1 medium head cabbage, shredded
1 medium red onion, thinly sliced
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
1/2 cup sliced pimiento-stuffed olives
1/2 cup white wine vinegar
1/2 cup canola oil
1/2 cup sugar
2 teaspoons Dijon mustard
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed

Steps:

  • Combine cabbage, onion, peppers and olives. In a large saucepan, mix remaining ingredients; bring to a boil. Cook and stir 1 minute. Pour over vegetables, and stir gently. Cover and refrigerate overnight. Mix well before serving.

1 head cabbage, shredded
1 red onion, thinly sliced
½ cup chopped green bell pepper
½ cup chopped red bell pepper
½ cup shredded carrots
½ cup sliced pimiento-stuffed olives
½ cup white wine vinegar
½ cup canola oil
½ cup white sugar
2 teaspoons Dijon mustard
1 teaspoon salt
1 teaspoon celery seed
1 teaspoon mustard seed

Steps:

  • Mix cabbage, onion, green bell pepper, red bell pepper, carrots, and olives together in a large bowl.
  • Whisk vinegar, oil, sugar, Dijon mustard, salt, celery seed, and mustard seed together in a saucepan. Bring to a boil; cook and stir until sugar is dissolved, about 1 minute. Pour hot dressing over cabbage mixture and toss gently. Cover the bowl with plastic wrap and refrigerate for at least 8 hours or overnight.

This has to be one of the most flavorful coleslaws I have ever made. The flavors blend wonderfully. The addition of olives is a welcome surprise in the flavor. The best part is make ahead. Most slaws I have to wait till time to serve to add the dressing. This gets better overnite, so it is great to make ahead and out the door. Or it is one more dish you can get done the day before company coming, which is what I love. But irregardless of all those perks, it is a dish that I would make even if it was a little bit of a pain. 1 medium head of cabbage, shredded (21/2lbs)
1 medium red onion, thinly sliced
1/2 cup green pepper, chopped

4 mild white onions, thinly sliced
2 large carrots, shredded
1/2 cup vinegar
1/2 cup sugar
1 teaspoon ground mustard
1 teaspoon celery seed
1 teaspoon salt

This crunchy slaw doesn't use cabbage. Instead, it's loaded with veggies that marinate in a sweet-tart vinaigrette. We like to let it marinade overnight and then serve it the next day for maximum flavor. It's a nice accompaniment to a casserole-type main dish, or to serve with a sandwich for lunch.

1 (14 ounce) can French style green beans, drained
2 (14 ounce) cans white corn, drained
1 red pepper, diced
1 green pepper, diced
4 stalks celery, diced (1 1/2 C.)
3/4 cup cider vinegar
1/2 cup canola oil
3/4 cup sugar
1/4 teaspoon fresh ground pepper
1/2 teaspoon salt

Steps:

  • Make vinaigrette: in small saucepan on stove, combine vinegar, oil and sugar. Bring to boil and simmer 3 minutes. Immediately pour hot vinaigrette over raw vegetables (the hot dressing blanches the raw vegetables and keeps them colorful and crunchy).
  • Drain all canned vegetables; add to slaw.
  • Add salt and pepper. Store in refrigerator overnight to allow flavors to develop (although we eat some right away).
  • If desired, slice a fresh avocado and place on top.

1/8 cup Splenda granular (sugar substitute)
1/4 cup lemon juice
1/4 cup white wine vinegar
1 teaspoon celery seed
1 teaspoon garlic salt
1 small cabbage, shredded or 1/2 large cabbage
1 -2 green onion, sliced fine

Steps:

  • In a large bowl, whisk together the sugar substitute, lemon juice, vinegar, celery seed and garlic salt. Add cabbage & slice green onions. Toss lightly, cover and refrigerate overnight. Add sliced radishes immediately before serving.

2 bags shredded cole slaw mix
3/4 qt real mayo (3/4 of the container) do not use light mayo in this recipe!
1 1/4 c sugar
2 Tbsp sour cream
2 1/2 tsp celery seed
2 tsp salt
1 tsp pepper

Steps:

  • 1. Mix all the ingredients except the cole slaw mix in a very large bowl. Add the two bags of cole slaw mix. Mix well. Stir occasionally. Best if prepared the night before.
