This savory breakfast pudding looks a little like a pizza when it comes out of the oven. It can be prepared the night before through step 2 and baked the next morning.

Butter, softened (for pan)
4 English muffins, split, toasted, and cut in half
1/2 pound sliced (about 10 slices) Canadian bacon, halved
1 1/4 cups shredded (5 ounces) sharp cheddar cheese
1/3 cup finely shredded Parmesan cheese
8 large eggs
3 cups milk
1 1/2 tablespoons Dijon mustard
Coarse salt and ground pepper
1/4 teaspoon hot sauce, such as Tabasco

Steps:

  • Butter a 2-quart shallow baking dish (oval or square); set aside. In dish, alternately arrange, cut side down, muffin halves and Canadian bacon. Sprinkle with cheddar and Parmesan cheeses. Set aside.
  • In a large bowl, whisk together eggs, milk, mustard, 1/2 teaspoon salt, a pinch of pepper, and hot sauce until combined. Pour over muffins and bacon; cover tightly with plastic wrap. Refrigerate at least 2 hours and up to overnight.
  • Preheat oven to 350 degrees. Place baking dish on a rimmed baking sheet; remove plastic wrap. Bake until puffed and set in the center (see note below), about 1 hour and 30 minutes. (Tent loosely with foil if strata starts to brown too quickly.) Let stand 10 minutes before cutting and serving.

Here's a wonderful strata you can prep the day before hungry guests wake up in the morning. I found this recipe on the Times-Picayune website. Serve with Recipe #318657 and Recipe #343907.

2 tablespoons extra virgin olive oil
6 ounces Canadian bacon, cut into medium dice
1 large leek, white part only, sliced thin
2 teaspoons fresh thyme, de-stemmed and chopped
1/2 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
8 eggs, whisked
3 cups half-and-half or 3 cups milk
2 tablespoons creole mustard
1/4 cup fresh chives, thinly sliced
3/4 cup farmhouse sharp cheddar cheese, finely grated
3/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
4 English muffins, split and toasted
1/4 cup parmesan cheese, grated
1 tablespoon softened butter

Steps:

  • In a large saute pan over medium heat, add oil and Canadian bacon.
  • Cook for 3 to 4 minutes, then add leeks, thyme, and ½ teaspoon each of salt and pepper.
  • Cook until the leeks are wilted and translucent. Remove from heat and cool completely.
  • In a large mixing bowl, whisk together the eggs, half and half, Creole mustard, chives, farmhouse cheddar, ¾ teaspoon kosher salt and ¼ teaspoon black pepper.
  • Butter an 8- by 8-inch square baking dish.
  • Layer the English muffins in a shingled pattern, cut side down.
  • Mix the cooled Canadian bacon mixture into the egg mixture.
  • Ladle the combined mixture over the English muffins.
  • Cover, weight with a plate and refrigerate overnight.
  • In the morning, remove baking dish from the refrigerator and top with Parmesan cheese. Place in the middle rack of a preheated 350-degree oven.
  • Bake for 1 hour and 30 minutes or until the tip of a knife, inserted in the middle of pan, comes out clean.
  • Let rest for 10 minutes before serving.

We had this breakfast casserole at a bed and breakfast in Branson, MO (Anchor Inn on the Lake) and absolutely loved it. I don't like breakfast casseroles that are too dry or too eggy and this one is perfect!

1 (16 ounce) package ground pork sausage
¼ cup butter, or as needed
1 (12 ounce) package English muffins, split
10 ounces shredded sharp Cheddar cheese, divided
1 (8 ounce) package shredded mozzarella cheese, divided
8 large eggs
1 ½ cups sour cream
1 (4 ounce) can chopped green chilies, drained

Steps:

  • Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
  • Lightly grease a 9x13-inch baking dish.
  • Spread butter on the inside of each English muffin half. Arrange buttered English muffins in the prepared baking dish; top with half the sausage, half the Cheddar cheese, and half the mozzarella cheese.
  • Whisk eggs, sour cream, and green chilies together in a large bowl; pour evenly over sausage and cheese layer. Top with remaining sausage, Cheddar cheese, and mozzarella cheese. Cover and chill for 8 hours.

QUICK sandwich for breakfast, lunch or a Sunday night dinner. Lots of protein and packed full of flavor!!! Add some fruit with this sammie for a good meal. I buy the Hormel 6 ounce package of Canadian bacon--it's already fully cooked!! Great for a busy day or lazy days when you don't want to heat up the kitchen!

  • Butter a shallow 2-quart baking dish. Arrange muffin halves and Canadian bacon cut sides down (see below) in dish. Sprinkle evenly with both cheeses.
  • Whisk together eggs, milk, mustard, 1/2 teaspoon salt, a pinch of pepper, and the hot-pepper sauce until combined. Pour into dish; cover tightly with plastic wrap. Refrigerate at least 2 hours (or up to overnight).

2 teaspoons corn oil margarine
1 cup sliced white mushroom
1 large onion, diced (2 cups)
16 slices white bread, crust removed
1/2 lb lean bacon, cooked crisp and crumbled
3/4 cup diced celery
2 anaheim chilies, seeds removed and diced
1/2 lb reduced-fat sharp cheddar cheese, grated (2 cups)
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons snipped fresh dill or 2 teaspoons dried dill weed, crushed
1 large tomatoes, peeled and thinly sliced
1 cup liquid egg substitute
2 large eggs, slightly beaten
3 cups low-fat milk
1 tablespoon Dijon mustard

Steps:

  • Melt the margarine in a large skillet over medium heat.
  • Add the mushrooms and onions and cook, stirring, until just slightly tender, 2 minutes.
  • Spray a 9 x 13-inch baking dish with non stick vegetable spray.
  • Place 8 of the bread slices in the prepared dish.
  • Layer half of the mushrooms and the onions, bacon, celery, and chilies on top of the bread and finish with half of the cheese.
  • Sprinkle with half of the salt, pepper, and dill.
  • Repeat the bread layer and the remaining half of the ingredients as above but add the tomato slices before the cheese.
  • Thoroughly mix the egg substitute, eggs, milk and mustard and pour into the dish.
  • Cover with wax paper or plastic wrap and refrigerate overnight.
  • Before baking, allow the strata to stand at least 30 minutes at room temperature.
  • Preheat oven to 350 degrees F.
  • Bake the strata, uncovered, until bubbly and lightly browned, 45 minutes.
  • Remove from the oven and allow to cool for 5 minutes before slicing.
