1 medium head cabbage, shredded
1 medium red onion, thinly sliced
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1/2 cup sliced pimiento-stuffed olives
1/2 cup white wine vinegar
1/2 cup canola oil
1/2 cup sugar
2 teaspoons Dijon mustard
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed

Steps:

  • Combine cabbage, onion, peppers and olives. In a large saucepan, mix remaining ingredients; bring to a boil. Cook and stir 1 minute. Pour over vegetables, and stir gently. Cover and refrigerate overnight. Mix well before serving.

DRIED FIG VINAIGRETTE

This has a delicious sweet-tart flavour that is great with grilled or roasted meats, especially pork. Also a salad of spicy greens (rocket, etc.) and rich blue cheeses topped with this vinaigrette is downright exciting! Try it with Pork tenderloin, pounded thin, lightly breaded and browned for a special treat!

Number Of Ingredients 10

1/2 cup coarsely chopped dried fig, plus
3 tablespoons finely diced dried figs
1/2 cup apple juice
2 teaspoons minced fresh thyme leaves
2 teaspoons toasted black mustard seeds or 2 teaspoons yellow mustard seeds
1 1/2 tablespoons minced shallots
6 tablespoons sherry wine vinegar
1 cup olive oil
salt
fresh ground pepper

Steps:

  • Combine the 1/2 cup of chopped figs with 1 cup of water and the shallots in a saucepan over hight heat and bring to a boil.
  • Reduce the heat and simmer until the liquid is reduced by half, about 7 minutes.
  • Transfer to a blender, add the apple juice and puree until smooth.
  • Pour into a mixing bowl and whisk in the thyme, mustard seeds, vinegar, olive oil and the 3 TBS of diced figs.
  • Taste and season with salt and pepper.
  • If the dressing seems too thick, you can thin it with additional juice.
  • Store covered in the refrigerator for up to 5 days.

3 cups finely shredded red cabbage
3 cups finely shredded napa cabbage
1/2 cup green onion, sliced
1/4 cup red bell pepper, chopped small
2 cups carrots, shredded
kosher salt
fresh ground black pepper
1/3 cup rice wine vinegar
2 teaspoons fresh lime juice (to taste)
2 -3 tablespoons chili-garlic sauce
1 1/2 teaspoons honey
1 teaspoon minced fresh ginger, peeled
1 teaspoon minced garlic
1 tablespoon fresh basil, chopped
1 tablespoon fresh mint leaves, chopped
1 tablespoon fresh cilantro leaves, chopped
1/4 teaspoon black pepper
1 1/2 teaspoons toasted sesame seeds
1/2 teaspoon ground coriander
kosher salt
1 tablespoon toasted sesame oil
1/2 cup peanut oil (or corn oil)

Steps:

  • Whisk all ingredients except oils in a large bowl. Slowly drizzle in oils while whisking. Taste and adjust seasoning with more salt and lime juice if needed.
  • Combine the vegetables in a large bowl, season with salt and pepper. Toss to mix thoroughly. Pour in the Thai vinaigrette to taste and toss to mix. Adjust, adding more if desired. Enjoy!

We had the Napa Veggies at the Rainforest Cafe and knew we had to find a way to make something similiar at home. My kids now say that our recipe is better than the Rainforest Cafe's. There is a lot of room for personal taste with this recipe, add other veggies or take out those you don't like. Our favorite is the Jicima, we could never leave that one out! This recipe makes a ton, but it keeps well. It will still be nice & crispy 4 days later.

1 (8 3/4 ounce) can corn, drained (we use white shoepeg)
1 green pepper, julienned
1 red pepper, julienned
1 yellow pepper, julienned
1 large jicama, julienned
2 cups carrots, julienned (about 4 carrots)
1/3 cup red onion, chopped
1/2 cup raisins (I use mix of white & regular)
1 cucumber, sliced
1 cup red cabbage, julienned (optional)
2/3 cup vinegar (I use seasoned white rice vinegar)

1/4 teaspoon pepper (or to taste)

1 very firm pear
1 large carrot
2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon champagne vinegar

1 minced clove garlic
1/2 teaspoon Asian chile sauce
1/2 teaspoon minced lime zest

Steps:

  • Julienne all fruit and veggies and combine in a bowl. Mix all vinaigrette ingredients except lime zest in a blender. Add lime zest and pour over the slaw, tossing lightly with fingers. This has to be one of the most flavorful coleslaws I have ever made. The flavors blend wonderfully. The addition of olives is a welcome surprise in the flavor. The best part is make ahead. Most slaws I have to wait till time to serve to add the dressing. This gets better overnite, so it is great to make ahead and out the door. Or it is one more dish you can get done the day before company coming, which is what I love. But irregardless of all those perks, it is a dish that I would make even if it was a little bit of a pain. 1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed banana (about 2 medium)
1 (11 ounce) can mandarin oranges, drained
1 cup flaked coconut
1 cup semi-sweet chocolate chips
2/3 cup sliced almonds, divided
1/2 cup maraschino cherry, chopped
1/2 cup dates, chopped

Steps:

  • In a large mixing bowl, cream butter and sugar until light and fluffy.
  • Beat in eggs and vanilla.
  • Combine the flour, baking soda and salt; add to the creamed mixture alternately with bananas.
  • Stir in the oranges, coconut, chocolate chips, 1/2 cup almonds, cherries and dates.
  • Pour into two greased 8-in. x 4-in. x 2-in. loaf pans.
  • Sprinkle with remaining almonds.
  • Bake at 350 for 50-55 minutes or until a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 2 loaves.
