking sheet. Stir in tequila and simple syrup. Divide mixture between glasses and top off with club soda. Garnish with grilled lime wheels.

On a family trip to Guadalajara, Mexico a few years back we often had a drink called a "Rusa", which I found out later is also known as a Paloma. We've been enjoying these for years now. They're easier to make than Margaritas but just as tasty and refreshing. We don't really use a recipe, but I found this one from Martha Stewart. We don't do the "drunken lime" floater, but it sounds like a fun idea. Enjoy!

1 medium to large yellow or pink grapefruit, halved
2 limes, halved
Kosher salt or coarse sea salt, for the glass
Ice
4 ounces (1/2 cup) tequila
1 ounce agave nectar or simple syrup (see Note)
2 ounces club soda

Steps:

  • Light a grill and arrange it for direct heat or preheat a grill pan. Grill the grapefruit and the limes over high heat until well browned on the bottoms, 4 to 5 minutes. Let cool slightly.
  • Arrange some salt on a small plate. Moisten the rims of 2 high ball glasses and coat with salt.
  • For each cocktail: Fill a shaker with ice and add 2 ounces of squeezed grapefruit juice, 1 ounce of squeezed lime juice, 2 ounces tequila and ½ ounce agave nectar. Close the shaker and shake well. Fill one of the prepared glasses with ice and strain the drink into the glasses. Top with 1 ounce of club soda and serve. Fill the shaker with clean ice to make the second cocktail.
