1 cup semisweet chocolate chips
3 cups confectioners' sugar
1-3/4 cups crushed vanilla wafers (about 55 wafers)
1 cup chopped walnuts, toasted
1/3 cup orange juice
3 tablespoons light corn syrup
Additional confectioners' sugar

Steps:

  • In a microwave, melt chocolate chips; stir until smooth. Stir in the confectioners' sugar, vanilla wafers, walnuts, orange juice and corn syrup., Shape into 1-in. balls; roll in additional confectioners' sugar. Store in an airtight container.

3 cups quick cooking oats
1 cup sweetened flaked coconut
2 cups white sugar
½ cup unsweetened cocoa powder
½ cup milk
½ cup margarine

Steps:

  • Line a baking sheet with waxed paper.
  • Mix oats and coconut in a large bowl until thoroughly combined.
  • Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

1-1/2 cups sugar
2/3 cup 2% milk
1/2 cup baking cocoa
1/2 cup butter, cubed
1/2 teaspoon salt
1/3 cup creamy peanut butter
1 teaspoon vanilla extract
2 cups quick-cooking oats
1 cup sweetened shredded coconut
1/2 cup white baking chips
1 teaspoon shortening

Steps:

  • In a large saucepan, combine the first five ingredients. Bring to a boil, stirring constantly. Cook and stir 3 minutes., Remove from heat; stir in peanut butter and vanilla until blended. Stir in oats and coconut. Drop mixture by tablespoonfuls onto waxed paper-lined baking sheets., In a microwave, melt baking chips and shortening; stir until smooth. Drizzle over cookies. My aunt named this recipe "Barf" when she was in high school because, well, that's what it looks like. It's another one of those hamburger/rotel/velveeta recipes but I can never find the exact recipe when I want it so I'm adding it here!

2 (8 ounce) cans enchilada sauce (I use one mild and one hot)

1 (8 ounce) can mushrooms, drained
1 (4 ounce) can green chilies

Steps:

  • Brown hamburger meat, drain.
