2 cups elbow macaroni
2 cups heavy whipping cream
1 ¼ cups milk
1 cup shredded Gruyere cheese, divided
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until halfway cooked, about 4 minutes. Drain.
  • Combine heavy cream, milk, and Gruyere cheese in a large bowl. Add elbow macaroni and mix well; season with salt and pepper. Cover bowl with plastic wrap and refrigerate for 24 hours.
  • Bring the macaroni mixture to room temperature, 30 minutes to 1 hour. Pour into a 2-quart baking dish. Sprinkle remaining Gruyere cheese on top.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Bake in the preheated oven until golden and crispy, 15 to 20 minutes.

I like to prepare meals a day ahead of time, so supper can be on the table quicker when I get home from work. Usually, pasta dishes are out because the noodles end up starchy and the sauce thickens if left overnight. With this recipe, I can prepare the dish ahead of time and cook just before serving for delicious creamy noodles.

2 cups leftover diced cooked chicken
2 cups macaroni, raw
2 cups milk
1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can cream of chicken soup
1 cup cheese, shredded
1/2 cup onion, diced

Steps:

  • Mix all ingredients. Season to taste. With chicken, we like sage, rosemary, thyme and a little garlic.
  • Spread in 9x13 pan.
  • Cover and refrigerate overnight, or at least 4 hours.
  • Remove from fridge, put in cold oven. Bake at 350 about one hour, until hot and bubbly.
  • Note -- to make it "pizza" flavored, substitute diced pepperoni or cooked Italian sausage for the chicken, and one can tomato soup and one can cheese soup for the mushroom and chicken. Season with oregano or Italian seasoning, and garlic.

This recipe came to me from my 90 year old Great Aunt Frances and has been in the family for over 100 years. It's a simple, make ahead dish, perfect to slide in the oven before you leave to go to airport to pick up family or to take to a potluck. Do with it what you will. Have fun. Bon appetit--

1 1/2 cups uncooked elbow macaroni
2 cups diced ham or 2 cups chicken
1 (10 ounce) package frozen peas
1 (2 ounce) jar pimientos
1 cup grated cheddar cheese
1/2 cup diced onion
2 (10 1/2 ounce) cans cream of mushroom soup
1 1/8 cups milk
2 tablespoons grated parmesan cheese
1/8 teaspoon paprika

Steps:

  • In a large bowl, mix together macaroni through onions.
  • In separate small bowl, mix together the soup and milk till well blended.
  • Pour milk mixture into large bowl and stir all ingredients together till blended.
  • Pour into a 9 x 13 baking dish.
  • Top with grated parmesan cheese. Sprinkle paprika over the top and cover with aluminum foil.
  • Store overnight in frig.
  • Get casserole out of frig one hour before baking.
  • Preheat your oven to 350°F Bake, covered with foil, for 45 minutes. Uncover and bake for an additional 10-15 minutes.
  • Serve with salad and bread/rolls.
  • **Note: this is not a spicy dish. If you like your food to be spicy feel free to add hot sauce, peppers, celery, etc to your liking. I serve this dish to older relatives when they come to visit and take it to potlucks where it disappears quickly. Simple, old fashioned comfort food. Feel free to adjust to your taste.

1 pound ground beef
2 (14.5 ounce) cans Italian-style diced tomatoes
salt and ground black pepper to taste
2 (8 ounce) packages cream cheese, softened
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add ground beef back to skillet and mix in tomatoes; season with salt and pepper. Cook and stir mixture until tomatoes are heated through, about 5 minutes.
  • Transfer beef mixture to a casserole dish; top with cooked macaroni. Spread cream cheese over macaroni and sprinkle Cheddar cheese over cream cheese.

My favorite main dish recipe from Mom, this casserole is considered "birthday food" because we often requested it for our birthdays. Hearty and flavorful, it's a real family-pleaser anytime!

2 tablespoons butter
1/4 cup all-purpose flour
2 cups half-and-half cream
1-1/2 to 2 cups chicken broth, divided
3/4 pound Velveeta, cubed
2 packages (7 ounces each) uncooked elbow macaroni, cooked and drained
3 cups cubed cooked chicken
1 jar (2 ounces) diced pimientos, drained
1 teaspoon salt
1/2 teaspoon pepper
Snipped fresh parsley, optional

Steps:

  • In a large saucepan, melt butter. Stir in flour until smooth. Gradually add cream and 1-1/2 cups of the broth. Bring to a boil. Cook and stir for 2 minutes or until thickened. Remove from the heat; add cheese; stir until melted. Add the macaroni, chicken, pimientos, salt and pepper. Add additional broth if needed. , Pour into a 3-qt. baking dish. Bake, uncovered, at 350° for 40 minutes or until heated through. Sprinkle with parsley if desired.

2 Cups Elbow Macaroni, uncooked
1/4 lb. Chipped Dried Beef, shredded
1/2 lb. Sharp Cheddar Cheese, shredded
1 Small Onion, chopped
4 Hard-Boiled Eggs, chopped
2 (10 oz,) Cans Cream of Mushroom Soup
1 Pint Milk

Steps:

  • Mix all ingredients and put into a casserole dish. Cover and put in refrigerator overnight. The next day bake covered at 325 degrees for 1 hour. Remove from cover from casserole for the last 10 minutes of baking. Option: Cream of chicken or cream of celery may be used in place of mushroom soup.
