1/2 cup whole milk
1/4 cup creamy peanut butter
3 tablespoons honey
1 1/2 cups ice cubes

Steps:

  • Using a blender, mix the almonds, milk, peanut butter and honey on high speed until smooth, about 1 minute.
  • Add the ice cubes and blend until slushy, about 15 seconds.
  • Enjoy!

1/2 cup butter
2 cups white chocolate chips, divided
2 large eggs
1/3 cup sugar
1 cup flour
1/2 teaspoon salt
1/2 teaspoon almond extract
1/2 cup seedless raspberry jam
1/4 cup toasted sliced almonds

Steps:

  • Preheat oven to 350*.
  • Grease and sugar a 9x9-inch pan.
  • Melt butter in medium, microwaveable bowl on high power for 1 minute; stir.
  • Add 1 cup morsels; do not stir.
  • Beat eggs in large mixer bowl until foamy.
  • Add sugar; beat until light lemon colored, about 5 minutes.
  • Stir in morsel-butter mixture.
  • Add flour, salt and almond extract.
  • Mix at low speed until combined.
  • Spread 2/3 of batter into prepared pan.
  • Bake 15 to 17 minutes, or until light golden brown around edges.
  • Remove from oven to wire rack.
  • Spread jam over warm crust.
  • Stir remaining morsels into remaining batter.
  • Drop tablespoons of batter over jam.
  • Sprinkle with almonds.
  • Bake 25 to 30 minutes, or until edges are browned.
  • Cool completely in pan on wire rack.
  • Cut into bars.

I have not made this yet but I love raspberries and almonds together so this is on my list to make soon! Recipe adapted from the Stonebridge Inn. Edited after reading Kittencal's suggestion of cooking time and sugar. Original time was 30 min. increased to 45 min. original sugar was 1/2 cup increased to 3/4 cup.

1 (8 inch) chocolate crumb crusts
1 cup raspberry jam
1/2 cup butter or 1/2 cup margarine, softened
3/4 cup sugar
2 eggs
1/2 cup ground almonds

Steps:

  • Spread jam in the pie crust.
  • Cream the butter and sugar together.
  • Add the eggs one at a time, beating after each addition.
  • Stir in the almonds.
  • Pour the batter over the jam.
  • Bake in a 350 oven for 45 minutes or until delicately browned.

They are delicious paired with olive tapenade or any soft spreadable cheese for a cocktail party. For a simple snack eat with cheddar or jack cheese. 1 3/4 cups blanched almond flour
1/2 teaspoon celtic sea salt
2 tablespoons fresh rosemary, finely chopped
1 tablespoon olive oil
1 egg

Steps:

  • In a large bowl, combine almond flour, salt and rosemary.
  • In a medium bowl, whisk together olive oil and egg.
  • Stir wet ingredients into almond flour mixture until thoroughly combined.
  • Roll the dough into a ball and press between 2 sheets of parchment paper to ⅛ inch thickness.
  • Remove top piece of parchment paper.
  • Transfer the bottom piece with rolled out dough onto baking sheet.
  • Cut dough into 2-inch squares with a knife or pizza cutter.
  • Bake at 350° for 12-15 minutes, until lightly golden.
  • Let crackers cool on baking sheet for 30 minutes, then serve.
