2 cups oats
4 cups water
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 apple, diced
1 cup raisins (I used dates because I don't like raisins)
1/2 cup chopped nuts

Steps:

  • Spray inside of crockpot with cooking spray.
  • Combine all ingredients, cover and cook on low setting overnight (around 8 hours).

1 tablespoon butter
1/4 teaspoon cinnamon
1/4 cup dried cranberries or 1/4 cup dried cherries

  • Place ingredients except pecans in a small crockpot and cook 6-8 hours or until tender.
  • Oats will thicken upon standing.
  • Serve with milk, cream, sweetener or fresh fruits if desired, topped with toasted pecans.

3 tablespoon butter
2-1/2 cups whole, hulled oats (oat groats)
1/2 cup pearled barley
1 cup dried cranberries
1 cup dried figs
1 cup dried blueberries
1-1/2 cups half-and-half
9 cups water
1-1/2 cups plus 3 tablespoons buttermilk
2 tablespoon brown sugar
2 tablespoons maple syrup
1/2 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • In a large skillet, melt the butter and add the barley and oats. Stir until fragrant (2 to 4 minutes) to toast. In a slow cooker, combine the toasted oats and barley plus all ingredients and set to low heat. Cover and let cook for 12 hours. Stir and remove to serving bowls to enjoy fresh and hot in the morning, or refrigerate for up to 3 days. You can also freeze individual servings and warm in the microwave for a quick breakfast. Serve with milk, buttermilk, or plain.

Perfect for fall, this creamy spiced pumpkin and pecan oatmeal makes for an easy, hearty, and no-mess breakfast.

1 1/2 cups water plus additional water for bain-marie
1/2 cup pumpkin puree
3 tablespoons brown sugar
1 teaspoon pumpkin pie spice
1/2 cup steel cut oats (not quick-cooking)
1/4 cup chopped pecans plus more for topping if desired

Steps:

  • In a medium bowl mix 1 1/2 cups water, pumpkin puree, brown sugar, and pumpkin pie spice.
  • Add the oats to a 23-ounce or larger oven-safe bowl (I use Fiestaware or Pyrex are good choices). Pour the pumpkin mixture over the top. Stir. Carefully place bowl in the middle of the Crock Pot and carefully fill Crock Pot with water, to about 1 inch below the rim of the bowl. Sprinkle with pecans.
  • Cook on low for 8 hours.
  • Turn off Crock Pot and remove lid, allowing the bowl to cool enough to lift out of the Crock Pot. Remove bowl and stir well. Sprinkle pecans and additional brown sugar on individual servings, if desired.
