- Stir together vodka, lemon juice, horseradish, hot pepper sauce, sugar and salt. Gently stir in tomato and chives. Clean oysters under running water; shuck and discard top shell, sever membrane on bottom of shell. Spoon vodka relish on oysters. Dust with pepper and serve on a bed of shaved ice.

- Shuck oysters letting oyster remain in deep half of shell. Arrange oysters in a rock salt lined baking pan. If you don't have rock salt, crumple aluminum foil to make a bed for the oysters. Top each oyster with 1/8 t horseradish, a drop of Tabasco, 2 drops of Worcestershire and shredded cheese. Top w/small piece of bacon. Place pan under broiler about 6" from heat. Broil about 5 min. or until bacon is crisp.

- Gather the ingredients.
- Position a rack in the center of the oven and heat to 425 F/220 C/Gas Mark 7. Add a layer of rock salt to a rimmed baking sheet or substitute dry, uncooked rice. This will keep the oyster shells from wobbling.
- Scrub the oyster shells with a stiff brush.
- Carefully shuck the oysters over a bowl to catch any liquids that might spill out. Run the knife along the bottom of the inside of the shell to loosen the oyster. If some of the oyster liquor does spill out, return it to the bottom shell. Discard the top shells and arrange the oysters in the bottom shell with their liquid in the prepared baking pan.
- In a medium skillet over medium heat, melt 4 tablespoons of the butter. Add the panko crumbs and cook, stirring, until the crumbs are lightly browned. Remove from the heat and set aside.
- In a bowl, combine the remaining 4 tablespoons of softened butter with the chives, lemon zest, and the lemon juice.
- Top each oyster with a scant teaspoon of the butter-chive mixture and then sprinkle each with the buttered panko crumbs.
- If desired, finish with a light sprinkling of paprika.
- Bake the oysters until the oysters are cooked through and the topping is golden brown, 8 to 10 minutes.
- Sprinkle with fresh chopped parsley and serve with lemon wedges.

I found this recipe quite some time ago on another site and thought it sounded very good. I think the addition of the spices is very interesting and I can't wait to try it.

Steps:
- Combine the first 9 ingredients in a bowl and mix well.
- Add in the oysters and marinate at least 30 minutes in the fridge.
- Put the remaining ingredients in a paper bag and mix well by shaking.
- Remove the oysters from the marinade and drop in the bag.
- Shake the bag to coat the oysters and let them rest in the bag for a few minutes.
- Heat about 2" of oil in the pan to 365 degrees.
- Place the oysters in the oil leaving at least a 3/4" space between pieces (do not overcrowd them or the oysters will be soggy).
- Fry the oysters about 4 minutes or until done.
- Remove to paper towels to drain.
- After most of the oil has drained, remove to fresh paper towels.
- Make sure the oil is at least 360 degrees before adding and frying the next batch.
