1 cup sugar
1/4 cup cornstarch
Dash salt
1/2 teaspoon ground cinnamon, optional
1/3 cup water
1 cup fresh blueberries
1 cup halved fresh strawberries
1 cup fresh raspberries
3/4 cup fresh blackberries
1 tablespoon lemon juice
Dough for double-crust pie
2 tablespoons butter

Steps:

  • In a large saucepan, combine sugar, cornstarch, salt and if desired, cinnamon. And water and stir until smooth; add blueberries. Bring to a boil; cook and stir until thickened, 2-3 minutes. Set aside to cool slightly. Gently fold strawberries, raspberries, blackberries and lemon juice into the blueberry mixture., Preheat oven to 400°. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add berry mixture; dot with butter. Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom pastry; flute edge. , Bake for 10 minutes. Reduce oven setting to 350°; bake until crust is golden brown and filling is bubbly, 45-50 minutes. Cool on a wire rack. Store in the refrigerator.

This pie forms its own bottom and top crust so it is sort of like a pie/cake. Makes a fairly shallow pie so to make it higher, bake in a 9-inch pan and increase baking time 5-8 minutes.

1 large egg
1 large egg yolk
1/2 cup sugar
1/4 cup firmly packed light brown sugar
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour, plus
1 tablespoon all-purpose flour
1 1/2 tablespoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large apple, peeled, cored, and cut into chunks
1/2 cup chopped pecans or 1/2 cup walnuts
fresh whipped cream

Steps:

  • Butter a 9 1/2 inch deep dish pie pan; set aside.
  • In a mixing bowl, combine egg, egg yolk, sugar, and brown sugar; beat, using an electric mixer, for 2 minutes or until light and airy; blend in vanilla.
  • In another bowl, sift the flour, baking powder, cinnamon, and nutmeg; stir into the batter along with the apple and nuts.
  • Transfer mixture into prepared pie pan; smoothing the top to even out.
  • Place pie on the center rack of a 350° oven; bake about 30 minutes or until the top is a dark golden brown and crusted over; the apples will most likely be visible through the crust.
  • Place pie on a wire rack and let cool.
  • Serve barely warm or at room temperature, garnished with whipped cream.

Number Of Ingredients 8

You will need a double pie crust
1 1/2 C sugar
4 Tbls plus 1 1/2 tsp cornstarch
3/4 C cold water
3 Tbls lemon juice
3 C fresh blueberries
1 C fresh raspberries
1 C fresh black berries

Steps:

  • Preheat oven to 400 degrees In a saucepan, combine sugar and cornstarch. Stir in water and lemon juice stir until smooth. Add berries, stir gently. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened and bubbly. Remove from heat, cool. In a prepared pie dish with bottom crust, add filling. For the top, make a lattice crust. Seal and flute the edges. Cover the edges loosley with foil to prevent over browning. Bake at 400 degrees for 10 minutes. Then reduce temperature to 350 degrees and bake for 40 - 50 minutes or until the crust is golden brown and the filling is bubbley.

Blueberries grow well in this area, and this old-time recipe goes over well with pie eaters. It won first prize at the 1990 Missouri State Fair!

FILLING:
1 can (14 ounces) whole-berry cranberry sauce
1/3 cup packed brown sugar
1/4 cup sugar
2 tablespoons all-purpose flour
2 tablespoons cornstarch
2 tablespoons orange juice
1/2 teaspoon grated orange zest
1/8 teaspoon salt
2 cups fresh or frozen blueberries
CRUST:
2-2/3 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon ground mace
1 cup shortening
6 tablespoons ice water
2 tablespoons butter
1 large egg
1 tablespoon water

Steps:

  • In a large bowl, combine first eight filling ingredients. Stir in blueberries; set aside. , For crust, in another bowl combine the flour, salt and mace. Cut in shortening until mixture is crumbly. Gradually add ice water, 1 tablespoon at a time, and toss with a fork until a ball is formed. Cover and refrigerate for 30 minutes or until easy to handle., Divide pastry in half so that one ball is slightly large than the other. Roll out large ball on a lightly floured surface to fit a 9-in. pie plate., Transfer pastry to pie plate. Trim pastry even with edge of plate. Add the filling. Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Beat egg with water; brush over crust. Cut slits in top. , Bake at 425° for 40 minutes or until golden brown.

1 can(s) 14 oz. whole berry cranberry sauce
1/3 c splenda brown sugar blend
1/4 c granulated sugar
2 Tbsp all purpose flour
2 Tbsp corn starch
2 Tbsp orange juice
2 tsp orange extract
1/8 tsp salt
3 c frozen blueberries ( or use fresh)
1 pkg refrigerated double pie crust (room temperature)
EGG WASH FOR TOP OF PIE
1 large egg room temperature
2 tsp water
1 Tbsp white decorators sugar crystals

Steps:

  • 1. Preheat oven to 425 DEGREES F. Thaw crust according to directions on package, or if you are ambitious, you may choose to make your own. You will need a 9 inch deep dish pie plate for this recipe.
  • 2. Using a large bowl, add the whole berry cranberry sauce with both sugars, flour and corn starch, then add the orange juice, orange extract, and salt, then stir together till blended.
  • 3. The add the frozen Blueberries, or you may use fresh, stir gently till blended. If berries are frozen allow to sit on counter 10 to 15 minutes so berries will thaw a bit, this will aid in keeping you baking time down to a minimum. If using fresh berries, omit this step.
  • 4. While the filling is thawing, unroll the pie crust and fit into deep dish pie plate. This is the pastry cutter I used.
  • 5. Unroll second crust onto a lightly floured counter, then proceed to cut into thin strips with a pastry cutter or sharp knife.
  • 6. Add berry filling to the pie crust, then top with strips of pastry. I chose to make a lattice crust. to do so, place enough strips going in the same direction over the fruit filling leaving a small space between each strip. The pull back half of the strips half way back from filling, leaving the other strips in place, then place a long strip across the pie in the opposite direction, return the folded strips back to their original position. Then pull the other strips that were not pulled back the first time half way across pie, then add another strip in the opposite direction. Repeat till the entire pie is covered. Fold over lapping strips underneath bottom crust, then crimp edges.
  • 7. Prepare an egg wash by adding a large egg to a small bowl, then add 2 teaspoons of water, then beat together till blended. Then brush egg wash over top of the pastry strips, till completely covered, then sprinkle with the white sugar crystals( often called decorators sugar)
  • 8. Line a long shallow pan with foil then place pie on foiled pan to catch any potential drips from pie. This is what the decorators sugar looks like.
  • 9. Bake in preheated 425 degree F. oven for 40 to 45 minutes till filling is hot and bubbly, and top of pie is golden brown.
  • 10. Allow pie to cool then slice and serve either plain or with your favorite Ice Cream.
