PACIFIC RIM CHICKEN WITH WILD WEST SAUCE



Pacific Rim Chicken With Wild West Sauce image

A super tangy barbecue sauce that works just as great for chicken as it does ribs. I serve this chicken dish with potato salad or mashed potatoes, a green salad and corn bread.

2 tablespoons minced garlic
2 tablespoons soy sauce
2 tablespoons maple syrup
2 tablespoons rice vinegar
1 tablespoon salad oil
1 tablespoon sesame oil
1 tablespoon minced fresh ginger
1 teaspoon ground pepper
6 boneless skinless chicken breast halves
1 firm ripe mango
3/4 cup water
1/2 cup ketchup
1/3 cup soy sauce
1/4 cup rice vinegar
2 tablespoons firmly packed brown sugar
1 tablespoon tamarind paste or 1 tablespoon lemon juice
2 teaspoons chili powder
2 teaspoons minced garlic
1 teaspoon minced fresh ginger
1/2 teaspoon cayenne pepper
1/2 teaspoon regular black pepper

Steps:

  • In a 1 gallon plastic food bag mix all of the above ingredients with the chicken. Seal bag and turn to coat meat. Chill at least 30 minutes or up to 2 hours turning bag occasionally.
  • Prepare BBQ. When medium hot lay chicken breasts on grill. Cook turning occasionally until cooked thoroughly. Baste chicken often with marinade during the 1st 5 minutes of cooking and then DISCARD the remaining marinade.
  • Spoon Wild West Sauce equally onto plate. Set a chicken breast in sauce serve with rice and vegetables.
  • For Sauce:.
  • In a 2-3 quart sauce pan combine the mango and the remaining ingredients. Bing to a boil of medium-high heat. Reduce heat and simmer, stirring occasionally until reduced to 2 cups, about 25 minutes.
  • Pour mixture into a blender and whirl until smooth. Serve warm If making up to 2 days ahead, let cool, then chill airtight; reheat until steaming. (can be made up to 2 days ahead).

I was trying to come up with a homemade BBQ sauce for my wife since she doesn't like traditional BBQ. This is what I came up with. You could add this sauce to any kind of pork ribs.

1 cup soy sauce
¾ cup dark brown sugar
2 tablespoons minced garlic
1 tablespoon rice wine vinegar
1 tablespoon chile-garlic sauce (such as Sriracha®)
1 teaspoon grated fresh ginger
1 teaspoon Asian (toasted) sesame oil
1 ½ teaspoons ground black pepper
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Stir soy sauce, brown sugar, garlic, rice wine vinegar, chile-garlic sauce, ginger, sesame oil, and black pepper together in a saucepan; bring to a boil.
  • Whisk cornstarch and water together in a small bowl until the cornstarch dissolves; pour into boiling soy sauce mixture. Reduce heat to medium-low and cook until the sauce is thick, 3 to 5 minutes.

1 bunch or 8 ounces spinach, stems removed, washed and trimmed
1 tablespoon toasted sesame oil
1 tablespoon rice wine vinegar
1/4 teaspoon sea salt
1 tablespoon toasted sesame seeds
24 (1/2 to 1 ounce) thinly sliced pieces geoduck siphon, pounded
Dipping Sauce, recipe follows
2 green onions (scallions), green part only, thinly sliced
2 tablespoons sliced pickled ginger
2 tablespoons chopped shallots
2 teaspoons minced garlic
1 tablespoon Asian barbecue sauce
2 teaspoons hot bean sauce
2 tablespoons hoisin sauce
2 tablespoons Chinese Shoaxing wine or dry Sherry
2 tablespoons soy sauce
1/4 cup chicken stock
1 teaspoon sugar

Steps:

  • In a large saucepan of boiling salted water, blanch the spinach for about 1 minute, or until leaves are just wilted. Drain and rinse under cold water until the spinach is thoroughly cooled. Drain well and wrap spinach in clean, dry towel. Squeeze to remove excess moisture. Place spinach in medium bowl, sprinkle on sesame oil, rice wine vinegar, and salt and toss to mix. Set aside until ready to use. Sprinkle with sesame seeds for garnish just before serving.
  • Place a portion of the Sesame Spinach in the center of 4 plates. Or, place spinach on 1 large platter for buffet or family-style serving. Arrange 6 geoduck slices around the spinach. Drizzle some sauce on the geoduck and garnish with a sprinkling of green onions. Serve a bit of the sauce on the side as a dipping sauce, if desired. Place pickled ginger in center of salad in a mound.
  • In a small saucepan over medium heat, combine shallots, garlic, Asian barbecue sauce, hot bean sauce, and hoisin sauce and cook for 30 seconds. Add wine and cook for 1 minute. Add soy sauce, stock and sugar and cook for 2 minutes. Adjust with sugar, to taste. Transfer mixture to a blender and process until liquefied. Let cool.;

MUSTARD BBQ SAUCE



Mustard BBQ Sauce image

A sweet mustard-based BBQ sauce with a bit of a bite, excellent on chicken and pork. Also makes a great dipping sauce for chicken fingers! Baste on meat while grilling or serve on the side. Will store covered in refrigerator for 2 to 3 weeks.

I'm very excited to show you my take on America's most popular style of barbecue sauce--which of course originated in and around Kansas City. After you make a batch of this and taste just how incredible it is, I don't think you'll ever buy that stuff from the store again. Sauce may be used right away, but for best results, wrap and refrigerate for a day or two before using to allow the flavors to develop.
