½ cup regular rolled oats
¾ cup unsweetened almond milk
2 tablespoons almond butter
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon
1 cup fresh or frozen blueberries
2 tablespoons sliced almonds

Steps:

  • In a medium sized bowl or overnight oats jar, combine the oats, almond milk, almond butter, vanilla and cinnamon.
  • Mix well, and then fold in ½ cup blueberries.
  • Cover and store in the refrigerator for at least 12 hours.
  • In the morning, top with the remaining ½ cup blueberries, sliced almonds and your favorite oatmeal toppings.

¼ cup Greek yogurt
2 teaspoons chia seeds
2 teaspoons honey
1 teaspoon ground cinnamon
¼ cup fresh blueberries

Steps:

  • Combine milk, oats, Greek yogurt, chia seeds, honey, and cinnamon in a 1/2-pint jar with a lid; cover and shake until combined. Remove lid and fold in blueberries. Cover jar with lid.
  • Refrigerate oatmeal, 8 hours to overnight.
