Delicious! I consider myself more of a gourmet cook and thought of this as a great kids recipe, because they are so easy to prepare. Well, surprise, surprise. They are fabulous and everyone raves!

1 (21.5 ounce) package brownie mix
6 graham crackers
1 ½ cups miniature marshmallows
8 (1.5 ounce) bars milk chocolate, coarsely chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare brownie mix according to package directions. Spread into a greased 9x13 inch pan.
  • In a medium bowl, break graham crackers into 1 inch pieces and toss with miniature marshmallows and milk chocolate. Set s'more mixture aside.
  • Bake brownies for 15 minutes in the preheated oven. Remove, and sprinkle the s'more goodies evenly over the top. Bake for an additional 15 to 20 minutes, or until a toothpick inserted in the center comes out clean. Allow brownies to cool before cutting into squares.

1-1/2 cups graham cracker crumbs (about 10 whole crackers)
1/4 cup sugar
1 teaspoon ground cinnamon
1/2 cup butter, melted
BROWNIES:
1 ounce unsweetened baking chocolate
1/2 cup butter, softened
1-1/4 cups sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1/3 cup dark baking cocoa
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup miniature marshmallows
TOPPING:
1 cup miniature marshmallows
5 whole graham crackers, broken into bite-sized pieces

Steps:

  • Preheat oven to 350°. Combine cracker crumbs, sugar and cinnamon. Stir in melted butter. Press onto bottom of an ungreased 13x9-in. baking pan. Bake until lightly browned, 7-9 minutes. Cool on a wire rack., For brownies, melt unsweetened chocolate on high in a microwave, stirring every 30 seconds. Cool slightly. Cream butter and sugar on medium speed until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition; beat in melted chocolate and vanilla. In another bowl, whisk together flour, cocoa, baking powder and salt; stir into creamed mixture. Fold in 1 cup miniature marshmallows. , Spread batter over graham cracker crust. Top with 1 cup marshmallows and broken graham crackers. Bake until center is set, 18-22 minutes (do not overbake).

6 tablespoons butter, melted
1 (19.5 ounce) box Pillsbury® Family Size Chocolate Fudge Brownie Mix
½ cup Crisco® Pure Vegetable Oil
¼ cup water
2 large eggs
1 (14 ounce) can Eagle Brand® Sweetened Condensed Milk

Steps:

  • Heat oven to 350 degrees F. Coat 13 x 9-inch baking pan with no-stick cooking spray. Combine graham cracker crumbs and butter in medium bowl, stirring until evenly moistened. 1 cup graham cracker crumbs (made from 10 rectangular crackers)
12 tablespoons (1 1/2 sticks) unsalted butter
1/2 cup plus 1 tablespoon sugar
Salt
1 cup bittersweet chocolate chips
2 large eggs, at room temperature
1 teaspoon instant espresso powder
1 1/2 teaspoons vanilla extract
1/4 cup all-purpose flour
3/4 teaspoons baking powder
3 cups mini-marshmallows

Steps:

  • Break graham crackers into small pieces and pulse in food processor until they become fine crumbs. Melt 4 tablespoons butter. Add melted butter, 1 tablespoon sugar, and 1/4 teaspoon salt to crumbs and pulse to combine. Press into bottom of prepared pan.
  • Melt chocolate and remaining 8 tablespoons butter in medium bowl in microwave, 1 to 2 minutes, stopping every 20 seconds to stir with rubber spatula. Transfer mixture to a large bowl and cool, stirring occasionally, for 10 minutes.
  • With a wooden spoon, mix in remaining 1/2 cup sugar, eggs, espresso powder, vanilla, and 1/4 teaspoon salt. Add flour and baking powder and mix until smooth.
  • Pour batter into prepared pan. Bake for 25 to 30 minutes, until a toothpick inserted into the center of the brownies comes out with moist crumbs attached. Do not over-bake. Transfer to cooling rack and top with marshmallows.
  • Adjust oven rack to upper third position and heat broiler. Broil until marshmallows are golden brown, 1 to 3 minutes. Cool in pan 1 hour. Using foil sling, transfer directly to wire rack and let cool completely, at least 1 hour. Cut into 2-inch squares and serve.

Nonstick cooking spray, for the pan
2 sleeves graham crackers (18 crackers)
1 teaspoon ground cinnamon
1/2 teaspoon chili powder
1/4 teaspoon kosher salt
10 tablespoons unsalted butter, melted
2 large eggs
1/2 cup granulated sugar
1/2 cup light brown sugar
1 teaspoon vanilla extract
3 tablespoons unsalted butter, melted and slightly cooled
1/2 cup cocoa powder
1/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ancho chile powder
1/4 teaspoon kosher salt
1/4 cup semisweet chocolate chips
2 cups mini marshmallows
1/2 cup (1 stick) unsalted butter, at room temperature
1 1/2 cups powdered sugar
2 cups marshmallow creme
1/2 teaspoon vanilla extract

Steps:

  • For the graham cracker layer: Preheat oven to 350 degrees F. Grease and line an 8-inch square baking pan with parchment, leaving a 1-inch overhang on each side.
  • Add the graham crackers, cinnamon, chili powder and salt to a food processor and pulse to break up. Add the butter and pulse until the ingredients are combined and the mixture resembles sand. Press the mixture into the prepared baking pan. Refrigerate while you make the brownie layer.
  • For the brownie layer: Combine the eggs, sugars and vanilla extract in a large bowl. Mix until well combined. Add the melted butter, cocoa powder, flour, baking powder, cinnamon, ancho chile powder and salt. Stir to combine, but take care to not overmix. Add the chocolate chips and fold in.
  • Spread the entire brownie layer mixture over the top of the graham cracker crust. Bake until the top is dry and firm, about 40 minutes. (A cake tester will not come out clean because the brownies are so fudgy!) Let them cool completely.
  • For the marshmallow frosting: Turn the oven to the broil setting. Adjust the oven rack so it's 6 inches from the heat source.
  • Spread the mini marshmallows on an unlined sheet tray, then broil until toasty and charred, about 1 minute. (As an alternative, use a kitchen torch and char until you have your desired level of darkness.) Let cool to touch.
  • Add the butter and powdered sugar to a bowl and beat until fluffy and well mixed. Add the marshmallow creme and vanilla and stir until combined. Set aside.
  • Spread the marshmallow frosting over the top of the cooled brownie. Add the charred mini marshmallows all over.
  • Remove from the pan and cut into squares.
