1 cup butter, melted
½ (16 ounce) package saltine crackers, crushed
2 (8 ounce) cans oysters
1 ½ tablespoons heavy whipping cream
1 teaspoon Worcestershire sauce
2 (14.75 ounce) cans cream-style corn

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13 inch casserole dish. Drain the oysters, reserving juice.
  • In a small mixing bowl combine margarine and crushed saltine crackers. Cut the oysters into small pieces, set aside. In a small mixing bowl combine cream, oyster juice and Worcestershire sauce.
  • Spread one can of corn onto the bottom of the casserole dish. Layer 1/2 of the oysters over the corn, 1/2 of the cracker mixture. Repeat layering with remaining ingredients. Pour the oyster juice mixture over the top of the entire casserole. Cover the casserole dish with aluminum foil.
  • Bake casserole for 20 minutes. Remove foil and bake an additional 30 minutes.

1-1/2 cups crushed butter-flavored crackers (about 38 crackers)
1/2 cup butter, melted
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 pint shucked fresh oysters, drained
1/3 cup condensed cream of mushroom soup, undiluted
2 tablespoons milk

Steps:

  • In a small bowl, toss the cracker crumbs and butter. In another bowl, combine the salt, nutmeg and pepper. In a greased 11x7-in. baking dish, layer half of the crumbs, half of the oysters and 1/4 teaspoon of seasoning mixture., Combine soup and milk; pour over the top. Layer with remaining oysters and another 1/4 teaspoon of seasoning mixture. Top with remaining crumbs and seasonings. Bake, uncovered, at 400° for 20-25 minutes or until hot and bubbly.

My mother has made this casserole every thanksgiving for as long as I can remember. It just wouldn't be the holidays without it. If my brother can't make it home for the holidays, it is one of his special requests when he is able to get home. The prep time is me using a food processor to chop and doesn't include the time to cut oysters in half if they are too large. I hope you enjoy it as much as my family does.

1 cup coarsely crumbled saltine crackers
1 pint shucked fresh oyster (30-40 depending on the size, cut them up if they are very large)
1/4 cup scallion, chopped
1/4 cup fresh parsley, chopped
1 tablespoon fresh lemon juice
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/2 cup butter
1 cup light cream
1/2 cup milk
1 dash Tabasco sauce (optional)
paprika, for dusting
salt

Steps:

  • Preheat oven to 400°.
  • Drain oysters well, reserving liquid.
  • Generously grease a shallow 1-1/2-quart casserole dish.
  • Sprinkle half the crackers over the bottom.
  • Lay half the oysters on top of crackers.
  • Sprinkle with half the onions, parsley, lemon juice, salt, pepper and Worcestershire sauce.
  • Dot generously with butter and pour half the cream, milk and reserved juice from the oysters.
  • Repeat the layers but save the remaining cracker crumbs for the top.
  • Add a dash of Tabasco if desired before covering with the crumbs.
  • Cover with the remaining cracker crumbs.
  • Dust enough with paprika to make it really red on top.
  • Bake 30 minutes or until the casserole is set (when you jiggle it, it shakes like set Jello).
  • Serve hot.

2 ½ cups wild rice
2 (10.75 ounce) cans beef consomme
2 cups water
½ cup butter, softened
2 quarts shucked oysters
salt to taste
ground black pepper to taste
4 dashes hot pepper sauce
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup half-and-half
1 ½ teaspoons onion powder
¾ teaspoon dried thyme
1 ½ tablespoons curry powder
½ cup chopped fresh parsley

Steps:

  • In a large saucepan place the rice, consomme and water. Bring to a boil and boil for 5 minutes. Cover, reduce heat to low and simmer until rice is tender, about 20 minutes. Stir in butter.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place half of rice in large baking dish. Cover with oysters seasoned with salt, pepper, and hot sauce to taste. Top with remaining rice.
  • Heat mushroom soup, half and half, onion powder, thyme, and curry powder. Pour over rice and oyster mixture.
  • Bake in the preheated oven for 45 minutes. Garnish with parsley.

1/2 lb ground ham
1 (10 ounce) container oysters, with liquid
1 -2 cup seasoned bread crumbs (can substitute day old French bread cubes)
1 large onion, chopped
3 -4 garlic cloves, minced
1/2 cup bell pepper, chopped
2 stalks celery, chopped fine
1 1/2 cups green onions, sliced thin
1/4 cup parsley, minced
1 tablespoon paprika
salt
black pepper
1 dash cayenne pepper

Steps:

  • Brown ground beef and ham together, breaking up chunks; drain.
  • Add onions, garlic, bellpepper and celery. Cook until vegetables are tender, about 5 minutes.
  • Add green onions, parsley, paprika and season with salt, pepper and cayenne.
  • In the meatime with food processer, process oysters with liquid until pulverized.
  • To the browned meat/vegetable mixture add the processed oysters and cook for approximately 3-5 minutes, stirring to incorporate. Begin with 1 cup breadcrumbs, mixing thoroughly. Mixture should not be too dry nor too wet. If using French bread cubes, smash cubes with back of spoon until incorporated. Adjust seasonings.
  • For casserole, spoon mixture into a buttered casserole dish. Can be made a day ahead and refrigerated. Bake 350 degrees for approximately 30 minutes. Can be frozen uncooked for future use. Defrost in refrigerator.
  • For patti shells, spoon into individual shells and bake 10 - 15 minutes until heated through.
  • For poultry stuffing, stuff cavity and proceed with safety guidelines for stuffed poultry.

4 large eggs
1 cup heavy cream
1 cup whole milk
2 teaspoons fresh lemon juice

3 dozen shucked oysters (preferably medium; halved if large; about 1 cup), drained if necessary and gently patted dry

Steps:

  • Preheat oven to 375°F with rack in middle. Butter a 2-quart shallow baking dish.
  • Spread bread crumbs in a 4-sided sheet pan and bake, stirring occasionally, until golden-brown, about 15 minutes. Transfer to a plate to cool slightly.

Juice of 1 lemon
4 large artichokes, trimmed
13 tablespoons butter
6 ounces button mushrooms, thinly sliced then coarsely chopped
1 tablespoon flour
3 tablespoons minced scallions
12 oysters and their liquor
Freshly ground black pepper
1/2 cup fine dry bread crumbs

Steps:

  • Fill a large pot with lightly salted water and add lemon juice. Bring to a boil, add artichokes and cook until artichokes are tender when pierced with a knife through the bottom, 30 to 40 minutes. Drain and allow to cool. Scrape fleshy part of each leaf into a bowl, discarding leaves. Using a small spoon or knife, remove prickly choke at center of base, then cut base into large chunks, adding it to bowl.
  • In a large skillet over medium-low heat, melt 4 tablespoons butter. Add mushrooms and sauté just until mushrooms are tender and have released their liquid; do not allow pan to dry. Immediately transfer mushrooms and any liquid to a small bowl.
  • Place a large skillet over medium-low heat and add 8 tablespoons butter. When butter has melted, add flour and stir until mixture is lightly browned. Add scallions, oysters and their liquor, and salt and pepper to taste. Simmer until oysters are firm, about 10 minutes.
  • Preheat oven to 350 degrees. In a 9- to 10-inch round shallow baking pan or pie plate, spread artichoke pieces. Top with oyster mixture and mushrooms. Spread with an even layer of bread crumbs. Dot with small pieces of remaining 1 tablespoon butter. Bake until golden brown, 15 to 20 minutes. Serve hot on small plates.

1 lb backfin crab meat
1 pint oyster, undrained
1/4 cup butter
1/4 teaspoon Old Bay Seasoning
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped pimiento, drained
2 cups long grain white rice, cooked
1 cup wild rice, cooked
1 (10 1/2 ounce) can cream of mushroom soup
6 ounces dry sherry
4 ounces Smithfield Ham, julienne sliced
1/2 cup fresh parsley, chopped

Steps:

  • Drain oysters and reserve liquor.
  • Cook oysters in melted butter till edges just begin to curl. Remove from heat.
  • Add crab meat and fold gently.
  • Add Old Bay, salt, pimento, crushed red pepper flakes, and 1/4 cup fresh parsley.
  • Gently sir in rice and wild rice. Set aside.

  • Combine oyster soup, liquids from oysters and mushrooms in saucepan. Heat just to boiling. Stir in 1 1/2 c. of crushed oyster crackers: heat, stirring constantly, 3 minutes, or until mixture thickens. Remove from heat. Stir in Tabasco, oysters and mushrooms. Spoon into casserole dish. Melt butter in small saucepan, add remaining 1/2 c. crushed crackers, mix well and spoon in rows over oyster mixture. Bake @ 425 10 minutes or until crumbs are golden

2 quarts oysters
1/4 pound (1 stick) butter
3 whole scallions, chopped
1 green or red bell pepper, seeded, deribbed, and chopped
1/2 pound mushrooms, sliced
1/4 cup flour
1 cup heavy cream
1/4 cup grated imported Parmesan cheese
Freshly grated nutmeg
1/2 teaspoon paprika
Salt
Freshly ground black pepper
1/2 cup bread crumbs

Steps:

  • Preheat the broiler. Grease a 9x13-inch ovenproof serving dish or spray it with nonstick spray.
  • Drain the oysters and set aside. Melt 2 tablespoons of the butter in a heavy casserole. Add the scallions and pepper and sauté until the onion is soft, about 5 minutes. Add the mushrooms and oysters and sauté for 5 minutes. In a separate pan, melt 2 tablespoons of the remaining butter. Stir in the flour. When smooth, add the cream, and stir until boiling and thick. Add the cheese. Stir this cheese sauce into the oyster mixture and season with nutmeg, paprika, salt, and pepper. The casserole may be made ahead to this point and refrigerated overnight. Return it to the simmer on top of the stove before proceeding.
  • Pour the mixture into the prepared dish and top with the bread crumbs and dot with the remaining butter. Place under the broiler until browned and bubbling-about 10 minutes, depending on the depth of the casserole.

4 dozen oysters
1 (7 ounce) package pepperidge farms bread cubes
chicken broth
1/2 cup chopped onion
1/2 cup chopped celery
2 garlic cloves, minced (optional)
1/4 cup chopped green onion
3/8 cup butter
2 (14 ounce) cans artichoke hearts, drained and quartered
1/2 teaspoon thyme
salt and pepper
1/2 cup parsley
2 tablespoons absinthe
seasoned bread crumbs

Steps:

  • reheat oven to 350º.
  • Drain oysters and reserve liquid.
  • Soak bread cubes in oyster liquid and chicken broth as needed. This mixture should be very moist.
  • Warm oysters until they curl. Reserve.
  • Saute onions, celery, garlic and green onions in butter.
  • Add oysters, artichokes, bread cubes, thyme, salt, pepper and parsley. Cook 10-15 minutes.
  • Pour into a 14 x 10 x 2-inch casserole.
  • Sprinkle Absinthe and seasoned bread crumbs on top.
  • Bake 20-30 minutes.

An old family recipe that is tried and true. This can, also, be used to stuff a hen, turkey, patty shells or bellpeppers. Freezes well.

1 1/2 lbs lean ground beef
1/2 lb ham seasoning or 1/2 lb ham steak, coarsley processed in food processor
8 ounces oysters, fresh with liquid
1 onion, chopped
1/2 bell pepper, chopped
2 stalks celery, minced
3 -4 garlic cloves, minced
2 tablespoons minced parsley
2 cups green onions, sliced thin
1 tablespoon paprika
1 teaspoon Kitchen Bouquet
1 -1 1/2 cup Italian breadcrumbs
salt
pepper
butter

Steps:

  • Preheat oven 350 degrees.
  • Butter 13"x9" baking pan.
  • In large Dutch oven, brown ground beef and ham, breaking up large pieces; drain.
  • Add onion, bellpepper, celery and garlic; saute until tender.
  • In the meantime, without cleaning the processor from ham, add oysters with liquid and process until smooth.
  • Add oyster mixture to pot, stirring until well mixed, cooking about 3-4 minutes on medium heat.
  • Add parsley, green onions, paprika, and Kitchen Bouquet.
  • Season with salt and pepper to taste.
  • Turn off fire.
  • Add breadcrumbs and combine well.
  • Turn mixture into prepared baking pan and smooth top.
  • Sprinkle top with additional breadcrumbs and dot with butter.
  • Bake in preheated oven 20 to 30 minutes.

OYSTER AND ASPARAGUS CASSEROLE image

INGREDIENTS

Juice of 1 lemon
4 large artichokes, trimmed
13 tablespoons butter
6 ounces button mushrooms, thinly sliced then coarsely chopped
1 tablespoon flour
3 tablespoons minced scallions
12 oysters and their liquor
Freshly ground black pepper
½ cup fine dry bread crumbs

Steps:

  • PREPARATION Fill a large pot with lightly salted water and add lemon juice. Bring to a boil, add artichokes and cook until artichokes are tender when pierced with a knife through the bottom, 30 to 40 minutes. Drain and allow to cool. Scrape fleshy part of each leaf into a bowl, discarding leaves. Using a small spoon or knife, remove prickly choke at center of base, then cut base into large chunks, adding it to bowl. In a large skillet over medium-low heat, melt 4 tablespoons butter. Add mushrooms and sauté just until mushrooms are tender and have released their liquid; do not allow pan to dry. Immediately transfer mushrooms and any liquid to a small bowl. Place a large skillet over medium-low heat and add 8 tablespoons butter. When butter has melted, add flour and stir until mixture is lightly browned. Add scallions, oysters and their liquor, and salt and pepper to taste. Simmer until oysters are firm, about 10 minutes. Preheat oven to 350 degrees. In a 9- to 10-inch round shallow baking pan or pie plate, spread artichoke pieces. Top with oyster mixture and mushrooms. Spread with an even layer of bread crumbs. Dot with small pieces of remaining 1 tablespoon butter. Bake until golden brown, 15 to 20 minutes. Serve hot on small plates.
